SIMPLE BRANDY CREAM
Found this among my recipes torn from newspapers and thought I'd share with those of you (like me) that can't buy brandy flavoured cream all year. I have only seen it in the stores close to Christmas!!

Steps:
- Whip cream & icing sugar together until soft peaks form.
- Then quickly fold in the brandy.
- Serve with dessert of your choice.
BRANDY SIMPLE SYRUP
Simple Syrup is brushed on cakes for added moisture and flavor. This one can be flavored with brandy or rum.

Steps:
- In a saucepan, combine water, sugar and lemon zest. Bring mixture to a boil and continue boiling for 5 minutes. Strain into a sealable container, removing the lemon zest. Allow to cool, then cover and store in refrigerator.
- When ready to use, mix in brandy. Brush onto cake layers before frosting.

Yield 1 large quanity of Brandy Cream Sauce

Steps:
- Separate the eggs.
- Beat the cream until soft peaks form.
- Stir in the brandy (more if desired- according to taste).
- Beat the 2 egg whites until stiff.
- Gradually beat in the caster sugar- a little at a time.
- Continue to beat until all the sugar has dissolved.
- Now, beat in the egg yolks, and lastly fold in the brandy cream!

- In a small saucepan, combine the butter, sugar and corn syrup. Cook and stir over medium heat until butter is melted. Remove from the heat. Stir in the flour, brandy and ginger., Drop by teaspoonfuls, 3 at a time, 3 in. apart onto a parchment-lined baking sheet. Bake at 350° for 7-8 minutes or until golden brown., Cool for 30-45 seconds. Working quickly, loosen each cookie and curl around a thick wooden spoon handle. (If cookies become too cool to shape, return to oven for 1 minute to soften.) Remove to wire rack to cool completely., For filling, in a large bowl, beat cream until it begins to thicken. Add confectioners' sugar and brandy; beat until stiff peaks form. Just before serving, pipe cream mixture into cookies. Sprinkle ends with chocolate if desired.

I got this recipe from my Italian Grampa, who used to make it for me at Christmas time. Perfect for a choco-holic like me. A guaranteed winner! Serve in any glass and garnish with whipped cream and sprinkle on chocolate powder.
