This was my Aunts recipe which I love and make quite often. Depending on how moist you like your stuffing, a little milk or egg may be added.

1 cup breadcrumbs
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons dried onion flakes
1 tablespoon chopped parsley
2 tablespoons melted butter

Steps:

  • Mix the seasonings with the bread crumbs.
  • Add the melted butter and toss lightly.

2 tablespoons butter, melted
1/3 cup chicken broth
1/2 cup finely chopped onion
1/2 cup finely grated carrots
1/2 cup chopped fresh mushrooms
1/4 cup minced fresh parsley
1/2 cup dry bread crumbs
1 egg, beaten
1 tablespoon lemon juice
1 teaspoon salt
1/8 teaspoon pepper
2-1/2 to 3 pounds fish fillets (cod, whitefish, haddock, etc.)
Paprika

Steps:

  • In a large bowl, combine the first 11 ingredients and mix well. In a greased 13-in. x 9-in. microwave-safe dish, arrange the fillets with stuffing between them. Moisten paper towels with water; place over fish. Cook 9-11 minutes or until fish flakes easily with a fork, rotating dish occasionally. Sprinkle with paprika.

1/2 cup chopped celery
1/4 cup chopped onion
1/4 cup melted margarine
3 cups dry bread cubes
1 egg, beaten
1/2 tsp sage
1/2 tsp salt
1/4 tsp thyme
1/4 tsp black pepper

Steps:

  • Saute celery and onion in margarine until tender. In large bowl, combine all the remaining ingredients and mix well. Oysters may be added if desired. Stuff fish and bake at 350 F until flaky.

1 cup soft bread crumbs
½ sweet onion, minced
2 tablespoons chopped fresh dill
2 teaspoons grated lemon zest
1 clove garlic, minced
¼ cup olive oil, divided
salt and pepper to taste
4 trout, cleaned and head removed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Toss bread crumbs with onion, dill, lemon zest, garlic, and half of the olive oil. Season with salt and pepper to taste. Press stuffing into the trout, then brush the trout with the remaining olive oil, and season with salt and pepper. Place trout onto prepared baking sheet.
  • Roast in the preheated oven until the skin of the fish begins to brown, and the flesh flakes easily with a fork, about 20 minutes.

MAINE SEAFOOD STUFFING

Emeril did some Thanksgiving stuffing recipes on Good Morning America, and this was one of the Top 5, that was submitted by Linda Hoglund from Franklin, ME. Linda says "It's a Maine seafood stuffing -- the best you've ever had! I grew up on the coast of Maine where seafood is plentiful. My husband, a lobster fisherman and scallop diver, came up with this some years ago. It's now a big favorite of ours, and we're glad to share with you. This stuffing can also be used to stuff clams, on top of crab cakes or on a pork chop -- it's all wicked good! We serve ours with a White Cream Sauce on top of the stuffing." This would be great to put over fish and baked too! I'm thinking flounder, filet of sole, and any other white fish. Times are only approximate. You can also substitute with lobster. You can make this in a 9x9" baking dish as well, and serve it with the White Cream Sauce on top. Cooking time does not include time cooked inside the bird.

1 cup Ritz cracker, ground up
1 cup breadcrumbs
1/2 cup onion
1 lb fresh maine scallops
1 cup fresh maine shrimp
1 cup fresh maine crab legs
1/2 cup celery, sliced
1/2 cup bell pepper, orange and yellow, chopped
2 eggs
3/4 cup butter, melted
1/4 cup cooking sherry or 1/4 cup white wine
1 fresh garlic clove, chopped
salt and pepper, to taste

Steps:

  • Cook seafood in 1 cup boiling salted water. Cook until 3/4 done. Strain seafood out of water.
  • Add bread crumbs and Ritz crackers, and cover until liquid is absorbed.
  • In another skillet, caramelize peppers, celery and onion, then add to bread-Ritz mixture.
  • Add the eggs and melted butter.
  • Stir in seafood and 1/4 cup sherry or white wine. Cover, and let stand 15 minutes.
  • Now you're ready to stuff your turkey the Down East way.

2 small carrots, shredded
1 small onion, minced
5 tablespoons butter, divided
4 slices bread, cubed
3/4 cup canned diced tomatoes, drained
1 jar (4-1/2 ounces) sliced mushrooms, drained
1/2 small cucumber, chopped
1-1/4 teaspoons salt, divided
1/4 teaspoon dill weed
1/8 teaspoon pepper
8 sole or orange roughy fillets (4 ounces)
1/8 teaspoon paprika
8 lemon wedges

Steps:

  • In a large nonstick skillet, saute carrots and onion in 3 tablespoons of butter until tender. Remove from the heat. Stir in bread cubes, tomatoes, mushrooms, cucumber, 1 teaspoon salt, dill and pepper., Place four fillets in a 13-in. x 9-in. baking dish coated with cooking spray. Top each with 1 cup stuffing and another fillet. Sprinkle with paprika and remaining salt. Dot with remaining butter. Bake, uncovered, at 350° for 25-30 minutes or until fish flakes easily with a fork. Cut in half; serve with lemon.
