If you think baked beans only come from a can, you're in for a treat. Bacon, molasses and bourbon add depth and flavor to our classic recipe that's perfectly spiced with paprika, mustard and Worcestershire. A bit of brown sugar adds just the right amount of sweetness and to keep things easy, the beans require no soaking! They get tender and delicious right in the oven.

8 ounces thick-cut bacon, cut into 1/2-inch strips
1 large yellow onion, diced
3 cloves garlic, minced
1 teaspoon paprika
One 8-ounce can tomato sauce
1/3 cup molasses
1/4 cup bourbon
2 tablespoons packed light brown sugar
1 tablespoon Worcestershire sauce
2 teaspoons prepared yellow mustard
Kosher salt and freshly ground black pepper
1 pound dried navy beans, picked through

Steps:

  • Preheat the oven to 300 degrees F. Cook the bacon in a large Dutch oven over medium-high heat until browned and crisp, about 8 minutes. Add the onion and garlic and cook until softened, 4 to 5 minutes. Add the paprika and toast, stirring, about 30 seconds. Add the tomato sauce, molasses, bourbon, brown sugar, Worcestershire sauce, mustard, 2 teaspoons salt and 1/2 teaspoon pepper. Bring to a simmer and cook 5 minutes.
  • Add the beans and 8 cups water. Bring to a boil, then cover the pot and transfer to the oven. Bake until the beans are tender, about 3 hours. (If the beans are still slightly firm, continue cooking, stirring every 45 minutes and adding more water if necessary to just cover.)
  • Once the beans are tender, uncover and increase the oven temperature to 325 degrees F. Bake until the beans are thick and browned, about 1 more hour. (Again, if the beans need more time, continue cooking, stirring occasionally and adding more water if necessary.) Remove from the oven and thin with water if necessary.

Chipotle-Lime Baked Beans image

To me, baked beans are an integral part of any cookout. This recipe gives canned baked beans a zing! The acid from the lime juice pairs nicely with the fatty richness of the beans and the spice of the chipotle in adobo. It's the perfect pairing for your favorite BBQ proteins!

2 strips bacon, chopped
1/2 onion, diced
2 cloves garlic, minced
One 28-ounce can baked beans
1/3 cup ketchup
3 tablespoons honey
2 tablespoons lime juice
1 teaspoon to 1 tablespoon adobo sauce from canned chipotles, depending on how spicy you like it
Kosher salt and freshly ground black pepper
1/2 cup french-fried onions

Steps:

  • Preheat the oven to 350 degrees F.
  • In a saute pan over medium heat, cook the bacon until crispy, about 4 minutes. Remove the bacon with a slotted spoon to a paper towel-lined plate. Add the onions and garlic to the pan with the bacon grease and cook until the onions are translucent, about 5 minutes. Remove from the heat.
  • In a large bowl, combine the baked beans, onion-garlic mixture, bacon, ketchup, honey, lime juice, adobo sauce, salt and pepper. Mix thoroughly to combine. Transfer to a 2-quart baking dish. Cover with foil and bake for 30 minutes. Uncover and bake until slightly thickened, about another 10 minutes. Remove from the oven and top with the fried onions. Serve.

BOURBON AND DP BAKED BEANS

I came up with this recipe after having made some bourbon baked beans and seeing a recipe for cola baked beans and I thought: Why not combine the two?

½ cup brown sugar
1 tablespoon ground paprika
1 teaspoon dry mustard
¼ teaspoon cayenne pepper
1 (12 fl oz) can caffeinated pepper-type soda (such as Dr Pepper®)
¾ cup ketchup
¼ cup Worcestershire sauce
8 slices bacon
1 large onion, finely chopped
1 clove garlic, minced
¼ cup bourbon
2 (16 ounce) cans baked beans with pork

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix brown sugar, paprika, mustard, and cayenne pepper together in a bowl. Whisk in pepper soda, ketchup, and Worcestershire sauce until brown sugar is dissolved.
  • Cut 4 slices of bacon into small strips. Cook and stir in a large Dutch oven over medium heat until almost crispy, 3 to 5 minutes. Transfer to a bowl, reserving bacon grease.
  • Stir onion into the bacon grease in the Dutch oven; cook and stir until soft, 3 to 5 minutes. Add garlic; cook and stir for 1 minute. Pour in bourbon, stirring to scrape up browned bits off the bottom with a wooden spoon. Stir bacon strips back in.
  • Pour brown sugar mixture and baked beans into the Dutch oven. Simmer until beans are heated through, about 15 minutes. Arrange remaining 4 slices of bacon on top of the beans.
  • Bake in the preheated oven, covered, until beans are bubbly and sauce is syrupy, about 3 hours.

2 (16-ounce) cans baked beans, drained (recommended: Bush's)
1/2 cup chili sauce (recommended: Heinz)
1/4 cup bourbon (recommended: Jim Beam)
1/4 cup real bacon pieces (recommended: Hormel)
1 tablespoon molasses (recommended: Grandma's)
2 tablespoons brown sugar

Steps:

  • Combine all ingredients in medium saucepan. Bring to boil over medium-high heat. Reduce to medium and continue boiling for 10 minutes. Serve hot.

Chipotle Baked Beans image

This recipe is an adaptation from my girlfriend Jan's mother, Alice. I bought one of those mega cans of Bush's Baked Beans and diced prosciutto from Sam's Club/Costco, and made two different types of beans with very little extra work. I loved the chipotle version.

102 ounces baked beans (Bush's original flavor)
2 green peppers (chopped)
2 large onions (chopped)
7 ounces diced prosciutto
1 cup brown sugar
1/4 cup yellow mustard
3 tablespoons Worcestershire sauce
1/4 cup ketchup
1/4 cup pureed chipotle chile in adobo
2 tablespoons olive oil

Steps:

  • Saute the onion, green pepper, and prosciutto in 2 tablespoons olive oil, in a large heavy pot, until the onions and peppers are soft and the prosciutto is browned.
  • Add the entire can of beans into a large pot along with remaining. ingredients, except the pureed chipotle.
  • Divide the beans evenly between two ovenproof casseroles (I covered two ovenproof mixing bowls with foil).
  • I added the pureed chipotle to one of the mixing bowls, then covered them and baked them at 375 degrees for an hour.
  • Uncover and cook for another 20 minutes.
  • Stir them about halfway through the cooking time, and then again when you uncover them.
  • If you so desire, add a little chopped fresh cilantro to the chipotle version.
