EASY BUT ELEGANT BROCCOLI SOUP



Easy but Elegant Broccoli Soup image

This soup is very easy to prepare and ready in less than half an hour. It can be served hot or cold.

Number Of Ingredients 9

3 tablespoons butter
1 onion, sliced
1 carrot, sliced
1 clove garlic, minced
4 cups chicken stock
1 lb broccoli, chopped
1 cup light cream
salt and pepper
chopped fresh parsley (to garnish)

Steps:

  • In a large saucepan, melt the butter over medium heat; cook the onion, carrot and garlic for 5 minutes.
  • Stir in the stock and bring to a boil; add the broccoli.
  • Reduce the heat and simmer, covered, until the broccoli is tender, 15 to 20 minutes.
  • In a blender or food processor, puree the soup in batches and transfer to a glass bowl.
  • Stir in the cream; season with salt and pepper to taste.
  • Cover and refrigerate for at least 4 hours or until chilled.
  • Sprinkle with parsley just before serving.
  • If you prefer hot soup, serve when ready with a sprinkling of chopped parsley on each serving.

My family loves this creamy vegetable side dish. As pretty as it is tasty, it's an extra-special way to serve broccoli, and it really dresses up a table.

3 cups water
1/2 cup plus 2 tablespoons butter, divided
2 packages (6 ounces each) corn bread stuffing mix
2 packages (10 ounces each) frozen broccoli spears, cooked and drained
2 tablespoons all-purpose flour
1/2 teaspoon chicken bouillon granules
1/4 teaspoon salt
1-1/3 cups milk
3 ounces cream cheese, softened and cubed
2 green onions, sliced
1/2 cup shredded cheddar cheese
1/8 teaspoon paprika

Steps:

  • In a saucepan over medium heat, combine the water, 1/4 cup butter and the seasoning packet from stuffing mixes; bring to a boil. Remove from the heat; add stuffing crumbs and toss. Let stand for 5 minutes. , Spoon stuffing around edges of a greased 13x9-in. baking dish. Place broccoli spears in center of dish. In a saucepan over medium heat, melt remaining butter. Stir in the flour, bouillon and salt until smooth. Gradually add milk, stirring constantly; bring to a boil. Cook and stir for 2 minutes or until thickened. , Add cream cheese; stir until melted. Add onions; mix well. Pour over broccoli. Cover and bake at 350° for 20-25 minutes or until heated through. Sprinkle with cheese and paprika.

1/4 cup water
1/3 cup mayonnaise
1/4 cup shredded cheddar cheese

1 tablespoon Dijon mustard
Dash cayenne pepper

Steps:

  • Place broccoli and water in a large microwave-safe bowl. Cover and microwave on high for 3-4 minutes or until tender; drain and keep warm., For sauce, in a microwave-safe bowl, combine the remaining ingredients. Cover and microwave on high for 1-2 minutes or until warmed, stirring once. Serve over broccoli.

I found this recipe in the newspaper recently and made for supper the other night. Huge hit as it had the broccoli my husband loves and the stuffing my kids like.

1 1/2 cups water
5 tablespoons butter or 5 tablespoons margarine, divided
1 (6 ounce) package chicken-flavored seasoned stuffing mix
2 (10 ounce) packages frozen broccoli spears, thawed and drained
2 teaspoons all-purpose flour
1 teaspoon chicken bouillon granule
3/4 cup 2% low-fat milk
1 (3 ounce) package neufchatel cheese or 1 (3 ounce) package cream cheese, softened
1/4 teaspoon salt
1 medium onion, finely chopped
3/4 cup shredded cheddar cheese
paprika

Steps:

  • Preheat oven to 350°F Grease a 13x9 inch baking dish.
  • Combine water and 3 tablespoons butter in a large saucepan. Bring to a boil; remove from heat. Stir in stuffing mix and let stand 5 minutes.
  • Spoon stuffing around the edge of baking dish, leaving a well in the center. Arrange broccoli spears in well.
  • Melt remaining 2 tablespoons butter in a saucepan over medium-low heat. Add flour, stirring until smooth. Cook for 1 minute, stirring constantly. Add bouillon.
  • Add milk gradually, stirring constantly. Whisk in cream cheese and salt, mixing until smooth. Stir in onion. Pour sauce over broccoli. Sprinkle with cheddar and paprika.
  • Cover with foil and bake 35 minutes. Remove foil and bake 10 minutes longer.

This was nice straight from "Vegan Vittles", but I've tweaked it to make this creamy, light-green soup truly irresistable. My whole family (little bro included!) enjoys this in fall or winter weather.

3 potatoes, chopped (medium-smallish sized ones, peel only if desired- you really don't need to)
2 cups water or 2 cups vegetable stock
1 medium onion, chopped
4 cups broccoli, cut into florets, including some stem (or 2 cups each broccoli and cauliflower)
2 teaspoons dried tarragon leaves
1 1/2 cups soymilk (low-fat works well)
1 1/2 tablespoons almond butter
1 tablespoon tahini
1 1/2 tablespoons Dijon mustard
1/2 cup water or 1/2 cup vegetable stock
1/4 teaspoon sea salt
1/4-1/2 teaspoon white pepper

Steps:

  • In a medium pot, combine the potatoes, water or stock, onion , tarragon and broccoli. (Note: If using frozen broccoli, wait 5-10 minutes before adding it.) Bring to a boil, then reduce to a simmer for 10-15 minutes, till the vegetables are tender.
  • Combine the milk, almond butter, tahini, mustard and stir together well. Set aside.
  • Transfer the vegetables, in batches, to a food processor and blend each batch with some of the milk mixture. Blend about 20-30 seconds, until smooth but still just chunky enough to be thick.
  • Return the soup to the pot. Pour that last 1/2 cup of liquid into the food processor to rinse it out into the pot. Stir in the salt and white pepper, to taste.
  • Reheat over medium-low, for five minutes or so. Serve with sandwiches, baked potatoes, or rolls with almond butter or margarine.

This is a delicious side dish that I make for special occasions. This makes a very thick sauce and I like to thin it a little with butter which results in a richer tasting sauce.

1 (1 kg) bag broccoli stem, cooked and drained (or 1 lb. bag)
2 tablespoons flour
2 tablespoons butter
1/2 teaspoon oxo chicken bouillon
1/4 teaspoon salt
1 1/3 cups milk
1 (3 ounce) package cream cheese, softened and cut into cubes
2 green onions, sliced
1/2 cup cheddar cheese, grated

Steps:

  • Place broccoli in 9x13 dish.
  • In saucepan, over medium heat, melt butter.
  • Add flour, oxo and salt; stir to form a smooth paste.
  • Gradually add milk, stirring constantly; bring to a boil.
  • Cook and stir 2 minutes.
  • Add cream cheese; stir until melted (if mixture seems too thick, add a small amount of hot, melted butter to thin).
  • Add onions.
  • Pour over broccoli.
  • Sprinkle with cheese and paprika.
  • Bake in pre-heated 350 degree oven for 25 minutes or until bubbly.

I started out to make someone else's soup today but found I didn't have all the right ingredients and couldn't go shopping because of the weather--snowed in! So I improvised and came up with a totally different soup which is SO YUMMY! It is so filling you don't really need anything to go with it. Hope you'll give it a try!

2 or 3 large baking potatoes, peeled and cubed
1 medium onion, chopped
4 ounce(s) cream cheese, softened
1 can(s) (10.5 oz.) cream of broccoli soup, undiluted
1/2 cup(s) chicken broth
8 ounce(s) half and half
1/2 stick(s) butter
1 teaspoon(s) garlic powder
4 slice(s) bacon, cooked and crumbled
4 ounce(s) shredded cheddar cheese
- salt and pepper to taste

Steps:

  • Cook potatoes and onions in boiling water, covered, for about 10 minutes; drain.
  • Add cream cheese and broccoli soup; mix well.
  • Stir in 3/4 of the crumbled bacon and 3/4 of the shredded cheese. Add garlic powder, chicken broth, and half and half. Stir until well combined.
  • Add the butter, salt and pepper, and cover over low to medium heat until butter has melted.
  • Stir again to combine all ingredients; simmer until hot. Serve immediately with the remaining bacon and cheese as garnish.
