13 cups fresh broccoli florets (about 2-1/2 pounds)
3 tablespoons olive oil
5 garlic cloves, minced
3/4 teaspoon Italian seasoning
1/4 teaspoon salt

Steps:

  • In a Dutch oven, bring 1/2 in. of water to a boil. Add broccoli; cover and cook for 3-5 minutes or until crisp-tender; drain. Mix remaining ingredients; toss with broccoli.

2 lbs broccoli
1/4 cup butter
2 tablespoons olive oil
2 garlic cloves, minced
1/2 teaspoon dried rosemary
shredded mozzarella cheese (optional)

Steps:

  • Trim broccoli, cut into individual flowerets, leaving the stems baout 4-inches long.
  • Place broccoli into vegetable steamer or into large pot with a small amount of water Heat until water boils. Steam broccoli, covered, for 12-15 minute until bright green and tender-crisp.
  • Heat butter and olive oil in skillet. Add garlic and rosemary.
  • Add broccoli to garlic butter and stir quickly over high heat utnil broccoli is coated.
  • Transfer to warm serving dish. Pour any remining garlic butter from pan over top of broccoli.
  • Sprinkle broccoli with shredded. Mozzarella cheese, if used, and serve immediately or hold in warm oven until ready to serve.

1 bunch broccoli (1 pound), cut into small pieces, stalks peeled and thinly sliced (about 6 cups)
2 tablespoons unsalted butter
1 clove garlic, minced
0.25 teaspoon kosher salt
freshly ground black pepper

Steps:

  • Cook the broccoli in lightly salted boiling water until crisp-tender, 2 to 4 minutes. Drain.
  • Add the butter and garlic to the saucepan and cook until the garlic is softened, 1 to 2 minutes.
  • Toss with the salt and a few grinds of pepper.

This is a recipe from my 2008 Weight Watchers cookbook that we really enjoyed. I altered it slightly for our taste. It's a nice way to enjoy broccoli without all the cheese sauce. It's got a nice bite to it too. Feel free to leave out the crushed red pepper flakes. The frozen steam bags of broccoli work well with this recipe.

2 tablespoons light butter
2 tablespoons chopped fresh parsley
2 garlic cloves, minced
12 ounces frozen broccoli florets
2 tablespoons water
1/4 teaspoon white pepper
1/8-1/4 teaspoon crushed red pepper flakes (or to taste)
1/4 teaspoon salt (or to taste)

Steps:

  • Place butter in a small microwave safe dish.
  • Microwave on high for 30 seconds or until melted.
  • Stir in parsley, garlic, pepper and red pepper flakes.
  • Place broccoli florets in a large microwave safe bowl.
  • Add 2 tablespoons water, and cover with wax paper.
  • Microwave on High 5 minutes or until crisp-tender.
  • Drain well.
  • Add butter mixture and salt to taste.
  • Toss gently to coat.

3 cups fresh broccoli florets

Steps:

  • Fill a stock pot with 8 to 10 cups of water. Place stock pot over high heat and add 1 teaspoon salt. Bring the water to boil. Add the cauliflower and boil for 2 minutes. Then, add the broccoli and continue boiling for 3 minutes. Drain well.
  • Meanwhile, in a small bowl, use a fork to mash together the butter, chives, thyme, lemon peel, salt, and pepper.

A new recipe a neighbor gave us. What a hit with my family. Just the right mixture of garlic and cashews with our favorite side dish, broccoli. And, so very easy to make!! If in a pinch, you could probably use frozen broccoli too, but I haven't tried.

1 ½ pounds fresh broccoli, cut into bite size pieces
⅓ cup butter
1 tablespoon brown sugar
3 tablespoons soy sauce
2 teaspoons white vinegar
¼ teaspoon ground black pepper
2 cloves garlic, minced
⅓ cup chopped salted cashews

Steps:

  • Place the broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil, and cook for 7 minutes, or until tender but still crisp. Drain, and arrange broccoli on a serving platter.
  • While the broccoli is cooking, melt the butter in a small skillet over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil, then remove from the heat. Mix in the cashews, and pour the sauce over the broccoli. Serve immediately.

1 pound broccoli, separated into florets
2 teaspoons fresh lemon juice
2 tablespoons water
3 tablespoons butter
2 cloves garlic, minced
1 pinch salt
2 teaspoons lemon juice
1 teaspoon ground black pepper

Steps:

  • Place broccoli florets in a large skillet over medium heat. Stir 2 teaspoons lemon juice into water in a small bowl and pour the mixture into the skillet. Cover and steam until broccoli is bright green and tender, 10 to 15 minutes.
  • While broccoli is steaming, melt butter in a small saucepan over medium-low heat and stir in garlic and salt; turn heat to low and let the garlic gently fry until golden brown, about 8 minutes. Drain water from cooked broccoli and return to skillet; sprinkle with 2 more teaspoons lemon juice and the butter and garlic mixture. Sprinkle broccoli with black pepper, toss to combine, and season with a bit more pepper if desired.

2 tablespoons olive oil
2 teaspoons finely chopped garlic
Salt and freshly ground pepper

Steps:

  • Using a paring knife, cut off and discard tough bottoms of broccoli stalks. Cut broccoli into florets.
  • Place broccoli in a steamer for 3 to 4 minutes. Do not overcook.
  • Heat oil in a skillet, add garlic, broccoli and salt and pepper to taste. Saute briefly, being careful not to burn garlic. Serve immediately.
