FRENCH DIP SOUP (RACHAEL RAY)

Just saw this recipe on Rachael's talk show. I LOVE onion soup and I LOVE roast beef sandwiches . . . so the combo sounds absolutely awesome!!

Number Of Ingredients 12

1 tablespoon extra virgin olive oil (EVOO)
2 tablespoons unsalted butter
5 large onions, thinly sliced
4 garlic cloves, finely chopped
salt & freshly ground black pepper
3 sprigs fresh thyme
1 fresh bay leaves or 1 dried bay leaf
1/2 cup white wine
6 cups beef stock
1/2 loaf crusty bread, torn into bite-size pieces and toasted
1 lb deli-style roast beef, shredded
swiss cheese (optional) or gruyere cheese, grated (optional)

Steps:

  • Heat a deep pot over medium to medium-high heat.
  • Add EVOO, about one turn of the pan, and butter to the pot.
  • Add the onions to the pot as you slice them and the chopped garlic.
  • Season with salt and pepper.
  • Add thyme sprigs and a bay leaf.
  • Cook the onions for 20-25 minutes, stirring frequently, until tender, sweet and deep caramel-colored. If the onions are burning in spots before browning all over, add a splash of water and stir every now and then, scraping the bottom of the pot.
  • Once the onions are tender and brown, add the white wine and scrape up all the brown bits from the bottom of the pot.
  • Add the beef stock and cover the pot to bring the soup up to a quick boil.
  • Place a few chunks of the toasted bread into each of four deep soup bowls or crocks and top the toast with a handful of the shredded roast beef.
  • Once the soup reaches a boil, remove the bay leaf and thyme sprigs and ladle into bowls to cover the roast beef.
  • If you like, top it off with a handful of cheese and enjoy!

OR YOU CAN USE A CHUCK ROAST CUT UP SMALL CHUNKS
14 ounce(s) broccoli, frozen
1 pound(s) country trio vegetables
CARROTS, CORN, GREEN BEANS
4 medium potatoes cut up in chunks
1 cup(s) pearl barley, uncooked
4 - beef bouillon, cubes
1 teaspoon(s) thyme, dried
2 teaspoon(s) garlic
2 teaspoon(s) onion powder
2 tablespoon(s) worcestershire sauce
1 can(s) rotel
10 cup(s) water
2 teaspoon(s) salt
2 teaspoon(s) pepper
1 teaspoon(s) celery salt
IF YOU USE A FRESH ROAST CUT UP
DREDGE IN FLOUR AND BROWN
2 teaspoon(s) liquid smoke flavoring
IF USING FRESH ROAST ADD 1 CAN OF FRENCH ONION SOUP
AND 1 CAN OF BEEF BROTH

Steps:

  • If you don't have left over French Dip then use chuck roast cut up and dredge in flour and brown.
  • Put all Ingredients into your crock pot (slow cooker) Cook on low for 6-7 hours.....

Use the same recipe for my famous French Dip to prepare this delicious Guinness Shepherd pie. Top it with seasoned mashed potatoes, chunks of tender roast beef and colorful vegetables. Easy preparation. Toss a salad. Add crunchy French bread, and dinner is served! Enjoy!

1 recipe for my french dip roast beef-approx 2.5 lbs.
3/4 cup frozen peas, thawed
1/2 cup frozen corn
3/4 cup frozen carrots
1 cup prepared gravy
1 pound mashed potatoes
1/2 cup frozen chopped onions

ingredients needed for roast beef:
2.5 pound roast beef, one bottle guinness beer, one can french onion soup and one can beef broth.

ingredients needed for mashed potatoes:
enough mashed potatoes to feed 6 people, 1/2 cup green onions, 1/2 cup cheddar cheese, 1/2 cup sour cream, 1/4 cup butter, salt and pepper.

Steps:

  • 1. Cook's note: You can make the roast beef and the mashed potatoes ahead and refrigerate. Be sure to warm up the meat and potatoes before making the recipe as it will affect the cooking time.
  • 2. MAKE AHEAD: Use this recipe for roast beef. (It is my posted recipe for French Dip Sandwiches, and it is perfectly seasoned for this recipe) Place in a crockpot the following 4 ingredients. One 2.5 pound chuck roast, fat trimmed. One can Campbell's French Onion Soup. One can of beef broth, and one bottle of Guinness beer. Cook in slow cooker until tender but not falling apart. Let it cool, then cut meat into a 1/2 inch dice.
  • 3. BOIL POTATOES: Make mashed potatoes, season with 1/2 cup sliced green onions, 1/2 cup cheddar cheese, 1/4 cup butter, 1/2 cup sour cream and season with salt and pepper. Add a splash of milk if it needs more liquid when you are mashing them. I use an electric mixer to mash the potatoes.
  • 4. PRECOOK VEGETABLES: Precook the frozen carrots, corn and onions until partially done and drain well. In a large mixing bowl, add the diced meat, all the vegetables, one cup of gravy and mix gently. Pour meat mixture into a 9X13 dish, or if you are making a smaller amount use a 10 inch pie plate. Top with the seasoned mashed potatoes. Using the tines of a large fork, make the design on top like my photo. Place the baking dish on a cookie sheet with a lip, and bake in the oven at 375 degrees for 45 to 50 minutes. Remove from oven and let set at least 5 minutes before serving. Enjoy!

This is our traditional French Onion Soup recipe. While it appears to take awhile to make it, it is a very easy process. Don't skip the caramelizing of the onions because that is what gives it its wonderful flavor. I have made several versions of this recipe, and this is the one that we like the best. CARAMELIZE
3 large onions, cut in half and sliced very thin
3 tablespoons of butter
ADD IN
2 cloves minced garlic
2 tablespoons all purpose flour
SIMMER
2 quarts of good beef broth or stock
1/2 cup marsala wine
1/4 teaspoon marjoram
1/4 teaspoon thyme leaf
2 large bay leaves
salt and pepper to taste
BROIL
french bread or baguettes
1 cup grated provolone and mozzarella cheese mix
1/4 cup fresh grated parmesan cheese

Steps:

  • 1. Peel the onions and cut them in half. Slice them very thin. Choose large sweet onions.
  • 2. Melt butter in a Dutch oven over medium heat. Add the onions to the Dutch oven and toss the onions around until they are coated with the butter. Cook uncovered. The onions will cook down. Stir about every five minutes so the onions don['t burn.
  • 3. Remember slow and low is the way to go. Resist the urge to turn up the heat. You don't want to burn the onions. This is going to take about 40 minutes or more until the onions are caramelized a deep rich golden brown.
  • 4. Once the onions are caramelized, add in the garlic and stir for two minutes, then add two tablespoons of flour, mixing it in with the onions and garlic. Next, add the beef broth, scraping up the bits from the bottom of the Dutch oven and bring the broth to a boil.
  • 5. Add the Marsala wine, thyme, bay leaves, and marjoram. Add salt and coarse ground pepper, adjust seasoning. Stir. Turn the burner to low simmer and cover. Simmer for 20 minutes on low.
  • 6. I use these little casserole dishes or ramekins will do. Anything that is oven proof. Place your baking dishes on a pan for easier and safer handling.
  • 7. Turn the oven on to Broil. Ladle up the soup into the baking dishes. Fill it with soup about a half inch from the rim of the dish.
  • 8. Add bread, or croutons, or baguettes, (We lightly toast ours in the toaster first.) Then add the cheeses and broil.
  • 9. Place the pan with the baking dishes on the top rack under the broiler. Watch them carefully. It only takes about five minutes!
  • 10. Here is how it looks! Enjoy!
