Ready, Set, Cook! Special edition contest entry. You may have heard of shrimp and grits. Well how about a delicious shrimp creole sauce spooned over nice crispy hash browns. A wonderful breakfast or anytime meal.

3 tablespoons olive oil, divided
1/2 medium yellow onion, chopped
1/4 cup celery, diced
1 small red bell pepper, chopped
2 large garlic cloves, minced
2 plum tomatoes, seeded, diced
1 cup chicken broth
2 bay leaves
1 1/2 teaspoons cajun seasoning
2 teaspoons Worcestershire sauce
hot sauce, to taste
3 green onions, thinly sliced
salt, to taste
black pepper, to taste
12 medium shrimp, deveined
2 cups Simply Potatoes® Shredded Hash Browns
4 eggs

Steps:

  • In a medium size saucepan, over medium heat, heat 2 teaspoons oil. Add the chopped onion, celery, bell pepper and garlic and cook until onion begins to brown. Add the chopped tomato and cook for an additional 1 to 2 minutes.
  • Add chicken broth, the seasonings, bay leaves, hot sauce and Worcestershire sauce; stir and reduce heat to simmer. Simmer uncovered for 15 to 20 minutes or until most of liquid is absorbed.
  • While the sauce simmers, add a small amount of olive oil to heavy cast iron skillet. Warm over medium heat. When the oil is hot measure the hash browns using a 1/2 cup measure. Place on hot skillet and form into patties flattening slightly with spatula. Season with salt and pepper to taste. Allow to cook until a nice crust develops on the underside, drizzle lightly with additional olive oil and flip and cook on the other side until crusty.
  • Peel the shrimp and cut in half lengthwise. Add shrimp to sauce and cook until shrimp is no longer pink and cooked through. Stir in the green onions reserving a portion of the green part for garnish. Remove bay leaves, taste and adjust seasonings as needed.
  • Divide the hash browns among warmed plates. In the skillet that the potatoes were cooked in cook the eggs done to your liking. We like ours over medium. Spoon sauce over plated potatoes top each with sauce and a cooked egg . Enjoy!

CANADIAN BACON BREAKFAST STACK

This is a lightened version of one my favorite breakfasts. Hot pepper sauce is necessity! Sprinkle it over the top before you dig in! Canadian bacon comes from the loin area of the hog so it is very lean and quite tender.

1 pound collard greens, rinsed and trimmed
1 onion, chopped
¼ pound salt pork
6 egg whites
salt and pepper to taste
4 thick slices Canadian-style bacon
4 thick slices whole-grain bread, toasted
1 cup shredded Cheddar cheese
2 tablespoons chopped fresh chives

Steps:

  • Place collards, onion and salt pork in a large saucepan. Cover with water and cook over medium heat, until greens are tender (about 15 to 20 minutes). Drain, discard pork, reserve the greens and onions and set aside.
  • Spray a nonstick skillet with cooking spray. Heat skillet over medium high heat and add egg whites. Season with salt and pepper to taste and saute all together, stirring constantly until done to taste.
  • Meanwhile, spray another nonstick skillet with cooking spray and heat over medium high heat. Saute Canadian bacon on both sides until lightly browned. Remove from skillet and drain on paper towels.
  • To Assemble Stacks: Place bread slices on a broiler pan. Top each with 1 slice Canadian bacon and equal portions greens, egg whites and cheese. Broil until cheese bubbles and melts. Sprinkle chives on top and serve.

Pearl-like sushi rice cooks up slightly moist and sticky, so it forms a cake easily. Chilling the cakes before browning helps them hold their shape.

1 cup sushi rice
1 scallion
3 tablespoons unsalted butter
8 slices Canadian bacon (6 to 8 oz total)
4 large eggs

Steps:

  • Rinse rice in a large fine-mesh sieve under cold running water, then drain well, tapping sieve. Combine rice, 1 1/4 cups water, and 1/4 teaspoon salt in a 2-quart heavy saucepan and bring to a boil. Reduce heat to low and cook, covered, 15 minutes. Remove from heat and let stand, covered, 10 minutes.
  • While rice is standing, trim scallion and cut diagonally into very thin slices.
  • Stir rice from bottom to top. Lightly butter a metal 1-cup measure. Firmly pack enough rice in measure with a rubber spatula to fill measure halfway. (If spatula becomes sticky, dip in water.) Invert measure onto a buttered plate, then tap measure to unmold rice. Repeat with remaining rice, rebuttering measure each time, to make 4 disks total. Chill disks, uncovered, at least 15 minutes.
  • Heat 1 tablespoon butter in a 12-inch nonstick skillet over moderately low heat until foam subsides. Add rice disks and cook, rotating each once for even browning, until undersides are pale golden, about 8 to 10 minutes, then turn cakes over and add 1/2 tablespoon butter to skillet, swirling to melt butter. Cook, rotating each cake once, until golden, about 5 minutes more, and transfer to plates.
  • Increase heat to high and add 1/2 tablespoon butter to skillet, then brown bacon, turning over once, about 2 minutes total. Place 2 slices bacon on each rice cake.
  • Wipe out skillet with a paper towel and heat remaining tablespoon butter over moderately high heat until foam subsides. Crack eggs one by one into skillet. Sprinkle with 1/8 teaspoon salt and 1/8 teaspoon pepper total and fry until whites are cooked and yolks begin to set, 2 to 4 minutes.
  • Place 1 egg on each rice cake stack and sprinkle with scallion.

You probably shouldn't eat this every day of the week, but it's so delicious, you just may wish you could! The tomato slices are optional, but if you have access to fresh homegrown tomatoes, they will put it over the top!

2 - frozen hash brown potato patties
1/2 tablespoon(s) butter
1 slice(s) american cheese
2 tablespoon(s) shredded extra-sharp cheddar cheese
2 large eggs
1 large breakfast sausage patty, cooked and warm
1-2 slice(s) fresh tomato (optional, but recommended)
- salt & pepper to taste
1 teaspoon(s) chopped fresh chives
1-2 teaspoon(s) real hickory smoked bacon bits

Steps:

  • Gather and prep ingredients; preheat toaster oven.
  • Bake hash brown patties according to package instructions for toaster oven.
  • In the last couple of minutes before hash brown patty is finished baking, melt butter or grease in a small nonstick skillet over medium heat.
  • When hash browns are finished baking, move them together so that they are touching.
  • Place American cheese slice on top; sprinkle with 1/2 of the cheddar cheese; set toaster oven to warm; return patty to oven.
  • Break each egg into prepared skillet; cook over medium/medium-high heat for 1 1/2 minutes; using egg turner, flip eggs over, cook for 30 seconds; remove from heat.
  • Immediately remove hash brown patties from oven and place on serving plate.
  • Place sausage patty on top of the hash browns and cheese; place tomato slices on top of sausage, if using.
  • Slide fried eggs onto patty; sprinkle with salt and/or pepper to taste.
  • Scatter remaining 1 tablespoon cheese over eggs; sprinkle with bacon bits and chives.
  • Garnish as desired; serve immediately.

Bacon, egg, cheese and hash browns. Yep, that's my idea of a good breakfast! A hash brown potato patty, crispy on the outside, soft on the inside, topped with melted cheddar, an "over easy" fried egg, more cheese, bacon and chives. Oh, man, this is so good! I wrote the recipe for one serving, but I have to admit that I had two this morning. It is THAT GOOD!

Sometimes I get bored with breakfast, so this is one of my "get out of the rut" recipes. It's a breakfast stack made with a hot, and crispy, hash brown potato patty, topped with warm, thin slices of peppery pastrami, melty cheddar and Italian cheese, an "over easy" fried egg, more cheese, bacon and chives. It's delightfully different and delicious, and it would be a great breakfast-in-bed for your Valentine!

1 - frozen hash brown potato patty
1/2 tablespoon(s) sharp cheddar cheese, divided
1 teaspoon(s) butter
1 large egg
1 heaping teaspoon(s) real bacon bits
2 thin slice(s) pastrami lunch meat
1/2 tablespoon(s) shredded italian cheese blend
1 teaspoon(s) chives
pinch(es) black truffle salt (optional, but highly recommended)

Steps:

  • Gather and prep ingredients; preheat toaster oven.
  • Bake hash brown patty according to package instructions for toaster oven (mine says 400 degrees F for 22 minutes.)
  • In the last couple of minutes before hash brown patty is finished baking, melt butter in a medium nonstick skillet over medium-low heat. Individually fold pastrami slices in half and place in skillet to warm.
  • When hash brown patty is finished baking, place warmed pastrami on top, sprinkle with 1/2 of the cheeses and 1/2 of the bacon bits; return patty to oven.
  • Crack egg, pour into prepared skillet; cook over medium/medium-high heat for 1 1/2 minutes; using egg turner, flip egg over, cook for 30 seconds; remove from heat.
  • Immediately remove hash brown patty from oven and place on serving plate.
  • Slide fried egg onto patty; sprinkle with salt and/or pepper to taste.
  • Sprinkle with remaining cheese, bacon bits and chives. Garnish as desired; serve immediately.
