This recipe is great for vegetarians or for anyone who loves rich meat-free stuffing.

2 pounds fresh broccoli florets
2 eggs, beaten
1 onion, chopped
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup mayonnaise
10 ounces dry bread stuffing mix
½ cup butter, melted
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Cook broccoli in a large pot of salted boiling water until just slightly tender. Drain.
  • In a large bowl, combine eggs, onion, mushroom soup and mayonnaise.
  • Place a layer of broccoli in the prepared baking dish. Pour mayonnaise sauce over broccoli. Spread stuffing mix over the sauce. Drizzle butter or margarine over all and top with shredded cheese.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes.

10 cups frozen broccoli florets (from two 22-oz bags), thawed and drained
2 cans (14.75 oz each) cream style sweet corn
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs, slightly beaten
2 tablespoons butter or margarine, melted
3/4 cup herb-seasoned stuffing

Steps:

  • Heat oven to 350°F. In ungreased 3-quart casserole or 13x9-inch (3-quart) glass baking dish, mix broccoli, corn, salt, pepper and eggs. In small bowl, mix melted butter and stuffing; sprinkle evenly over vegetable mixture.
  • Bake uncovered about 1 hour or until stuffing is golden and vegetables are hot.

1/2 cup butter
2 cups herb seasoned stuffing mix, crumbled not cubed
1/4 teaspoon poultry seasoning
1 (16 ounce) package frozen chopped broccoli, thawed and drained
1 (15 ounce) can cream-style corn
2 eggs, beaten
2 tablespoons chopped onions
1/2 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Preheat oven to 375 degrees.
  • Melt butter in large saucepan until sizzling.
  • Add stuffing and poultry seasoning and toss to coat.
  • Set aside 1/2 cup for topping.
  • To remaining stuffing mixture in saucepan add broccoli, corn, eggs, onion, salt and pepper and mix well.
  • Spoon mixture into ungreased 2-quart casserole; sprinkle with reserved stuffing.
  • Bake uncovered for 45 minutes or until knife inserted 1-inch from edge of pan comes out clean.

From 30-Day Gourmet. This is a very sweet way to eat broccoli, and one way my picky picky DD (6yo) will eat broccoli without complaint. This freezes very well (I tested it before posting). For the breadcrumbs you can either use homemade bread crumbs, store bought breadcrumbs, or crumb-style stuffing mix (as opposed to the cubes).

6 tablespoons butter
2 cups seasoned bread crumbs
2 eggs
20 ounces frozen chopped broccoli
32 ounces canned creamed corn
2 tablespoons chopped onions
1/2 teaspoon salt
1 dash pepper

Steps:

  • Melt butter, and add bread crumbs and toss to coat.
  • Combine eggs, broccoli, creamed corn, onion, salt and pepper. Stir 3/4 bread crumbs into vegetable mixture.
  • Spoon into 9x13 inch (or two 1.5 quart casseroles) and top with remaining crumbs.
  • Bake at 350 degrees for 45 minutes.
  • OAMC: You can freeze this in a kit form, with the vegetable mixture in a large labeled freezer bag (2 gal. for one full recipe, or two 1 gal. bags) and the crumb topping in a smaller bag, taped together. 1 (15.25 ounce) can whole kernel corn, drained
1 large onion, diced
1 (16 ounce) container sour cream

2 cups shredded Cheddar cheese, divided
1 (6 ounce) package herb-seasoned dry bread stuffing mix
¼ cup butter, melted
