5 cups broccoli florets, cut into 1/2-inch pieces
1/2 cup red onion, chopped
1 cup sharp cheddar cheese, shredded
1 cup cooked bacon, crumbled
1 cup sunflower seeds
3/4 cup dried sweetened cranberries
1 cup salad dressing or 1 cup mayonnaise
1/4 cup sugar
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Combine all salad ingredients in a large mixing bowl and mix well.
  • Combine dressing ingredients in a small mixing bowl.
  • Mix until thoroughly combined using a fork or wire whisk.
  • Add dressing to salad and mix well.
  • Refrigerate 1 hour.

MARIE'S BROCCOLI, BACON, CRANBERRY AND ALMOND SALAD



Marie's Broccoli, Bacon, Cranberry and Almond Salad image

The dressing for this recipe is a little different in that it contains sour cream and mayonnaise. Once you taste it, you will not be able to stop eating it. Very addictive!

1 garlic clove, grated fine
1 cup sour cream
1 cup mayonnaise
1 tablespoon cider vinegar
8 -10 cups broccoli florets, chopped fine
1 cup dried cranberries
black pepper (to taste)
10 slices cooked crisp bacon, crumbled
1 cup slivered almonds

Steps:

  • Whisk together first 4 ingredients for dressing and set aside.
  • Combine broccoli, cranberries and black pepper. (Note: I used 5 broccoli crowns - would not enter this way).
  • Add dressing and stir well.
  • Refrigerate to let flavors develop.
  • At serving time add all but a few tablespoons of bacon and all of almonds to broccoli mixture.
  • Stir together and garnish with crumbled bacon.

Cranberry Bean Salad with Butternut Squash and Broccoli Rabe image

This warm salad combines fall's best flavors and textures. Sweet sauteed squash, bitter broccoli rabe, and smoky bacon are irresistible partners for creamy cranberry beans.

1 onion
1 dried bay leaf
4 to 5 whole black peppercorns
2 1/2 pounds fresh cranberry beans, shelled (about 3 cups)
5 tablespoons olive oil
Coarse salt and freshly ground pepper
4 slices bacon, (4 ounces)
1 small butternut squash, (about 1 3/4 pounds), cut into 1/2-inch pieces
4 cloves garlic, minced
1 bunch broccoli rabe, washed and trimmed (about 1 pound)

Steps:

  • Cook the beans: Using a sharp knife, slice off stem end of onion, and score shallow slits all over, making sure it stays intact. Place in a large saucepan with the bay leaf and the peppercorns; fill with enough water to just cover (about 3 quarts). Bring to a boil; reduce heat, and simmer 20 minutes. Add beans; simmer until cooked through, about 15 minutes.
  • Drain beans, reserving cooking liquid. In a medium bowl, toss beans with 1 tablespoon each oil and cooking liquid; season with salt and pepper. Set aside.
  • Cook bacon in large skillet over medium heat until crisp. Transfer to paper towels to drain. Pour off all but 2 tablespoons rendered bacon fat, and return the skillet to medium heat. Working in batches if necessary, saute squash until cooked through and golden, about 10 minutes. Season with salt and pepper, and transfer to a bowl; set aside.
  • Heat 3 tablespoons oil in the same skillet over medium heat. Add garlic, and saute until just golden, 1 to 2 minutes. Add broccoli rabe; saute until wilted and heated through, about 5 minutes. Season with salt and pepper.
  • Add beans and squash to skillet, and cook just until heated through. Drizzle with remaining tablespoon oil, and season with salt and pepper. Sprinkle reserved bacon on top, and serve.

Found the original of this recipe in the December 2008 Betty Crocker Most Requested RECIPES: Holiday Recipe Collection, although it has been slightly tweaked by someone who really likes cranberries! NOTE: If you aren't a fan of the cranberry, pomegranates make a nice substitute

1/4 cup orange juice
1 teaspoon granulated sugar
1/2 teaspoon salt
1/8 teaspoon pepper
3 cups broccoli florets, fresh, coarsely chopped
1 large navel orange, peeled, cut into bite-size pieces
1 cup dried cranberries
1/3 cup sunflower seeds, roasted, salted
2 tablespoons red onions, sliced

Steps:

  • In a large serving bowl, mix the mayonnaise, orange juice, sugar, salt & pepper.
  • Add the remaining ingredients, then toss until well-coated.
  • Store covered in the refrigerator.

BROCCOLI SOUR CREAM AND CRANBERRY SALAD



Broccoli Sour Cream and Cranberry Salad image

I haven't tried this yet, I am posting it for somewhere safe to post it as I think of the recipe. Making it because I need to find something to make using ingredients that I have on hand. If you can think of anything that would improve this recipe, please submit it! I did end up making this last night, I used yogurt instead of sour cream. I was also thinking that sour cream with a bit of lemon juice and curry powder would have been nice. The kids loved this!

1/3 cup cranberry sauce
1/2 cup sour cream
1/4 cup craisins

  • Boil broccoli till tender crisp.

  • Place in a serving bowl and add salt and pepper to taste.
