APPLE-CHERRY-WHITE CHOCOLATE FRANGIPANE TART WITH GREEN APPLE SORBET AND CHERRY-APPLE BRANDY COMPOTE
Steps:
- For the pate brisee: In a food processor, blend the flour, sugar and salt with the butter until a coarse meal forms. Add the water and mix until a dough forms.
- Form the dough into a disc, sandwich it between two sheets of parchment paper, and roll into a 1/4-inch-thick slab. Chill for 30 minutes.
- Cut out circles of dough to fit six 4-inch tart pans; line the tart pans with the dough. Refrigerate until ready to use.
- For the frangipane filling: Combine the butter, cornstarch, almond paste, powdered sugar, dried cherries, white chocolate and egg in a food processor. Process to form a paste.
- For the tart: Fill the lined tart pans a little over halfway with frangipane filling. Top each with a nice fan of sliced apples.
- Bake in a preheated 375-degree oven for 15 minutes. Lower the heat to 325 degrees and continue baking until golden on the edges and set at the center, another 15 minutes.
- Remove from the oven and allow to cool before service.
- Unmold the tarts and glaze with melted apricot preserves.
- For the cherry-apple brandy compote: Mix the cherries, sugar, brandy and pectin in a saute pan and cook until thickened, about 10 minutes.
- Add a few drops of lemon juice and cook for another minute.
- Allow to cool, then puree and serve.
- For the green apple sorbet: Make a simple syrup by boiling the sugar and water together. Let cool to room temperature, about 1 hour.
- In a blender, puree the apples along with the simple syrup and the lemon juice until smooth; strain if a smoother texture is desired.
- Add the citric acid, and taste ¿ add more citric acid if needed to make sure the flavor is bright.
- Transfer the mixture to an ice-cream machine and spin according to manufacturer's instructions.
- Serve the tarts with compote and sorbet.
CAPE BRANDY TART WITH BRANDY SAUCE

- To make tart:
- 1. Preheat the oven to 350°F.
- 2. Place the dates in a small bowl, pour 1 cup boiling water over them, then add the baking soda. Let dates stand for 10 minutes, or until soft.
- 3. In the bowl of an electric mixer with the beaters attached, combine the butter and sugar, and beat until creamy. Beat in the egg. Sift in the flour, salt, and baking powder. Add the date mixture, including the water, and the pecans. Mix well.
- 4. Line a lightly oiled or buttered 9-inch aluminum pie plate with parchment paper. (Alternatively, use a 9-inch springform pan.) Pour the date and nut mixture into the prepared plate and bake for 45 minutes, or until a toothpick inserted at the center comes out dry. To serve (see Note), remove from the pie plate, discard the parchment paper, allow to cool slightly, cut into wedges, and top with Brandy Sauce and whipped cream.
- To make brandy sauce:
- Combine the sugar with 1/4 cup cold water in a saucepan over medium-high heat. Bring to a boil and continue to boil, stirring frequently, until the sugar is dissolved, about 5 minutes. Remove from the heat and stir in the butter and vanilla, followed by the brandy.
- NOTE To store the tart, if made in advance: First, allow it to cool to room temperature. Then place it in a plastic freezer bag, expel the air, seal the bag, and place it in the freezer for up to one month. To reheat the tart, place it in a 250°F oven until warm, about 45 minutes.
PEAR AND MASCARPONE TART WITH BRANDY CARAMEL SAUCE
Steps:
- 1. Preheat oven to 400 degrees. 2. Lightly brush puff pastry with egg and prick pastry sheet with a fork leaving about 1/2in. unpricked border and bake for 10 min. or until golden brown. Place on a cooling rack when done. 3. Cut the pears in half, scoop out the cores, and cut off any stems or bottoms. 4. Toast the almonds on medium-high heat in a 15" sauce pan, toss around a few times and watch carefully so they do not burn. 5. Remove the almonds and set aside. 6. Add the cream and butter to the pan, melt, and add both sugars, the lemon juice, and the salt. 7. Mix well on medium heat until melted together and add the pear halves cut side down. 8. Cover and simmer on medium/low heat for about 10min. 9. Flip the pears over. 10. Remove the pan from the heat and add the brandy. 11. Turn on high heat, and tilt the pan to flambé. 12. Flambé for about 15sec. and the edges/skins will sizzle. 13. Place the lid back on, turn down to low heat and simmer for another 5min. 14. Check the pears with a knife for doneness. The knife should go in easy, but not too easy. It's nice if the pears still have a little texture. 15. Once done, place the pears on a plate to cool, but the sauce should remain a little warm so as to not solidify. (Reduce the sauce if necessary). 16. The pears can be sliced lengthwise to speed up cooling. (they will be sliced in the end anyway, and they are easiest to cut skins up). 17. Spread the mascarpone on the puff pastry. 18. Once the pears are cooled close to room temperature, place on top of the mascarpone in any arrangement. 19. Sprinkle the toasted almonds on top. 20. Drizzle the honey and some of the brandy sauce, about 1Tbsp, on top. Save any extra to use on ice cream in the future!

BRANDY PLUM TART

- 1. Sift Flour
- 2. Add cubed butter, rubbing until becomes like sand.
- 3. Add the sugar/salt
- 4. Beat two eggs and add them to the flour
- 5. Make a ball, cling paper and in the fridge overnight
- 6. Prepare filling with Plum Jam + Brandy
- 7. Pre-cook dough for 10min at 180C
- 8. Cut Plum nicely and arrange
- 9. Cook for 30min at 170C until golden dough and smooth plum
- 10. Add Lemon & Cinnamon (+ caster sugar to make it crunshy)
TART TATIN WITH BRANDY CREAM

- Preheat the oven to 220C/gas 7/fan 200C. Melt the butter in a 20cm tart tatin tin over a medium heat on top of the hob, then stir in the sugar and heat until starting to caramelise. Stir in the cinnamon. Pile in the apples and cook over a medium heat for about 10 minutes, stirring every now and then to coat them in the caramelised juices - the apple juices will ooze out at first but will soon thicken and make a sauce. Remove from the heat.
- Unroll the pastry and prick it all over with a fork. Quickly lay the pastry over the apples. Trim away any excess with scissors, allowing a rim of about 2cm, then tuck the pastry snugly round the apples down the inside of the tin.
- Bake the tin in the middle of the oven for 20-30 minutes until the pastry is risen, firm and golden. For the brandy cream, mix the crème fraîche with the icing sugar and brandy or calvados.When the tart is cooked, leave it to settle in the tin for 5 minutes or so before running the blade of a knife round the edge to dislodge any pastry that has stuck. Invert a plate over the top and turn out the tart, with any juices left in the tin. Serve with the brandy cream.

- Preheat oven to 375 degrees F.
- Mix the graham cracker crumbs with 2 tbsp sugar and butter in a bowl.
- Press the crumb mixtures evenly into a 9 inch tart pan, covering bottom and sides. Bake 10 minutes. Cool.
- Place the water in the top of a double boiler set over hot water. Sprinkle in gelatin or agar and let stand for 5 minutes to soften. Add half the sugar and egg yolks. Whisk continually over a low heat until the gelatin dissolves and the mixture thickens. Do not boil.
- Remove from the heat and stir in the brandy.
- Set the pan in ice water and stir until it cools and thickens. It should not set completely.
- With an electric mixer, beat the salt and egg whites until they hold stiff peaks. Beat in the remaining sugar. Fold large dollops into the yolk mixture.
- Whip the cream until soft peaks form, then gently fold into the filling. Spoon into the prebaked crust and chill until set, 3-4 hours. Decorate with chocolate curls immediately before serving.

- * To Make Tart:.
- Sprinkle bicarbonate of soda over the dates. Pour the boiling water over the dates. Leave to cool.
- Cream the butter and sugar in a mixing bowl. When the butter mixture is light and creamy, gradually beat in the egg.
- Sift the dry ingredients. Alternately fold the dry ingredients and the date mixture into the creamed mixture, using a metal spoon.
- Pour into a greased 25 cm pie dish or cake tin.
- Bake at 180 C (350 F) for 45 minutes until dark brown and done.
- Prepare the sauce and pour over the hot tart.
- * To Make Sauce:.
- Bring the sugar, water and butter to the boil. Remove from the heat and add the vanilla and brandy. Pour the warm sauce over the hot cake and leave to cool.
- Cut the tart into equal portions.
- Fill a large piping bag with 1 cup whipped fresh cream.
- Pipe a large curl of cream on each serving. Add a sprinkling of chopped pecan nuts.
