My husband worked at WDW for 30 years and during the days when the cafeteria was supplied by WDW this was a favorite by the employees. It was printed by the Orlando Sentinel years ago and I copied it. It makes a lot, so reduce it for your family.

3/4 lb margarine
1 1/2 cups onions, diced
1 1/4 cups celery, diced
1 3/4 cups flour
1/2 gallon hot milk
1 quart clam
1 quart clam juice
1 1/2 cups green peppers, diced
1/4 teaspoon white pepper
1/4 teaspoon thyme
2 cups potatoes, steamed for 12 minutes,diced

Steps:

  • Melt margarine in dutch oven, add onions, celery and saute until tender.
  • Add flour to make a roux and cook over low heat 10 minutes, stirring constantly to prevent scorching.
  • Gradually add hot milk, stirring constantly to maintain smoothness.
  • Add clam juice and chopped clams and cook 20 minutes more.
  • Add green pepper, thyme and pepper.
  • When green peppers are tender, add potatoes cut into small chunks and cook 10 minutes more.

Number Of Ingredients 12

24 chowder clams
1/8 pound lean salt pork (see note)
2 tablespoons butter
1 cup finely diced onions
2 tablespoons flour
4 cups clam broth
2 cups water
1 1/2 pounds potatoes, peeled and cut into 1/4-inch dice, about 3 cups
3 cups milk
1 cup heavy cream
Salt to taste, if desired
Freshly ground pepper to taste

Steps:

  • Remove and set aside the tough muscle of each clam. Reserve both the muscle and the softer body portions. Chop the muscles as finely as possible or puree them in a food processor, leaving the meat a bit coarse but fine. There should be about one and one-quarter cups.
  • Cut the salt pork into very fine dice. Put the dice into a kettle and cook, stirring often, until they are rendered of fat and are slightly crisp. Add half of the butter.
  • Add the onions and cook, stirring, until they are wilted. Sprinkle with flour and stir. Add the clam broth and water, stirring vigorously with a wire whisk. Add the chopped clam muscles and cubed potatoes. Bring to the boil and simmer 20 to 30 minutes until the potatoes are tender.
  • Finely chop the soft body portions of the clams or chop them using a food processor. Add this to the chowder and continue cooking five minutes. Stir in the milk, cream, salt and pepper. Bring to the simmer and swirl in the remaining one tablespoon of butter. Serve immediately. Serve, if desired, with common crackers or pilot crackers.

This is not my favorite clam chowder recipe but it is low cal, rather thin but tasty. Make mine loaded with potatoes, pork & tomatoes.

1 (10 1/2 ounce) can clams, about 1 cup drained,save 1/2 cup liquid
1/2 cup onion, chopped
1/2 cup carrot, diced
1/2 cup water
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon thyme
2 cups skim milk

Steps:

  • Set out a 3 quart saucepan.
  • Add 1/2 cup clam liquid, onions, carrots, water, salt, pepper& thyme.
  • Meanwhile cut the clams in half.
  • When the veggies are tender put in the clams and gradually add milk.
  • stirring all the while.
  • Simmer 5 minutes.
  • Garnish with chopped parsley.

1 1/2 lbs onions, chopped
6 lbs red potatoes, diced
6 (32 ounce) cans minced clams with juice
3 tablespoons thyme, dried
1 tablespoon oregano, dried
2 tablespoons basil, dried
1 cup fish bouillon cube
2 tablespoons white pepper
3 lbs butter
6 cups flour
6 garlic cloves, chopped
1 gallon 2% low-fat milk

Steps:

  • Combine celery, onions, potatoes, clams, thyme, oregano, basil, bouillon, and pepper. Cook 30-45 minutes until vegetables are tender.
  • Melt butter and add flour and garlic. Stir constantly until slightly brown.
  • Combine with vegetable mixture and add milk. Stir well and simmer until desired thickness.
  • Note: You may use half and half for a richer chowder in place of the milk. Or use a combination of both.

10 cups clam juice
2 pounds baking potatoes, like russets peeled, diced
4 pounds fresh or frozen clams shelled, diced
1/4 pound salt pork diced
2 small onions diced
1 cup butter
1 cup flour
2 pints half-and-half
Salt to taste
Freshly-ground black pepper to taste
1 dash hot pepper sauce
1 dash Worcestershire sauce

Steps:

  • Bring the potatoes and the clam juice to the boil. Cook until the potatoes are tender, about 10 to 15 minutes. Add the clams and any of their liquid. Cook about 5 minutes. Set aside. Add the pork to a sauté pan and cook over low heat until rendered. Add the onions and cook until transparent. Add the butter and allow it to melt. Add the flour and cook until slightly colored. Add a bit more flour if necessary if the mixture is too soft. Bring the clams, juice and potatoes back to the boil. Gradually stir in the cooked roux. Bring to a rolling boil to thicken. Stir continuously while cooking. Beat the half-and-half and add to the soup. It may not be necessary to use all the half-and-half; the soup should be thick. Adjust the seasoning and add a dash of hot pepper sauce and Worcestershire sauce before serving. This recipe yields 10 servings.

1 16oz can of chopped clams, strained with juice reserved
1/4 lb of thick sliced bacon
1 small onion
2 stalks of celery
2 Tablespoons of flour
2 chicken boullion cube + 2 cup water or 1 cup of chicken stock
4 small potatoes peeled
1 pinch of thyme
pepper
salt
(optional 1/4 cup coconut milk)

Steps:

  • Open can of clams and strain clam juice from can into a bowl. Set aside. Chop bacon into small even chunks. Heat a quart sized pot over medium heat. Add bacon and stir occasionally to keep from burning. Chop onion and celery into small pieces. When bacon is done (fairly crispy - not burnt - crispy bacon is essential, limp bacon will not give it a deep rich flavor that a crisp cooked piece of bacon will, and it will soften later in the soup) remove bacon bits from pot and add onion and celery to the pot. Stir often. Cook until the onion is carmelized, when it has a nice golden brown color. Chop potatoes into small 1/4 inch - 1/2 inch square pieces. Add to pot and stir for about 5 minutes. Add flour, stirring to make sure everything is evenly coated. Add boullion cubes and water (or stock) and reserved clam juice and reserved cooked bacon. Stir. Cover with lid and turn on medium high heat. Add Thyme. Bring to a simmer and reduce heat to about medium and cook until potatoes are soft, stirring from the bottom of pan. When potatoes are soft, reduce heat and add clams. Salt and pepper to taste. To add a bit of creaminess to this dish, add 1/4 cup of coconut milk (NOT cream of coconut)

4 tbsp butter
1/2 lb bacon, diced
1 onion, chopped
2 stalks of celery, chopped
1 garlic clove, minced
1 tsp Worcestershire
salt and pepper to taste
4 tbsp flour
1/2 cup water
2 cups raw potatoes, diced
1 bay leaf
dash of basil
2 cups milk
3 cans baby clams
2 cans cream of celery soup

Steps:

  • In dutch oven, fry bacon, onion, celery, garlic, Worcestershire, salt and pepper in butter. Cook until tender. Sprinkle flour over mixture until crumbly. Be careful not to burn. Add slowly clam juice and water. Mix until smooth. Remove from heat. Add potatoes, bay leaf, milk, clams, cream of celery soup and basil. Cover and simmer over low heat for about an hour.
