TORTILLA BREAKFAST WRAP
Inspired by the Egg and Cheese Bread Omelet, we made a complete breakfast wrap--tortilla, eggs, spinach, cheese and ham included--entirely in one skillet, for a go-to dish you can make in a hurry. Enjoy right out of the pan or with a few dashes of your favorite hot sauce.

Steps:
- Combine the eggs with a pinch of salt and several grinds of pepper in a small bowl and whisk to combine.
- Melt the butter in a medium nonstick skillet over medium heat. Pour in the egg mixture and swirl the skillet to coat the bottom. Working quickly, dip the tortilla in the eggs, then flip it over and place it back in the skillet (both sides should be coated in egg). Season with another pinch of salt.
- Continue to cook the eggs until they are completely set on the bottom, 1 to 2 minutes. Slide a large rubber or silicone spatula under the tortilla and flip the whole tortilla and egg over in one single motion. Scatter the spinach on the half of the tortilla that's closest to you, then top with the cheese and finally the ham. Continue to cook until the bottom is golden brown, about 1 minute more. Remove from the heat and slide onto a plate.
- Starting with the side that has all the filling, start rolling the tortilla into a tight wrap or burrito. Keep the seam side facing downward so the wrap stays closed. Cut in half crosswise and serve.

- Brown sausage in a skillet, using a wooden spoon to break the meat apart while cooking. Turn off the heat and stir in the salsa. Combine and set aside. In a bowl, whisk together the eggs, milk, salt, pepper and mustard powder, set aside. Slice the tortillas in half. Spray a casserole dish with cooking spray, place the straight end of the tortilla (4 pieces) towards the outside of the dish. Sprinkle with some cheese, then half of the sausage mixture, a little more cheese and repeat with an additional layer beginning with the tortillas and the end with a final layer of tortillas on top (make sure to save a little cheese for the top). Pour the egg mixture over the entire thing. Using your hands press the top layer down. Bake in a 350˚F oven for 35 minutes. Remove and top with remaining cheese and bake an additional 5-10 minutes or until cheese is bubbly.

TASTY TORTILLA BREAKFAST SANDWICH
This is an easy thing to fix if you're in a hurry but still want something tasty and healthy for breakfast. You can be flexible with the fillings. I used eggs, American cheese, chopped onion, ham and tomato. This is baked in the oven and turns out to be like a Hot Pocket, but it is much better for you. You can also make a bunch of these ahead of time and freeze. Then to reheat, just pop in the microwave for a minute.

- Preheat the oven to 375 degrees F.
- Heat the olive oil in a 10-inch cast-iron skillet over medium-high heat. When the oil is hot, add the mushrooms, onions and bell peppers. Cook until slightly charred, 3 to 4 minutes. Season with salt and pepper. Turn off the heat and stir in the spinach. Remove the veggie mix to a plate.
- Add the tortilla to the skillet, pressing it lightly to touch the bottom. Top the tortilla with two-thirds of the cheese and the reserved veggie mix. Crack the eggs over the top and cover with the remaining cheese. Sprinkle the yolks with salt and pepper.
- Bake until the cheese has melted and the whites of the eggs have set, 15 to 17 minutes for a runny yolk, 20 to 22 minutes for a firmer yolk.
- Transfer the tortilla to a cutting board or platter. Top with the green onions and hot sauce. Slice into wedges and serve.

- 1. Prepare a 9" X 13" or 8" X 12" glass baking dish with cooking spray. Preheat oven to 350 degrees.
- 2. Begin strata by tearing the 8 torillas into 1 to 2-inch pieces and setting on separate plate. Line the bottom of the dish with 1/3 of the mixed torn tortillas, overlapping only slightly. Spread 1/2 cup of the shredded cheese over top, and then 1/3 of the can of chiles.
- 3. In medium-sized bowl, whisk eggs well and then add in the milk, pepper, and dash of salt. Mix well.
- 4. Pour 1/2 of the egg-milk mixture over the tortilla-cheese-chile base. Reserve other half in bowl.
- 5. Over egg-milk mixture, add next layer of 1/3 torn tortillas, 1/2 cup of cheese, and 1/3 can of chiles.
- 6. Pour remaining half of egg-milk mixture over second tortilla-cheese-chile layer.
- 7. Finish strata by layering remaining 1/3 of torn tortillas, 1/2 cup cheese, and 1/3 can chiles over top. (Arrange tortillas so they attractively cover entire top of dish.)
- 8. Bake at 350 degrees for 35 minutes. OR--Prepare the night before and refrigerate overnight; microwave on high for 5 minutes (or until dish is completely warm to touch, as microwaves vary). Then, bake for 20-25 minutes until firm in center, puffed and lightly browned. Serve warm with your choice of salsa.
GREEN CHILI BREAKFAST TORTILLA CUPS
Yum! This recipe is perfect if you're hosting a buffet breakfast or brunch. It's a healthier breakfast option. You can bake a bunch of these and people can grab their individual serving. We did add bacon when testing and loved the smoky flavor. We loved the mix of cilantro, with green chilis and cheese. Cumin flavor stands out too. One of these is very filling.

- Preheat oven to 400 degrees. Spray a non-stick muffin pan with cooking spray.
- Heat tortillas in microwave for 45 seconds.
- Mix together eggs, cilantro, cumin, and lemon or lime pepper seasoning salt.
- Place one tortilla in each muffin cup, folding in to fit.
- Place about 1/2 ounce of cheese in the bottom.
- If using meat, sprinkle a small amount into the tortillas.

- 1. Preheat oven to 375 degree F. Loosely secure tortillas in foil and bake for 10 - 15 minutes, to soften and make easier to work with. In a medium skillet, brown onions in butter until soft. Add the green chiles, eggs, salt and pepper.Cook over low scrambling eggs until just soft but not completely set.
- 2. Stir in 3/4 cup cheese.
- 3. Spread an equal amount of egg mixture down the center of each tortilla.
- 4. Fold in each side and secure with a toothpick.
- 5. Place into a greased 9 x 13 baking dish.
- 6. Top with remaining cheese and bake for 15 - 20 minutes or until cheese is melted and golden.
- 7. Remove form oven and serve with your favorite condiments. I used tomato, green onion, sour cream and salsa.. My son ate 3...I think he liked them...will heat the other 2 for breakfast...Enjoy!

THE ENGLISH BREAKFAST TORTILLA

- Wash and boil the sliced potatoes in salted water for about four minutes until they are slightly softened but still firm. Drain them and set aside.
- In a medium-sized, non-stick, ovenproof frying pan (no plastic handle!) heat a little oil, and fry the bacon and sausages over medium-high heat for about six or seven minutes, stirring occasionally, until the ingredients begin to turn crispy and take on a golden brown color.
- Add the mushrooms, along with the potatoes, stirring them in carefully so that the potatoes don't break up. Fry for another four minutes or so, until the potatoes start to golden.
- Add the onion, fry for a couple more minutes and then add the sweet pepper, sweet paprika and thyme leaves. Season to taste with salt and pepper. Let everything cook for another two minutes, stirring to prevent burning.
- Make sure the ingredients are evenly distributed, then reduce the heat to low-medium and pour in the eggs, tilting the pan and moving the ingredients around gently with a wooden spoon so the egg mixture reaches all corners of the pan. Leave it to cook gently for about six minutes or until the egg in contact with the base of the pan has set (you should then be able lift the tortilla away from the sides of the pan and slide it around).
- Put the pan in a pre-heated broiler for five minutes until the egg on top has set.
- Cut in half and serve with buttered toast and condiments of your choice; I like to have a couple of pickled chilis with this.
