2 cups broccoli florets
1/4 cup butter
2 skinless chicken breasts, cut into strips
3 garlic cloves, minced
2 1/2 cups dry penne pasta
1/3 cup dry white wine
1 cup heavy cream
4 ounces gorgonzola, diced (rind removed)
1 tablespoon flour
1 teaspoon kosher salt
1/2 teaspoon black pepper
4 tablespoons parmesan cheese

Steps:

  • Cook pasta according to instructions until al dente.
  • While pasta is cooking, steam broccoli in small amount of water in the microwave: 2 minutes on high will probably do it.
  • Plunge broccoli in ice water to shock and retain slight bite. Set aside.
  • Melt butter in large skillet, then add chicken, garlic, salt, and pepper. Cook over medium heat until chicken is nearly cooked through.
  • Add wine and cream, stirring to mix. Simmer, stirring occasionally, for 5 minutes or until the sauce is reduced and thickened. Add flour and cook for one additional minute if sauce is too thin for your taste.
  • Add the broccoli, drained pasta, and Gorgonzola.
  • Taste and adjust seasonings.
  • Serve with freshly grated Parmesan.
  • Enjoy with a nice glass of white wine by the fire!

1 pound broccoli, tops cut into 3/4-inch florets, stems cut into 1/4-inch-thick rounds
1 pound farfalle (bow-tie) pasta
3/4 cup mayonnaise
1/2 cup sour cream
3 tablespoons white wine vinegar
8 ounces Gorgonzola cheese (about 2 cups), crumbled
6 green onions, chopped
3 celery stalks, thinly sliced
3 tablespoons chopped fresh parsley

Steps:

  • Cook broccoli stems in large pot of boiling salted water 2 minutes. Add florets and cook until stems and florets are crisp-tender, about 2 minutes longer. Using slotted spoon, transfer broccoli to strainer. Refresh under cold water. Drain.
  • Bring same pot of water to boil. Add pasta; cook until just tender but still firm to bite. Drain. Rinse under cold water.
  • Whisk mayonnaise, sour cream, and vinegar in large bowl. Add half of Gorgonzola cheese. Using rubber spatula, mash until cheese is almost smooth. Stir in remaining cheese. Add pasta, green onions, celery, parsley, and broccoli; toss to coat. Season salad to taste with salt and pepper. Cover and refrigerate until cold, about 2 hours. (Can be made 1 day ahead. Keep refrigerated.)

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta until al dente Add the broccoli the last 4 to 5 minutes of cooking. Drain.
  • Heat the cream in a skillet with the garlic and shallots. Cook until shallots are tender about 3 minutes. Add cheese and cook until it's melted.
  • Pour sauce over broccoli and pasta. Serve

3 lbs broccoli
1/4 cup butter, plus
1 tablespoon butter, melted
1/4 cup all-purpose flour
2 cups milk
2 (3 ounce) packages cream cheese, cut into 1/2 inch chunks
1/2 cup crumbled gorgonzola or 1/2 cup other blue cheese
2 cups French bread or 2 cups other firm white bread, 1/2 inch cubes

Steps:

  • In a 5 to 6 quart pan over high heat, bring about 3 quarts water to boil.
  • Rinse broccoli and trip off the discard tough stem ends.
  • Cut into one inch pieces.
  • Boil Broccoli until barely tender, 3-5 minutes.
  • Drain and set aside.
  • Rinse and dry pan.
  • Add 1/4 cup of butter and melt over med.
  • heat.
  • Stir in flour unti smoothly blended.
  • Cook until bubbly, about 1 minute.
  • Add milk and stir over medium high heat until mixture is boiling and thickened, about 3 minutes.

This is a great side dish & it has become a holiday tradition in my family. It is a perfect match with a prime rib meal. This dish can easily be converted to a main dish by adding fettuccine & beef medallions. Also quite good with shrimp.

1 1/2 Tbsp butter
1 1/2 Tbsp flour
1 1/2 c heavy cream (may substitute whole or 2% milk)
2 large clove garlic, finely minced
5-6 oz creamy gorgonzola cheese, crumbled
1-2 pinch salt (to taste)
1-2 pinch fresh cracked pepper (to taste)
1/4 tsp freshly grated nutmeg
1 1/2 lb steamed broccoli florets
ALTERNATE FINISH:
1 c italian bread crumbs
3/4 c creamy gorgonzola cheese, crumbled

Steps:

  • 1. Using a a medium size sauce pan, melt butter on medium-low heat. Add garlic & saute, stirring frequently. Add flour to create a roux & continue stirring until golden in color.
  • 2. Using a whisk, stir in cream & blend until smooth. Add fresh grated nutmeg & cracked pepper. Increase heat to boil, whisking sauce until completely free of lumps & sauce is velvety smooth. Reduce heat to a simmer, allowing sauce to thicken while stirring. Remove pan from heat, add gorgonzola & continue whisking until the sauce is creamy smooth.
  • 3. Stir in steamed broccoli florets, making sure to coat evenly. Salt to taste. Serve immediately while hot. ENJOY!
  • 4. ALTERNATE FINISH: transfer contents of sauce pan to a casserole or baking dish. Cover with bread crumbs & crumbled gorgonzola & bake, uncovered at 350* for 15-20 minutes or until bread crumbs are golden brown.

2 cups 1/2-inch cubes French or other firm white bread (3 oz.)

Steps:

  • 1. Preheat oven to 350°. In a 5- to 6-quart pan over high heat, bring about 3 quarts water to a boil. Rinse broccoli and trim off and discard tough stem ends; cut cauliflower if skin on stalks is tough, peel stalks. Add to boiling water and cook just until barely tender when pierced, 3 to 5 minutes. Drain. 2. Rinse and dry pan. Add 1/4 cup butter to pan and melt over medium heat. Stir in flour and salt until smoothly blended; cook until bubbly, about 1 minute. 12 ounces orecchiette pasta
2 tablespoons olive oil
2 sweet Italian sausage links, casings removed
1/2 teaspoon crushed red pepper flakes, optional
2 cloves garlic
1 orange, zested and juiced
One 15-ounce can cannellini beans, rinsed and drained
1/4 cup drained sliced sun-dried tomatoes packed in oil
1 bunch broccoli rabe, trimmed and cut into 1 1/2-inch pieces
1/2 cup crumbled Gorgonzola cheese
1/4 cup toasted pine nuts
2 tablespoons freshly grated Parmesan

Steps:

  • Bring a large pot of salted water to a boil. Add the orecchiette and cook according to the package directions. Drain and toss with 1 tablespoon of the olive oil.
  • While the pasta is cooking, heat the remaining 1 tablespoon olive oil in a large skillet over medium heat. Crumble the sausage into the skillet, add the crushed red pepper and cook, breaking up the sausage with a wooden spoon, until browned, about 5 minutes.
  • Pierce the garlic on a fork. Add the orange juice, beans, sun-dried tomatoes and broccoli rabe to the skillet and cook, stirring constantly with the fork, until the sauce is heated through, about 4 minutes. Discard the garlic. Add the orecchiette, Gorgonzola, pine nuts, orange zest and Parmesan. Lightly toss and serve.

1 lb puff pastry (if frozen, defrost according to package instructions)
2 broccoli, heads cut into small florets (1 1/2 lb total)
2 tablespoons butter
3 -4 leeks, cleaned, trimmed and thinly sliced
2/3 cup heavy cream
1/3 cup water
1/4 cup chives
3 tablespoons grainy mustard
1 teaspoon salt
black pepper
6 ounces gorgonzola, cut roughly into medium chunks
1 egg, beaten

Steps:

  • Preheat oven to 400 degrees F. Roll out two-thirds of the pastry into a circle that can easily line a 10-inch loose-bottomed tart pan. Line the pan, and trim off the excess pastry. Roll out the next piece to make a thinner top; place this piece on a piece of parchment paper, or a plate. Chill the bottom and top in the freezer for 10 minutes.
  • Cover the tart bottom with parchment paper, and cover with baking beans. Blind bake for 15 minutes, to a golden, not overly brown color. Remove from the oven, take out parchment and baking beans, and bake for another 5 minutes. Let cool.
  • As the shell is baking, cook broccoli florets in a pot of boiling water. The florets should be tender but crisp, approximately 2 minutes. Rinse broccoli under cold water, and let dry.
  • Melt butter in a pan, and saute leeks on a low heat for 10 minutes, so they soften but don't color. Add mustard, cream, water, chives and a few cracks of black pepper. Stir to incorporate, and remove from heat.
  • Assembly: Spread the leek and cream mixture over the bottom of the tart. Spread the broccoli on top. Add the Gorgonzola. Brush the rim of the tart pan with the egg, and then place the pastry top over the filling. Press and seal the tart, and cut off any excess pastry. Glaze the top with the beaten egg and bake for 30 minutes (you're looking for a golden brown top.) Take out of the over and cool for 3-5 minutes before removing from the pan.

2 ounces whole-wheat spaghetti
3 tablespoons crumbled Gorgonzola cheese
2 tablespoons sour cream
1 teaspoon butter
1 small onion, chopped
1 ½ cups broccoli florets
½ cup water
½ teaspoon vegetable stock powder
salt and freshly ground black pepper to taste
1 pinch ground nutmeg
1 teaspoon lemon juice, or to taste
1 teaspoon chopped almonds

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite according to package instructions, about 12 minutes. Drain.
  • Mix gorgonzola and sour cream together in a small bowl.
  • Heat butter in a skillet over medium heat while spaghetti is cooking. Add onion; cook until soft and translucent, about 5 minutes. Add broccoli, water, vegetable stock powder, salt, pepper, and nutmeg and cook until broccoli is soft, about 15 minutes. Puree broccoli mixture with an immersion blender until smooth.
