1 package Betty Crockerâ„¢ three-cheese potatoes
2 1/4 cups hot water
2/3 cup milk
1 tablespoon margarine or butter
2 teaspoons yellow mustard
1 1/2 cups cubed fully cooked fully cooked smoked boneless ham
1 package (9 ounces) frozen broccoli spears, thawed
1/2 cup shredded Cheddar cheese (2 ounces)

Steps:

  • Heat Potatoes, Sauce Mix, hot water, milk, margarine, mustard, ham and broccoli to boiling in 10-inch skillet; reduce heat.
  • Cover and simmer 15 to 16 minutes, stirring occasionally, until potatoes are tender. Sprinkle with cheese.
  • Cover and heat, without stirring, 2 to 3 minutes or until cheese is melted.

Cheesy potatoes with Broccoli. Kielbasa gives this dish fantastic flavor. A weeknight meal sure to please. I think this came from Betty Crocker. You wont be dissapointed! Yum! Have to try this quick and easy meal.

2 cups water
2/3 cup milk
2 tablespoons butter
2 (5 ounce) boxes augraten potatoes
2 cups kielbasa, cut up
2 cups frozen broccoli cuts

Steps:

  • In Large skillet add water, milk, butter. Cook to a boil. Stir in uncooked potatoes and cheese sauce package from box. Add kielbasa and mix well. Reduce heat cover and cook 15 minutes. Add Broccoli cover and cook another 8 minutes or until potatoes are tender. Sauce will thincken as it stands. YUM!

Kosher salt
4 large russet potatoes (about 8 ounces each)
6 slices bacon, cut crosswise into 3/4-inch pieces
6 cups chopped broccoli florets (from 1 bunch broccoli)
4 tablespoons unsalted butter, softened
1/2 cup sour cream
Freshly ground pepper
4 scallions, chopped
1 1/2 cups grated cheddar cheese (about 6 ounces)
6 to 8 cups baby spinach
Prepared vinaigrette, for serving

Steps:

  • Preheat the broiler. Bring a pot of salted water to a boil. Pierce each potato several times with a fork; put on a plate and microwave until tender, 10 to 20 minutes.
  • Cook the bacon in a large ovenproof skillet until crisp. Drain on paper towels. Pour the fat into a bowl; wipe out and reserve the skillet.
  • Add the broccoli to the boiling water and cook 3 minutes, then drain.
  • Halve the potatoes lengthwise, then scoop the flesh into a bowl, leaving a 1/2-inch-thick shell. Place the shells cut-side down in the skillet and brush with the reserved bacon fat. Transfer the skillet to the broiler; broil until golden, about 3 minutes.
  • Mash the potato flesh with the butter and sour cream; season with 1 1/4 teaspoons salt, and pepper to taste. Toss in the broccoli, scallions, bacon and half of the cheddar. Turn the potato shells cut-side up in the skillet. Stuff with the broccoli mixture and sprinkle with the remaining 3/4 cup cheese. Broil until the cheese melts, 3 to 4 minutes. Toss the spinach with the dressing; serve with the potatoes.

A great weeknight meal. This is quick and easy....even quicker with pre-cooked chicken.

1 lb small red potatoes, sliced thin
1 lb chicken breast, cut into bite sized pieces
1/2 small onion, diced small
1 can(s) condensed broccolli cheese soup
1/2 c milk
2 c broccoli florets (fresh or frozen)
1/2 c cheddar cheese, grated
2 Tbsp vegetable oil
1/4 tsp garlic powder
3 dash(es) pepper

Steps:

  • 1. Heat oil in skillet over medium heat. Add chicken and onion. Cook until chicken is no longer pink. Remove chicken to a plate and set aside. (This step may be skipped if using pre-cooked chicken.)
  • 2. Add potato slices to hot pan. Cover and cook for 10 minutes, flipping occasionally.
  • 3. Stir in the soup, milk, garlic powder, pepper, and broccoli. Add chicken back to skillet. Sprinkle with cheese.
  • 4. Cook until boiling, then reduce heat to low. Cover and cook for 5-10 minutes, or until potatoes are tender.
