THE BEST BREAD MACHINE CHALLAH

The Best Bread Machine Challah image

This recipe originally comes from Kosher by Design by Susie Fishbein. I've been making this challah every week for the last two months, and it makes a delicious, rich challah. I don't use the bread machine method, making the dough in my Kenwood mixer and giving the final knead by hand, then braiding the challah and baking it in the oven. I'm posting this as a bread machine recipe at the request of Miraklegirl. BTW, I don't use all the water called for in the recipe, I usually add a bit at a time until I'm happy with the consistency of the dough.

BREAD MACHINE HONEY WHOLE WHEAT CHALLAH

Bread Machine Honey Whole Wheat Challah image

We make this every week in our house. People keep asking for the recipe -- we think they're impressed to find a healthy challah that also tastes great! It resembles actual bread more than cake. Just throw the ingredients into a bread machine with a "dough" cycle, braid, & bake!

Provided by Rachel Leah D

Categories     Yeast Breads

Time 45m

Yield 3 medium-sized challah loaves, 15 serving(s)

Number Of Ingredients 11

1 1/2 cups water
1 egg
1 egg white
2 tablespoons olive oil (this is equivalent to 1/6 cup)
3 tablespoons honey (measure using the same spoon as the olive oil so it doesn't stick!)
1 tablespoon sugar
4 3/4 cups whole wheat flour
2 teaspoons active dry yeast (or one 1/4 oz. packet)
1/8 teaspoon salt
1 additional egg (optional)
sesame seeds (optional)

Steps:

  • Add water, eggs, olive oil, honey, sugar, and flour to the bread machine bowl in that order.
  • Make a well on top of the flour mound and add the yeast.
  • Add salt along the side of the flour mound.
  • Set your bread maker to run a "dough" cycle.
  • Remove dough and braid challah (this is the fun part! See http://www.youtube.com/watch?v=q0kf0MFRpXg for instructions.).
  • (Optional) For a professional look, coat the braided challah with egg using a basting brush, and sprinkle sesame seeds on top.
  • Bake at 325 F for 30-40 minutes.

THE BEST BREAD MACHINE CHALLAH

The Best Bread Machine Challah image

After trying out several different bread machine challah recipes, I have come to find the best one. The challah it produces is so light and the perfect combination of sweet and salty. The bread machine I own is an Oster, nothing fancy. As with all bread machine recipes, I will say every once in a while I will have a flop, no idea why this happens sometimes. This recipe calls for 3 yolks, so I will post a link for something easy to do with the whites: Ultra Moist Easy Chocolate Bundt Cake. Everytime I make challah, I also make this cake.

Categories     Yeast Breads

Time 40m

Yield 2 challahs, 8 serving(s)

Number Of Ingredients 8

3 egg yolks
1 cup water
3 1/2 tablespoons vegetable oil
3/4 teaspoon salt
1/4 cup plus 2 tablespoons sugar, heap the tablespoons
2 3/4 cups and 1 tablespoon bread flour, heap the tablespoon
1 (1/4 ounce) packet active dry yeast
1 egg, beaten for glazing

Steps:

  • Place the ingredients into the bread machine in the above listed order. Make a small well in the flour for the yeast. Put bread machine on dough cycle.
  • Preheat oven to 350 degrees F.
  • Remove dough from the machine onto a lightly floured surface. Divide dough into two equal halves. Divide each halve into three pieces, and braid. Place braid onto a cookie sheet covered with a piece of parchment paper. Cover the two braid with a dish towel. Let stand until double in size, about 30 minutes to an hour. Remove dish towel. Use a pastry brush and paint the challahs with beaten egg covering the entire loaf.
  • Bake at 350 for 25 minutes. Until the bottom sounds hollow when tapped on.
  • Remove from cookie sheet and let cool on baking rack.

SWEET BREAD MACHINE SPELT CHALLAH

Sweet Bread Machine Spelt Challah image

Spelt is a wonderful alternative to wheat, particularly for those who are wheat intollerant. I developed this recipe awhile back, adapting it until I was satisfied with the end result. It's a sweet, chewy bread that is delicious straight out of the oven, but still good the next day. It isn't as light or as fluffy as wheat, but it has a great taste that I think you will enjoy. If you find that there is too much sugar in this recipe, feel free to decrease the amount you use or substitute it with honey, brown sugar, agave nectar - or whatever agrees with your taste buds and dietary restrictions.

BREAD MACHINE CHALLAH BREAD

BREAD MACHINE CHALLAH BREAD image

Categories     Bread     Egg     Bake     Rosh Hashanah/Yom Kippur

Yield 1 loaf

Number Of Ingredients 13

3/4 cup warm water (110 degrees F/43 degrees C)
2 large egg
2 tablespoons vegetable oil
1 1/4 teaspoons salt
3 cups bread flour (unbleached all-purpose flour may be substituted for the bread flour, if needed)
1 tablespoon granulated sugar
2 tablespoons honey
2 teaspoons bread machine yeast or instant yeast
Egg Wash:
2-3 large egg yolks
2 tablespoons water
Topping: (optional)
Sesame or poppy seeds

Steps:

  • Lightly grease or line with parchment paper one or two baking sheets. Add warm water, egg, vegetable oil, salt, flour, sugar, honey and yeast to bread machine pan in the order recommended by manufacturer. Select the Dough Cycle of your machine. Start the cycle. When dough cycle is complete, remove dough from machine to a lightly floured work surface. Punch dough down and let rest for 5 minutes. If necessary, knead in enough flour to make dough easy to handle. Making 1 loaf: If making one 1 1/2-pound loaf, divide dough into 3 equal size pieces and roll each piece into 20-inch long rope. Place ropes on prepared baking sheet. Braid by bringing left rope under center rope; lay it down. Bring right rope under new center rope; lay it down. Repeat braiding to the end of loaf. Pinch ends to seal and tuck under dough. Cover with plastic wrap and place a smooth cotton kitchen towel over plastic wrap and let loaf (s) rise in a warm, draft-free place until almost doubled in size, 45 to 50 minutes. Baking: Brush loaf (s) with the remaining egg wash. If desired, sprinkle loaf (s) with sesame or poppy seeds and bake at 375 degrees F/190 degrees C for 25 to 30 minutes or until done (bread is done if it registers 190 degrees F/87 degrees C with instant-read thermometer). Tip: Cover bread with aluminum foil after 10 to 15 minutes of baking to prevent excess browning (for even browning when baking two loaves, switch positions of sheets halfway through baking). Remove bread from baking sheet and cool completely on wire rack. Storage: Bread may be frozen once cooled completely (2 hours). Wrap in aluminum foil, then place bread in a ziploc bag. Label and date. Bread can be frozen for up to 3 months. Thaw for 1 hour at room temperature before serving.

CHALLAH BREAD (BREAD MACHINE)

Challah Bread (Bread Machine) image

From 100 Bread Machine Recipes by Vicki Smallwood. The saffron is what gives this its unique golden yellow color. This doesn't last long whenever I make this. Cooking time does NOT include dough cycle time.

Provided by CulinaryQueen

Categories     Yeast Breads

Time 35m

Yield 1 Loaf

Number Of Ingredients 10

1 pinch saffron thread
1 tablespoon water, boiling
2 eggs, beaten
3 tablespoons honey
2/3 cup hot water (100F-105F)
5 tablespoons butter, melted
1 teaspoon salt

  • Mix the salt into the flour and add to the baking pan and spoon the yeast on top.
  • Set the program to 'DOUGH.'.
  • When the dough is ready (mine takes 90 minutes), transfer it to a lightly floured surface and knead it for 2-3 minutes. (The dough will feel quite soft and silky.).
  • Shape the dough into 3 equal-sized pieces, then roll each piece into a sausage shape measuring approximately 12 inches in length.
  • Pinch the top end of each length of dough together, then weave the pieces into a braid/plait.
  • Pinch the bottom ends together, then tuck both ends under the dough to form a neatly braided loaf.
  • Place the dough on a greased baking sheet, brush with oil, cover with plastic wrap/cling film and leave it to rise/prove in a warm place.
  • Preheat the oven 220C/425°F.
  • When the dough has nearly doubled in size, remove the plastic wrap and lightly brush the top of the loaf with the beaten egg.
  • Bake for 20-25 minutes, or until golden brown.
  • Transfer the loaf to a wire rack and leave it to cool before serving.

CHALLAH BREAD IN BREAD MACHINE (SALLYE)

CHALLAH BREAD IN BREAD MACHINE (SALLYE) image

Okay, I think I've got my challah bread recipe adapted for the bread machine. Here goes.

Provided by sallye bates

Categories     Other Breads

Time 3h45m

Number Of Ingredients 12

BREAD DOUGH
1 c lukewarm milk
4 Tbsp softened butter (1/2 stick)
3 Tbsp granulated sugar
2 large eggs
1 tsp salt
3 c all purpose flour
2 tsp dry rapid rise yeast (1 pkg)
EGG WASH INGREDIENTS
1 large egg
1 Tbsp cold water
poppy seeds (optional)

Steps:

  • 1. Cut butter into small pieces, and place in saucepan with milk and sugar. Over medium heat bring to a boil. Remove from heat and set aside to cool to 110º-115º. NOTE: If milk is too hot, it will kill lthe yeast action. If you don't have a thermometer, test the milk on the inside of your wrist. It should be just barely lukearm. Sift flour and set aside.
  • 2. Whisk 2 eggs until light and frothy When milk is at proper temperature, add the eggs and salt to the milk and pour into bread machine pan.
  • 3. Carefullly pour flour into pan, making sure that all liquid is completely covered by flour. Make small indentation in center of flour and pour yeast there.
  • 4. OPTION ONE: Turn bread machine on to Dough cyclo. Machine will ding when dough cycle is complete. Remove dough from bread machine pan and place on floured work surface (waxed paper or cutting board). Cut dough into three equal pieces. Roll three pieces into long snakes about 18" long. Braid the snakes together into a loaf and tuck the ends under. Cover a large baking sheet with parchment paper and sprinkle with cornmeal. Transfer the braided loaf to the baking sheet. Cover loaf with a clean towel or cheesecloth and let rise until nearly doubled in size (about 1 hour).
  • 5. Preheat oven to 350º Whisk the remaining egg and 1 tablespoon cold water together until light and frothy. With basting brush, lightly baste loaf evenly with egg wash. Sprinkle immediately with poppy seeds to taste.
  • 6. Cook in middle rack of oven for 50-55 minutes until loaves are golden brown and sound hollow when bottoms are thumped. Cool completely on racks before wrapping. Be sure and sneak a piece with honeyed butter while it's still hot (for quality control purposes of course).
  • 7. OPTION TWO: ALTERNATE METHOD FOR BAKING BREAD COMPLETELY IN BREAD MACHINE: If you don't want to braid the dough, use this method. Follow instructions steps 1 and 2 above. Skip instructions steps 3 through 6 above Turn bread machine to basic cycle, crust to medium. When cycle is complete, remove from bread machine and brush the bread with egg wash (1 egg & 1 tablespoon of water whisked briskly). Place in 350º oven for 5 minutes to "seal" the egg wash. Or, you can skip the egg wash and just brush with melted butter (Either way is fine).

Number Of Ingredients 10

3/4 cup plus 1 tablespoon water
1 egg
2 tablespoons butter or margarine, softened
3 1/4 cups Gold Medal™ Better for Bread™ flour
2 tablespoons sugar
1 1/2 teaspoons salt
1 1/2 teaspoons bread machine yeast
1 egg yolk
2 tablespoons cold water
1 tablespoon poppy seed

Steps:

  • Measure carefully, placing all ingredients except egg yolk, cold water and poppy seed in bread machine pan in the order recommended by the manufacturer.
  • Select Dough/Manual cycle. Do not use Delay cycle.
  • Remove dough from pan, using lightly floured hands. Cover and let rest 10 minutes on lightly floured surface.
  • Grease large cookie sheet. Divide dough into thirds. Roll each third into 13-inch rope. Place ropes side by side; braid ropes gently and loosely, starting at the middle. Pinch ends to seal; tuck ends under braid. Place on cookie sheet. Cover and let rise in warm place about 45 minutes or until double. (Dough is ready if indentation remains when touched.)
  • Heat oven to 375°F. Mix egg yolk and cold water; brush over loaf. Sprinkle with poppy seed. Bake about 25 minutes or until golden brown.

BREAD MACHINE CHALLAH FOR SHABBAT AND FESTIVALS

Bread Machine Challah for Shabbat and Festivals image

A perfect recipe for arthritic hands that can't knead dough easily anymore! Recipe is written for a bread machine that makes 1.5 pound (700 gram) loaves. NOTE: Do NOT bake this dough in the machine. Use only the dough/pasta setting. There is too much fully-risen dough for the machine to accommodate.

Time 3h50m

Yield 10

Number Of Ingredients 10

1 cup warm water (110 degrees F/45 degrees C)
1 ½ teaspoons salt
2 tablespoons white sugar
¼ cup pareve margarine
1 egg
3 cups bread flour
2 ¼ teaspoons bread machine yeast
1 egg
1 tablespoon water
⅛ teaspoon vanilla extract

Steps:

  • Place the warm water, salt, sugar, margarine, egg, bread flour, and yeast in the pan of a bread machine in that order, set the machine to the dough setting, and start the machine.
  • When the dough cycle of the machine is finished, place the dough on a floured surface. Divide the dough into 3 pieces, and roll them into ropes about the thickness of your thumb and about 12 inches long. Ropes should be fatter in the middle and thinner at the ends. Pinch 3 ropes together at the top and braid them. Starting with the strand to the right, move it to the left over the middle strand (that strand becomes the new middle strand.) Take the strand farthest to the left, and move it over the new middle strand. Continue braiding, alternating sides each time, until the loaf is braided, and pinch the ends together and fold them underneath for a neat look.
  • Grease a baking sheet, or line with parchment paper, and place the braided challah on the prepared sheet. Cover the loaf with a plastic bag to prevent drying out, and let rise in a warm place until doubled in bulk, about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C). Whisk together 1 egg, 1 tablespoon of water, and vanilla in a small bowl, and brush the glaze on the challah. Sprinkle with optional toppings (see footnote).
  • Bake in the preheated oven until golden brown and the loaf sounds hollow when tapped, 35 to 40 minutes.
