EGG NOODLES WITH CRISPY CROUTONS
This is the way my family likes noodles served. It is easy and quick. Start the croutons when you put the water on to boil and they should be ready when the noodles are done. Of course, you can use extra butter but I try to restrain myself. Once the croutons are mixed in with the noodles everything does become buttery.

Steps:
- Cook noodles according to package directions.
- When you put the water on to boil, place the butter in a small frying pan over medium heat.
- Tear the bread into small pieces for the croutons.
- When the butter is melted and sizzling (don't let it brown) add the pieces of bread.
- Watch the bread carefully and stir frequently so that it doesn't burn but will get crispy.
- Add the salt and pepper to the croutons.
- When the noodles are cooked, drain and place in your serving bowl.
- Add the croutons; stir to distribute well.
- Serve and enjoy!

- Bring a large pot of lightly salted water to a boil. Cook egg noodles at a boil until tender yet firm to the bite, about 8 minutes; drain.
- Melt butter in a skillet or large pot over low heat. Add bread crumbs and stir until coated in butter. Mix noodles into bread crumbs mixture. Cook, stirring occasionally, until a crust forms on the bottom, about 30 minutes; season with salt.

BUTTER BALLS FOR CHICKEN BROTH OR NOODLE SOUP
Because food prices are going through the roof I decided to post. Use day old or older bread. Use the crusts also. This is a German recipe from my relatives.You don't have to use cream, evaporated milk, half and half will do. I use "I Can't Believe it is Butter" spread instead of butter or margarine. It is my posted recipe and it works well. The idea is taste, not cost. Cook the last five minutes in chicken noodle soup or vegetable soup. Note: You can use Egg Beaters instead of the eggs. Add a dash of cornstarch to the Eggbeaters.

Steps:
- Toast the bread slices in a 400°F oven until brown on one side.
- Flip over and toast on the other side. Cool.
- Take very dry bread slices and pulse in a blender or food processor until very fine crumbs.
- Place in a large bowl and mix margarine. and cream and eggs, salt and allspice all at once. Mix well. Shape in 1 inch balls.
- Take a large slotted spoon and lower 3 or 4 balls into the boiling or simmering liquid at a time. Cook 5 to 7 minutes. Serve immediately.
- Note: If you have extra large loafs of bread ie. sandwich slices loafs of bread you my have to add some warm milk to form the balls.
- Do not be shy in squeezing to form the balls.
- Extras to add if desired: A little dried parsley flakes, a very small square of cheese in the center.
- Note: You can prepare ahead and freeze for use later. Do not keep over a month.

GARLIC BUTTER EGG NOODLES WITH ITALIAN STYLE BREAD CRUMBS
I just made this recipe up years ago. The bread crumbs and garlic powder bring alot of flavor to the egg noodles. It is one of my sons favorites.

Steps:
- Make the Egg Noodles and drain. Put them back in the pot and add the stick of butter and stir to melt.
- Add the garlic powder and salt and pepper.
- You can stop right there and have garlic buttered noodles -- but you can kick up the flavor like I do and add the Italian Style bread crumbs. Don't add to much or it can get dry because the bread crumbs soak up the butter.

PASSATELLI DEI NONNI (BREAD AND PARMESAN CHEESE SOUP)
Try this soup! Passatelli are a classic specialty from Emila-Romagna (Italy) the region where my father comes from. My children love this soup!

Steps:
- Place the bread crumbs, Parmesan, nutmeg and the lemon zest in a large mixing bowl. Add the eggs and carefully mix together with your hands until it forms a soft dough-like consistency.
- The mixture should be like a wet dough, barely holding together.
- If it seems too stiff, add 1 tablespoon water or stock. If it's too soft, add more breadcrumbs and Parmesan.
- Allow the dough to rest for approximately 20 minutes in a cool place.
- Once ready, put the dough in a food mill or ricer. Press to create short noodles (like little worms).
- Bring the meat stock to a boil and add the pasta. Once the passatelli have risen to the surface, they are ready to eat.
- Serve immediately.
BRIDLED NOODLES ( PENNSYLVANIA DUTCH )
This was a recipe my Gram would make for thanksgiving. Served it with or without gravy. My kids just love it...can't get any simpler than this!... Enjoy! My photos

Steps:
- 1. Boil your noodles as directed on package. Drain do not rinse.
- 2. While hot add 3/4 stick butter. Carefully stirring butter in until melted. ( trying not to break up noodles )
- 3. Melt the stick of butter, add this to the garlic powder and bread crumbs. Blend till crumbs are coated.
- 4. Preheat oven to 350 degree F. Spray a 3 quart casserole dish with non stick cooking spray.
- 5. Place 1/3 of the noodles in the casserole dish. Now sprinkle 1/3 of the bread crumbs.
- 6. Continue layering until you have 3 layers, ending with crumbs.
- 7. Bake covered, for about 35-45 minutes or until heated through. The last 3 - 4 minutes I stick them under the broiler.
- 8. Serve with a ladle of gravy or two. I usually ladle the gravy over all before serving. You can do it individually if prefer, as some may not like gravy. Savory and delicious!!! Enjoy!
