This is definitely a freeze ahead recipe option. You can freeze after you put together and just heat from freezer for approx 20 additional minutes!

12 ounces bow tie pasta (can also use elbow pasta)
1 jar marinara sauce
1 (1 lb) container low fat cottage cheese
1 (8 ounce) container sour cream
1 (10 ounce) package frozen chopped spinach, thawed and sqeezed of excess liquid
3/4 cup scallion, chopped
1 teaspoon salt
1/2 teaspoon black pepper
2 cups cheddar cheese, shredded

Steps:

  • Cook pasta according to directions, omitting salt and undercooking by 2 minutes.
  • Drain Meanwhile, heat oven to 375 F degrees.
  • Grease 12 cup oven-proof casserole.
  • Mix pasta, sauce, cottage cheese, sour cream, spinach, scallions, salt, pepper in a bowl.
  • Spoon into casserole and top with cheese.
  • Bake, covered for 20 minutes, uncover and continue baking for about 10 minutes or until temperature registers 150 F degrees.

This is a really simple dish that can be made with things you have on hand or the things you like most on your pizza. I sometimes use canned tomatoes with their juices or just plain sauce. Experiment and have fun!

1 lb bow tie pasta
1/2 lb pepperoni, sliced thin
1 -2 clove garlic, minced
4 -5 tomatoes, diced
1 small onion, diced
1 green pepper, diced
1 -2 stalk celery, diced
1/2-1 teaspoon dry oregano
1/2-1 teaspoon dried coriander
1 lb mozzarella cheese, shredded
1 cup tomato juice
mushroom (optional)
olive (optional)
banana pepper (optional)
spinach (optional)
broccoli (optional)
sausage (optional)
different cheese (optional)
different spices

Steps:

  • Preheat oven to 350F.
  • Cook noodles and set aside.
  • Put pepperoni in a fry pan and cook lightly until grease comes out, do not pour off grease.
  • Add garlic, tomatoes and the rest of the vegetables, cook for a couple minutes.
  • Add spices and stir around.
  • Put noodles in a 9" x 13" greased casserole dish.
  • Pour the tomatoes, pepperoni, cheese and tomato juice over noodles and stir lightly.
  • Cover with foil and bake for 45 minutes.
  • Remove foil and add more cheese if you like and bake for another 5 or 10 minutes, until cheese has browned.
  • Enjoy!

1 lb. mild pork sausage
1 large onion, chopped
2 (26 oz.) jars spaghetti sauce
1 lb. cubed, cooked ham
1/2 - 1 lb. sliced pepperoni
3 (8 oz.) pkg. shredded mozzarella cheese
2 tbsp. chopped garlic
1 tsp. dried oregano

Steps:

  • Cook pasta in boiling water until al dente. Cook sausage, garlic and oregano with onions until the juices run clear. In a lightly greased 9" x 13" pan, pour a small amount of sauce to lightly coat bottom of pan. Layer the ingredients in the order listed below: 1st. layer - 1/3 of pasta, 1/3 of the remaining sauce, 1 bag of mozzarella cheese, sausage and onion mixture. 2nd. layer - 1/2 of remaining pasta, 1/2 of remaining sauce, 1 bag of mozzarella cheese, ham. 3rd. layer - the remaining pasta, all remaining sauce, 1 bag of mozzarella cheese, all the pepperoni (completely cover the entire top of casserole with pepperoni). Bake at 375 degrees for 40 minutes. Let sit for 5 minutes before serving.

  • Cook pasta according to pkg directions. Cook sausage, garlic powder and oregano with onions until done. In a lightly greased 9x13 inch pan, pour a small amount of sauce to lightly coat bottom. Layer 1/3 of the pasta, 1/3 remaining sauce, 1 bag of mozzarella cheese, 2 Tablespoons parmesan cheese, sausage and onions.
