STUFFING SEASONING MIX
This recipe comes from my old stand-by More Make-A-Mix Cookery and is being posted in response to a request in Request a Recipe. This stuffing can be used in place of those expensive boxed or prepackaged mixes.

Steps:
- In a medium saucepan, combine water, butter and seasoning mix.
- Bring to a boil over medium-high heat; reduce heat to medium and simmer for approximately 5 minutes.
- Stir in bread cubes and cook 1 to 2 minutes or until liquid is absorbed, stirring and fluffing with a fork.
- Cover; remove from heat and let stand for 5 minutes before serving.
- For variety:.
- Whole-Wheat Stuffing: Half whole wheat bread cubes and half white.
- Cornbread Stuffing: Use 3 cups cornbread for bread cubes.
- Nut Stuffing: Add 1/4 cup walnuts or diced water chestnuts.

Steps:
- Preheat oven to 350 degrees.
- Bake bread 8 to 10 minutes, cool.
- Dump all ingredients in a large bowl (that has a cover!) shake well to blend.
- To Use: Combine 2 cups stuffing mix, 1/2 cup boiling water, 2 tablespoons melted butter in a saucepan.

BONNIE'S CLASSIC COUNTRY STUFFING
This Classic Stuffing recipe is a very versatile dish. It complements any main entree. It has a nice crunchy top, with a nice moist, buttery interior. Lots of old-fashioned flavors and ease of preparation. It will soon be your favorite standby, too. Enjoy!

- Butter a 9 or 10 inch, deep glass baking dish. This recipe may be doubled for a crowd. Preheat oven to 350 degrees.
- I toasted the bread in a toaster. You can use the oven if you wish, but the toaster is faster. Tear the toasted bread into pieces, not too large or too small. i add a mixture of homemade, toasted and soft bread. Your choice. You will need 8 cups. Place the bread in a large mixing bowl. Use any kind of bread, or cornbread, too. (You can also add giblets or cooked sausage. Just keeps the amounts in the basic recipe the same.)
- Melt the butter in a large skillet over medium heat, and add the celery, onions, sale and pepper, and cook until almost tender. Then add the garlic and cook a couple of minutes more. Now add the spices and cook another minute, just long enough to release the flavors into the vegetables. Add half of the stock to the skillet, mix well and pour over the bread in the mixing bowl. Mix gently to combine.
- Add the two beaten eggs to the remaining chicken broth. Whisk until smooth, and pour over the mixture, toss to incorporate the liquid with the bread.
- Pour the mixture into the buttered dish. Bake in a preheated oven at 350 degrees for 45 minutes until brown and set. Let stand 5 minutes covered before serving.

HOMEMADE BREAD STUFFING
This is a recipe that I have used for years, but with my own little tweaks added to it. Loved by all every time we make it. We usually double this recipe.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a large skillet over medium-high heat until; saute onion and celery in hot butter until onion is soft, 5 to 10 minutes.
- Put bread cubes in a large bowl. Season bread with salt, sage, thyme, poultry seasoning, and black pepper. Add onion mixture to bread cubes; stir. Pour bread mixture into a large casserole dish and cover the dish with aluminum foil.
- Bake in the preheated oven until golden and hot, about 1 hour.

- 1. To use, mix 2 to 3 tablespoons Stuffing Seasoning with 2 quarts day-old bread crumbs, 1 beaten egg, salt and pepper, 1 small onion, chopped and browned in 1/4 cup butter. Add enough water or milk to moisten. Mix and pack in a container with a tight-fitting lid.
