These appetizers are very quick and easy. The recipe came from Taste of Home. My kids like this because they say it tastes like pizza, in a bite size piece.

1 (8 ounce) package refrigerated crescent dinner rolls
16 slices pepperoni, cut into quarters
2 pieces mozzarella string cheese, cut into quarters
3/4 teaspoon italian seasoning, divided
1/4 teaspoon garlic salt

Steps:

  • Unroll crescent dough.
  • Separate into eight triangles.
  • Place eight pepperoni pieces on each.
  • Place a piece of cheese on the long side of each triangle.
  • Sprinkle with 1/2 teaspoon Italian seasoning.
  • Roll up each, starting with long side.
  • Pinch seams to seal.
  • Sprinkle with garlic salt and remaining Italian seasoning.
  • Place 2 inches apart on a greased baking sheet.
  • Bake at 375F for 10 to 12 minutes or until golden brown.

I love the chicken roll-ups my mom made for special occasions, filled with spinach and cream cheese. My own kids wouldn't eat those, so I came up with a pizza-flavored variety the whole family enjoys. -Tanja Penquite, Oregon, Ohio

4 boneless skinless chicken breast halves (4 ounces each)
12 pepperoni slices
8 slices part-skim mozzarella cheese
1 can (15 ounces) pizza sauce

Steps:

  • Flatten chicken to 1/4-in. thickness. Place three slices of pepperoni and one slice of cheese on each. Roll up tightly; secure with toothpicks. Place in a greased 11x7-in. baking dish. Spoon pizza sauce over top. , Cover and bake at 350° for 35-40 minutes or until chicken is no longer pink. Uncover; top with the remaining cheese. Bake 5 minutes longer or until cheese is melted. If desired, broil a minute or two to brown cheese slightly.

My grandkids have really enjoyed this - especially because they like to help make it. We've made it early in the morning and then baked it later in the day while...

4 chicken breasts, boneless and skinless
20 slice pepperoni
8 oz pepperoni
4 slice mozzarella cheese
1 28-ounce jar(s) spaghetti sauce
1 pinch garlic powder
salt and pepper, to taste
1 tsp italian seasoning

Steps:

  • 1. Preheat oven to 350º F.
  • 2. Pound chicken breasts flat with a meat mallet. Season to taste with garlic powder, salt, pepper and Italian style seasoning.
  • 3. Place 4 to 5 slices pepperoni on each breast and top each with a slice of cheese.
  • 4. Roll up breasts and fasten with toothpicks.
  • 5. Dice 1/2 stick pepperoni and saute in a medium skillet until it has released most of its oil.
  • 6. Remove pepperoni from skillet and set aside.
  • 7. Brown chicken rolls in pepperoni oil about 5 to 10 minutes each side.
  • 8. Place chicken in a baking dish.
  • 9. Combine spaghetti sauce and sliced pepperoni and pour over chicken.
  • 10. Bake in the preheated oven for 30 to 40 minutes.
