PROSCIUTTO-STUFFED MEAT LOAF

An amazing blend of flavors-including prosciutto, sun-dried tomatoes, fresh basil and cheese-make this rolled loaf something special.

Number Of Ingredients 19

1 cup finely chopped red onion
1 tablespoon olive oil
1 tablespoon butter
2 garlic cloves, minced
1/2 pound whole fresh mushrooms, coarsely chopped
3/4 teaspoon salt
1/2 teaspoon pepper
2 eggs, lightly beaten
1-3/4 cups soft sourdough bread crumbs
3/4 cup grated Parmesan cheese
1/3 cup minced fresh parsley
1 teaspoon minced fresh thyme
1-1/2 pounds lean ground beef
3/4 pound bulk Italian sausage
FILLING:
3 ounces thinly sliced prosciutto
5 ounces thinly sliced Havarti cheese
1-1/4 cups loosely packed basil leaves, cut into thin strips
1/3 cup oil-packed sun-dried tomatoes, drained and cut into strips

Steps:

  • In a large skillet, saute onion in oil and butter for 2 minutes. Add garlic; cook 1 minute longer. Add mushrooms; cook 6-8 minutes longer or until mushrooms are tender and no liquid remains. Stir in salt and pepper. , In a large bowl, combine the eggs, bread crumbs, Parmesan cheese, parsley, thyme and mushroom mixture. Crumble beef and sausage over mixture; mix well., On a large piece of heavy-duty foil, pat beef mixture into a 15x10-in. rectangle. Layer the prosciutto, Havarti, basil and tomatoes to within 1 in. of edges. Roll up jelly-roll style, starting with a short side and peeling foil away while rolling. Seal seams and ends. , Place seam side down in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 75-85 minutes or until no pink remains and a thermometer reads 160°. Let stand for 5 minutes. Using two large spatulas, carefully transfer meat loaf to a serving platter.

I never met Bonnie but I've been making her meatloaf for years! Serve with her glaze on top - or your favourite tomato or mushroom sauce. Add some garlic mashed potatoes & a green vegetable for a great weeknight family dinner. Leftovers (if there are any) make a good sandwich.

2 tablespoons vegetable oil
2 onions, chopped
3 cloves garlic, minced
2 eggs
1 cup milk
1 1/2 cups breadcrumbs
2 lbs lean ground beef
1/4 cup ketchup
1 tablespoon Dijon mustard
2 teaspoons salt
1/2 teaspoon pepper
1 tablespoon Worcestershire sauce
2 tablespoons chopped fresh parsley
2 tablespoons ketchup
1 teaspoon Dijon mustard

Steps:

  • Heat oil in a medium skillet.
  • Cook onions& garlic until tender; reserve.
  • Combine eggs with milk& bread crumbs.
  • Add onion mixture& remaining ingredients and mix well.
  • Press into a 9" x 5" loaf pan& cover with foil.
  • Bake in a preheated 375F oven for an hour.
  • Combine glaze ingredients in a small bowl.
  • Drain off any fat from meatloaf& brush glaze on top.
  • Bake for an additional 30 minutes, uncovered.

GRANDMA BONNIE'S MEATLOAF

This was a recipe I got when I was a Longaberger Consultant. They served this meatloaf at the Homestead restaurants.

2 lb hamburger
8 oz tomato sauce
1 Tbsp worcestershire
1 onion, diced
1/2 c chopped green bell pepper
3/4 c crushed crackers
1 tsp salt
1/2 tsp pepper
SAUCE/GLAZE:
1/2 c ketchup
brown sugar

Steps:

  • 1. Mix meat loaf by hand. Shape into loaf, put in casserole. Bake at 350 degrees 75 min. Mix glaze. After baking pour on top and bake another 15 min or until browned.

When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

This recipe is an old family favorite for over 50 years. One day, I thought I would kick it up a notch by adding a prosciutto surprise. My family loved it. You can add your favorite herbs and make this recipe your own. Enjoy! Photos are my own and so is this humble recipe.

MEAT MIXTURE
1 1/4 - pound lean ground beef
1 - cup quick oats--1/2 cup to mix, then less than 1/2 cup to form loaf.
1/2 - small can tomato sauce
1 - teaspoon minced garlic
2 - tablespoons milk
1/2 - cup chopped white onion
2 - green onions chopped
2 - raw eggs
2 - teaspoons salt
1 - teaspoon black pepper
SET ASIDE:
4 - hard boiled eggs
4 - slices of prosciutto
1 - can tomato sauce

Steps:

  • MAKE THE PROSCIUTTO EGGS Place eggs from the fridge into a sauce pan and cover with cold water, add a pinch of salt. Bring to a boil, don't boil fast, just keep the water moving. Set the timer for 10 minutes. Remove as soon as it dings. Run cold water over the eggs until the water is cool, add ice to cool off the eggs. Then peel them. Wrap them in one piece of prosciutto like I did in my photo. Set aside.
  • THE MEAT Place ground beef in a medium mixing bowl.
  • ADD THE INGREDIENTS Add the oats, eggs, milk, salt, pepper, garlic and 1/2 can of tomato sauce. Mix well to combine, then add the remainder of the oats just until it will hold its shape.
  • FIRST LAYER Divide the meat in half. Place one half of the meat in the bottom of a meat loaf pan. Place the prosciutto eggs down the center of the loaf lengthwise. 4 eggs will fit end to end.
  • SECOND LAYER Form the second layer and lay it gently over the top of the prosciutto eggs and first layer, seal the two layers together by gently patting the loaf. Cover with saran wrap and refrigerate for a while until it sets.
  • BAKE Remove the saran wrap! Set the oven to 350 degrees, place the cold meatloaf in the oven at the star of preheating. Bake at 350 degrees for 1 hour or until thermometer almost reaches the temperature for beef.
  • GLAZE Open the oven, pull out the rack, leave the meatloaf on the rack and pour the tomato sauce carefully and evenly over the entire top and sides of the meatloaf. Bake 20 minutes until glazed. Slice and serve.
  • Eat and Enjoy!
