1 (8 1/2 ounce) box Jiffy corn muffin mix
1 large onion, chopped
1/2 cup margarine or 1/2 cup butter
4 eggs
1 cup cheddar cheese, shredded
1 (10 ounce) package frozen chopped broccoli, thawed and drained
8 ounces sour cream, i use low fat
1 teaspoon salt

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Mix all ingredients together well.
  • Grease a 8x8 pan, I use Pam.
  • Pour into prepared pan.
  • Bake@ 425 degrees Fahrenheit for 40 minutes or until bread is pulling away from side of pan.
  • Let sit for 15 minutes until cutting.

1 (10 ounce) package frozen broccoli, thawed and chopped
1 (8 1/2 ounce) box Jiffy cornbread mix
3 eggs, beaten
1 onion, chopped
1/2 cup cheddar cheese, shredded
1/2 cup butter, melted
1/4 teaspoon garlic powder
1/4 teaspoon red pepper

Steps:

  • Remove excess moisture from broccoli. Combine cornbread mix, eggs, onion, cheese, butter and seasonings. Stir thoroughly. Fold in broccoli.
  • Batter will be thick. Pour into greased baking dish.
  • Bake at 375°F for 25-30 minute Cooking time does not include thawing broccoli.

2 box small boxes cornbead mix
1 1/2 stick butter, melted
1 small onion, finely chopped
5 eggs, use 5 whites and 2 yolks
2 c cottage cheese
1 pkg frozen chopped broccoli (10 oz.)

Steps:

  • 1. Mix all together with spoon. Pour into large greased baking dish. Or 2 8 x 8 dishes
  • 2. Bake at 400 for 40 minutes. Serve hot.

1 cup cottage cheese
¾ cup butter, melted
4 eggs
2 (8.5 ounce) packages corn bread/muffin mix
1 (10 ounce) package frozen chopped broccoli, thawed
1 large onion, chopped
1 ½ cups shredded Cheddar cheese, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Beat cottage cheese, butter, and eggs in a large bowl. Stir corn bread mixes into butter mixture until just moistened. Fold in broccoli, onion, and 1 cup Cheddar cheese. Pour batter into prepared baking dish and sprinkle with remaining 1/2 cup Cheddar cheese.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Cool in the baking dish for 10 minutes before slicing and serving warm.
