Sweet Potatoes with Brandy and Raisins image

1/2 cup raisins
1/4 cup brandy
4 medium sweet potatoes, boiled until just tender then peeled and sliced into 1/4 inch slices
2/3 cup brown sugar
1/4 teaspoon cinnamon
2 tablespoons water
1/4 cup butter

Steps:

  • Preheat oven to 350 degrees. In a small bowl, let the raisins soak in the brandy for 20 minutes. Grease a shallow baking pan with butter and layer sweet potato slices. In a saucepan, combine brown sugar, cinnamon, water and margarine and bring to a boil. Add the raisins and brandy and pour mixture over sweet potatoes. Bake uncovered for 40 minutes, basting with juices.

¼ cup brandy
½ cup raisins
2 tablespoons softened butter
4 (1 pound) sweet potatoes
¼ cup packed brown sugar

Steps:

  • Pour brandy over raisins in a small bowl, cover, and allow to stand for 2 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2-quart baking dish with the softened butter.
  • Place sweet potatoes on a baking sheet, and bake in preheated oven until tender, about 30 minutes. Remove and allow to cool until cool enough to handle, then peel the potatoes and slice them 1/2 inch thick. Arrange the potato slices in the prepared baking dish, and sprinkle with sugar and brandy-soaked raisins.
  • Return the sweet potatoes to the oven, and bake 30 to 40 minutes until hot and bubbly.

3 large sweet potatoes, peeled and cubed
½ cup white sugar
¾ cup packed brown sugar
¼ cup butter
2 eggs
½ cup brandy
1 teaspoon vanilla extract

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the sweet potatoes in a large bowl, then mix in the white sugar, brown sugar, butter, eggs, brandy, and vanilla extract. 7 large sweet potatoes, about 3 pounds
4 large oranges
1 stick unsalted butter
1/2 cup light brown sugar
3 large eggs
3/4 cup fresh orange juice
1/2 cup heavy cream
1/4 cup brandy (optional)
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt

Steps:

  • Preheat the oven to 400 degrees F. Place the potatoes on a baking sheet and bake until tender, about 1 hour. Remove from the oven and let rest until just cool enough to handle. Lower the oven to 350 degrees F. Make the orange cups by cutting the oranges in half and scooping out the pulp, leaving only the shell. Set aside. While still somewhat hot, peel the potatoes and place in a large bowl. Discard the skins and tough, stringy fibers. Add the butter, and with an electric mixer, beat out the lumps. Add the sugar, eggs, orange juice, heavy cream, and brandy, and mix until smooth. Add the cinnamon, nutmeg, and salt, and mix well. Re-season, to taste. Spoon the sweet potato mixture into the orange cups (or casserole dish), mounding and smoothing the top. Bake until puffed and slightly golden, about 20 minutes.
