Grilled Wild Mushroom and Brie Cheese Sandwich image

These are decadent and wonderful and give a whole new meaning to "grilled cheese". Be sure to use a very good sourdough and the freshest of mushrooms. Note: This is a difficult sandwich to turn in the pan, but definitely worth the hassle. Enjoy!

8 slices sourdough bread
8 ounces brie cheese (sliced)
4 ounces button mushrooms (quartered)
2 ounces shiitake mushrooms (sliced)
2 ounces oyster mushrooms (sliced)
1 tablespoon minced garlic
1 medium shallot (chopped)
2 ounces white wine
2 tablespoons olive oil
2 tablespoons chopped fresh herbs (parsley, thyme, chives and or basil)
soft butter (as needed)
salt & freshly ground black pepper (as needed)

Steps:

  • Saute the mushrooms in the olive oil in a medium sized pan for 4-5 minutes.
  • Add the shallots and garlic and cook for an additional 2 minutes.
  • Add the chopped herbs.
  • Add the white wine and reduce until the liquid is evaporated.
  • Season with salt and fresh ground black pepper and set aside.
  • Butter one side of each slice of bread. Place the butter side down on four slices of the bread in a large non-stick fry pan at medium-low heat.
  • Divide the mushrooms into four and place them evenly on the four slices of bread.
  • Top the mushrooms with the Brie and cover with the other slices of buttered bread. Cook for 3-5 minutes or until golden brown; then turn and cook on the other side for an additional 3-5 minutes.
  • Cut and serve immediately.

Grilled Brie and Goat Cheese Sandwich with Bacon and Green Tomato Recipe : A tasty grilled cheese sandwich with crispy bacon and tangy green tomato and covered in ooey gooey melted brie and goat cheese.

Number Of Ingredients 7

4 slices bacon
1 large green tomato, sliced into 1/8 inch slices
2 tablespoons butter
4 slices bread (I used sour dough)
2 ounces brie, room temperature
2 ounces goat cheese, room temperature
pepper to taste

Steps:

  • Cook the bacon until crisp over medium heat, set aside on paper towels to drain and pour all but 1 tablespoon of the grease from the pan.
  • Add the green tomato slices, saute for a minute on each side, set aside and wipe the pan clean. (Optional, skip if you prefer crisp tomato slices.)
  • Butter one side of each slice of bread and place 2 in the pan buttered side down.
  • Top each with 1/4 of each cheese followed by the bacon, tomato, pepper and finally the remaining slice of bread with the buttered side up.
  • Grill until the cheese has melted and the bread is golden brown, about 2-4 minutes per side.

2 slices sourdough bread (or bread of your choice)
1 ounce brie cheese, room temperature
1 tablespoon baked cranberry sauce (try Baked Cranberry Sauce)
1 tablespoon butter, softened

Steps:

  • Softened butter works best on a grilled cheese. Just let it sit out and then smear it all over the bread. You only need to butter one side of each slice. This is the side that will be grilled.
  • Smear the brie and roasted cranberries onto the side of the bread that is not buttered. And sandwich it with another buttered slice(with butter on the outside). All this butter and cheese is making me hungry!
  • In my opinion, a grilled cheese sandwich is best done in a iron skillet. You don't need it to be very hot. Turn the stove to a medium-high heat, and once the skillet is warmed, add the sandwich. Let it sit for two minutes and then flip it. It should come out perfect every time!

Who says grilled cheese is just for kids? Don't get me wrong, I still love a greasy diner-style grilled cheese once in awhile, but this fancier version is incredibly delicious and decadent. Brie and asparagus are really ideally suited for each other so I almost always combine them when I'm making anything where I would use brie.

2 slices bread, of your choice (works well with sourdough or a nice wheat)
4 slices brie cheese
5 asparagus spears
2 tablespoons of shredded mozzarella cheese
1 tablespoon butter
1 tablespoon olive oil
coarse sea salt
black pepper (optional)
thyme (optional)
1 slice prosciutto (optional variation)

Steps:

  • Slice your bread if it isn't pre-sliced and butter on one side of both slices.
  • Add your cheeses, black pepper, thyme and prosciutto (if adding) to the non buttered side of one of the slices.
  • Rip the woody end of the asparagus spear off of the bottom and discard. Then heat your olive oil on medium low heat in a saute pan. When hot, add the asparagus spears. Cook until the spears are tender and have a bright fresh green hue. Add a pinch of kosher salt. Remove from the pan and add to the top of your cheese. Close up the sandwich with the butter side out.
  • You can cook your grilled cheese in the same pan you used for the asparagus. Just heat it up again, add the sandwich and cook until golden, and all the cheese is thoroughly melted (will take longer if you use a thicker slice of bread).

1 cup fresh lobster meat, cooked, chopped

2 ounces brie cheese
3 tablespoons quince jelly
2 teaspoons butter
1 tablespoon extra virgin olive oil

Steps:

  • Spread Brie onto one slice of French Bread.
  • Spread Quince Jam onto other slice of French Bread.
  • Combine French Bread Slices by placing the Brie and Jam sides together.

1 teaspoon balsamic vinegar (or brandy or port)
1 tablespoon butter
2 slices bread
1 1/2 ounces brie, room temperature
1 ounce dark chocolate, chopped, room temperature

Steps:

  • Toss the cherries in the balsamic vinegar, place them on a baking sheet in a single layer, roast in a preheated 450F/230C oven for 15-20 minutes.
  • Heat a pan over medium heat.
  • Butter one side of each slice of bread, place one slice in the pan with buttered side down, top with half of the cheese, the chocolate, cherries, the remaining cheese and finally the other slice of bread with buttered side up.
