YORKSHIRE PUDDING POPOVERS



Yorkshire Pudding Popovers image

This recipe comes from Brian Turner, the greatest living Yorkshire chef. It's chief glory is that all the measurements are by volume so adjusting it to suit larger or smaller groups is dead easy. I always use a yogurt container to measure it but you could use a bucket if you've a large group for which to cater.

1 cup plain flour
1 cup egg
1 cup milk
to taste salt

Steps:

  • Preheat the oven to hot (425F/220C/Gas 7)
  • Put a teaspoonful of oil or dripping in each of several muffin tins or, to be truly Yorkshire, a couple of tablespoonsful in a larger roasting tin and place in the oven until the fat is really hot and beginning to smoke. Meanwhile combine the rest of the ingredients and beat to form a batter of the consistency of double cream.
  • If you wish you can add mixed dried herbs to add a savoury flavour.
  • When the fat is smoking take the tin out of the oven and place it over a low light so that it doesn't cool as you add the batter.
  • Pour in the batter If you're using muffin tins don't over fill.
  • Remember that the puddings will rise and puff up.
  • Put the tin back into the top of the oven as soon as possible and leave for about 20-25 minutes by which time they will be puffed up and crisp.
  • When my grandmother used to make Yorkshire pudding to go with the Sunday roast we would eat it in the true Yorkshire way.
  • That is, as a first course with just a savoury gravy poured over it. After all, the idea of Yorkshire pudding is to fill you up so that you don't want so much of the more expensive meat! If there was any of the pudding left over as a treat we kids would have it as a desert with Golden Syrup poured over it. Servings: 4 Ian Rice (Yorkshireman)

Its a yorkshire chef but the recipe is both english and european since it includes Rosti and traditional eggs and european sausages. Homemade potato rosti, regular sausage meat kicked up a notch, eggs, fried bread and tomatoes..and all in less than 30 mins to prepare YUM. Make this for your sweetie on a cold morning, or the whole family by increasing the ingredients.

1 potato, peeled and grated
2 spring onions, finely chopped
1 -2 tablespoon olive oil
85 g sausage meat
30 g white breadcrumbs
1 tablespoon tomato ketchup
1 teaspoon Dijon mustard
1 tablespoon oil
3 tablespoons olive oil
2 slices white bread
1 tomatoes, cut in half
6 eggs

Steps:

  • To make the rosti, place the grated potato, spring onion and seasoning into a bowl and mix together until combined.
  • Heat the oil in a small pan and scatter the potato in, spreading it out evenly.
  • Gently fry for 3-4 minutes on each side until crisp, golden and cooked through.
  • Place the sausage meat, breadcrumbs, ketchup and mustard into a large bowl and mix together until well combined. Shape the mixture into a sausage.
  • Heat the oil in a non-stick frying pan and fry the sausage for 6-8 minutes or until cooked through, turning occasionally.
  • Heat one tablespoon of oil in a griddle pan and griddle the bread for 2 minutes on each side, or until crisp and golden. Transfer the fried bread to a serving plate.
  • Cook the tomato in the griddle pan for 2-3 minutes on each side.
  • Meanwhile, heat the remaining oil in a medium frying pan and crack the eggs in beside each other. Gently fry for 1-2 minutes, carefully spooning the oil over the top to cook the top.
  • Transfer the eggs, tomato, rosti and sausage onto a serving plate with the fried bread and serve at once.

Linzer Torte is a holiday classic in the Austrian, Hungarian, Swiss, German and Tyrolean traditions, often prepared for Christmas. The recipe for this rich dessert has been known since the late 1600s and is thought to have originated in Linz, Austria. A copy from 1696 can be found at the Vienna Stadt-und Landesbibliothek. In the 1850s, an Austrian traveler by the name of Franz Hoelzlhuber allegedly brought the Linzer Torte to Milwaukee, from where the recipe spread over the United States. 1 cup unsalted butter, chilled, cut into small pieces
1 cup all-purpose flour, sifted
1 1/2 cups ground almonds, blanched
1/2 cup granulated sugar
1/8 teaspoon ground cloves
1/8 teaspoon cinnamon
2 egg yolks
1/2 cup raspberry jam
1/2 egg white, slightly beaten

Steps:

  • Preheat oven to 325 F.
  • Chop or crumble cold butter into flour.
  • Add almonds.
  • Mix sugar with the spices and egg yolks, add to flour mixture.
  • Bring the dough together and knead until well blended.
  • Place two-thirds of the dough into a 9 inch ungreased cake pan.
  • with a removable bottom.
  • Spread dough over the bottom and about 1 inch up the sides.
  • Chill pan for an hour.
  • Roll out remaining dough on lightly floured surface into a.
  • rectangle 10x 5 inches and chill for 1 hour.
  • Spread jam over bottom of pan.
  • Cut 1/2 inch wide strips of the rolled out dough.
  • Lift with a spatula and arrange lattice style over the jam.
  • Fasten the ends around the rim of pan by pressing lightly.
  • Brush with egg white and bake on the lower shelf of the oven for 1 hour and 15 minutes.
  • Set pan on a rack and partly cool before removing the rim of the pan.

5 lbs new potatoes (peeled, boiled in salted water)
1 large onion (grated)
2 stalks celery (finely chopped)
1/4 cup vegetable oil
1 cup mayonnaise
1 (6 ounce) can evaporated milk
2 tablespoons white vinegar
salt and pepper

Steps:

  • Boil potatoes, drain and slice or quarter to liking.
  • In a large mixing bowl, place potatoes and add grated onion.
  • Add mayo, oil, milk, vinegar and toss over potatoes coating well.

1 large head of broccoli
8 1/2 ounces cheddar cheese, grated
1 cup milk
3 tablespoons flour
1 ounce bread, stale (day old french or ciabbata)
3 slices bacon
1 pinch nutmeg
1 garlic clove, minced
olive oil

Steps:

  • Chop Broccoli into florets.
  • Boil florets in salted water for 7-10 minutes until tender.
  • Pour milk into a pan, bring to boil, then simmer while adding flour, and 3/4 of the cheese.
  • Chop bacon finely and add to cheese sauce mixture, along with minced garlic and nutmeg.
  • Place broccoli in 9x9 in casserole dish, pour over cheese sauce, then tear stale bread into thumb size pieces and place on top of broccoli and mixture along with the rest of the cheese, pour a little olve oil over the top of this to make the bread crispy.
  • Bake in the oven at 350 for 25-35 minutes or until golden brown on top.
  • Serve immediately.

This is a full breakfast that can be eaten all day or will set you up for the day, if eaten in the morning! My Dad's Aussie colleagues introduced us to this, when we lived in Hong Kong.......a vertitable meat feast!

2 lamb loin chops
2 thick sausages
2 slices bacon
100 g mushrooms
1 large tomatoes (cut in half)
2 tablespoons grated cheddar cheese
1 tablespoon oil
2 eggs

Steps:

  • Trim chops of excess fat, pierce sausages with a fork. Place chops and sausages on oiled grill tray, cook under high heat for 2 minutes, turn, cook 2 minutes, continue cooking chops and sausages until they are done to your liking.
  • In a pan, fry bacon until crisp, remove, keep warm.
  • Add mushrooms, cook until browned, remove and keep warm.
  • Then place tomato, cut side down on grill tray, cook for 2 minutes, turn, sprinkle with cheese on top, cook until tender.
  • About 3 minutes before serving, heat oil in frying pan, cook eggs over low heat, serve with cooked meat, tomato, bacon and mushrooms.
  • Serve with toast if you wish & hot, strong tea!
