1 cup diced carrots
1 cup diced celery
1 cup chopped onion
4 teaspoons butter, divided
1-1/2 cups (6 ounces each) shredded cheddar cheese, divided
2 cups fresh broccoli florets
1/4 cup chicken or vegetable broth
Salt and pepper to taste

Steps:

  • In a large skillet, saute the carrots, celery and onion in 3 teaspoons butter until tender. Transfer to a greased 1-1/2-qt. baking dish. Top with 3/4 cup cheese. In the same skillet, saute broccoli in the remaining butter for 1 minute. Place over cheese; pour broth over all., Cover and bake at 350° for 25 minutes. Uncover; sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted and vegetables are tender. Season with salt and pepper. Serve with a slotted spoon.

Steps:

  • Heat oven to 350°F. In ungreased 1-quart microwavable casserole, mix broccoli, carrots and 1/2 cup water. Cover with microwavable plastic wrap. Microwave on High 4 to 6 minutes, stirring every 2 minutes, until vegetables are crisp-tender; drain.
  • Stir in sour cream, milk and cheese until well mixed. Sprinkle with onions.

2 cups fresh broccoli florets
3 large eggs
2 cups 2% milk

butter: 3 tablespoons
onions, chopped: 2
cloves garlic, minced: 5
red bell pepper, chopped: 1
Alfredo sauce: 1 (16 ounce) jar
milk: 1 cup
cream cheese, softened: 1 (8 ounce) package
shredded Havarti cheese: 1-1/2 cups
shredded Cheddar cheese: 1-1/2 cups
Frozen sliced carrots: 1 (16 ounce) package
Frozen broccoli florets, thawed and drained: 1 (16 ounce) package
sourdough bread crumbs: 2 cups
grated Parmesan cheese: 1 cup
melted butter: 5 tablespoons

Steps:

  • Preheat oven to 375°F.
  • In a large skillet, melt 3 tablespoons butter over medium heat. Add the onion and garlic; cook and stir for 5 minutes or until tender.
  • Add the red bell pepper; cook for another 2 minutes.
  • Stir in the Alfredo sauce, milk and cream cheese. Cook, stirring occasionally, until the cheese melts and the mixture is smooth.
  • Add the Havarti and Cheddar cheeses and stir until smooth. Remove the pan from the heat.
  • Add the broccoli and carrots to the sauce mixture. Pour into a 13" x 9" glass baking dish.

This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren't big fans of bread crumbs. Also, the eggs can be taken out for a great sauce and using skim milk and fat-free cheese works well, too. It's basically a great recipe that can be easily altered according to taste. Enjoy!

8 cups fresh broccoli
½ cup butter
2 tablespoons all-purpose flour
1 small onion, chopped
1 ¼ cups milk
salt and pepper to taste
4 cups shredded Swiss cheese
2 eggs, beaten

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.

1 broccoli
