BONNIE'S TORTELLINI BAKE
This is surprisingly good. Sauteed garden vegetables and 7-cheese tortellini are baked together in a tasty cream sauce. A pretty dish, and it tastes wonderful. Bring it to the potluck. Use as a main course or as a side dish. It is also easy to prepare. Enjoy!

Steps:
- 1. Preheat oven to 375 degrees. Use a 2 quart baking dish. Cook the tortelini for 8 minutes in boiling water, drain, pour into the baking dish and keep warm.
- 2. Saute the vegetables in the olive oil, and add the salt and pepper and basil.
- 3. Pour the sauteed vegetables into the tortelini.
- 4. Gently mix in the grated mozzarella cheese. Pour into a pam sprayed baking dish. Add the cream.
- 5. Bake in a 375 degree oven for 20 minutes uncovered. Then cover lightly with foil, and lower heat to 350 degrees for 15 minutes until cream is set. This is how it looks!

Steps:
- Assign 1 guest to pit the olives and another to dice the tomatoes.
- Bring 12 cups of water and 1 teaspoons of salt to a boil in a large pot.
- At the same time, in another large pot over medium-high heat, add 1/4 cup olive oil along with the garlic, shallots, and walnuts. Stir occasionally for 6 minutes, or until they just begin turning golden.
- Add the basil and stir for 30 seconds (to release their flavors).
- Add tomatoes, olives, remaining salt, pepper, chile pepper, and remaining 1/4 cup of olive oil. Cook for 10 minutes, stirring occasionally. Add yellow cherry tomatoes at the end.
- While sauce is simmering, add pasta to the boiling water. Cook according to package directions.
- Warm the second loaf of bread in a preheated 325 degrees F oven.
- Drain pasta. Add pasta to sauce in pot. Toss thoroughly. Put pasta pot directly on the table, or transfer to a large pre-warmed serving bowl.
- Serve with Parmesan. Don't forget the bread in the oven!

- Sauté Instructions:
- In a very hot sauté pan, add: extra virgin olive oil, pre-cooked farfalle (bow-tie pasta), roma tomatoes, diced red onions, kosher salt & cracked pepper.
- Sear noodles, stirring occasionally until steaming hot.
- Add: baby fresh spinach, 1 oz. fresca sauce.
- Toss to combine, serve with freshly shaved parmesan cheese.
- FRESCA SAUCE: (for 15 servings) 1/4 cup fresh garlic, 2 teaspoons kosher salt, 1/4 cup balsamic vinegar, 1/4 cup sweet white wine, 1 cup extra virgin olive oil.
BONNIE'S BAKED FRENCH TOAST
This is a great recipe for just two people, or you can bake several pans of French Toast all at once, if you have a crowd. Add sausage and bacon on the side with a big bowl of mixed fruit and a fresh pitcher of orange juice. We serve ours with a shaker of powdered sugar and pure maple syrup and butter dripping off the plate! ...

- 1. Spray a bread pan with kitchen spray and preheat the oven to 375 degrees.
- 2. Butter the tops of all four slices of bread with two slices of bread to a stack. Place bread stacks in the prepared pan, buttered side up.
- 3. Mix the milk, eggs, Mexican vanilla, cinnamon, nutmeg, sugar and a dash of salt with a whisk. Then pour over the bread stacks in the pan. There won't be enough liquid to totally submerge the top layer of bread, which is okay. Bake 35 to 40 minutes until nice and brown.
