4 skinless, boneless chicken breasts, cubed
4 stalks celery, chopped
1 onion, chopped
1 red bell pepper, chopped
½ green bell pepper, chopped

1 cup tomato juice
1 (6 ounce) can tomato paste
2 tablespoons dried parsley

Steps:

  • Heat oil in a large skillet over medium-high heat. Add chicken and cook until no longer pink in the middle, 5 to 7 minutes. Warr Shu Gai or Almond Boneless Chicken, like chop suey, is a Chinese-inspired American dish. So far as I have been able to determine, it originated in Detroit. It was a favorite dish of my childhood there. Every Cantonese restaurant in the area serves it, but I've never been able to find it outside of Michigan. Descriptions of it to Chinese restaurant personnel elsewhere have been met with blank stares.

2 whole skinless chicken breasts, boned and cut in half
1/2 teaspoon salt
1 tablespoon dry sherry
4 tablespoons cornstarch
3 tablespoons water
3 cups chicken broth
1 1/2 cups Chopped mushrooms (optional)
3 tablespoons butter
2 teaspoons soy sauce
3 teaspoons chicken bouillon granules
3 tablespoons cornstarch
3 tablespoons flour
1/2 teaspoon baking powder
1 egg, Beaten
1 tablespoon water
vegetable oil, for frying

Steps:

  • Prepare sauce: In a small saucepan, stir together cornstarch and water until smooth.
  • Gradually stir in chicken broth, mushrooms (if desired), butter, soy sauce and bouillon granules.
  • Bring the mixture to a boil, stirring constantly.
  • Let boil 1 minute. Keep warm.
  • Prepare batter: Beat together cornstarch, flour, baking powder, egg and water until smooth.
  • Coat each piece of chicken with batter.
  • Pour vegetable oil into a large skillet or wok to the depth of 1/2 inch; heat to 375 degrees.
  • Cook coated chicken pieces in oil, turning once, until golden -- 5 to 7 minutes.
  • Drain on pa per towels.
  • Cut chicken diagonally into strips.
  • Reassemble strips in chicken breast shapes and place on a bed of shredded lettuce. Sprinkle with almonds and green onion.
  • Spoon sauce over chicken and serve immediately.
  • Makes four to six servings.
  • It's been some time since I last made this, but I recall that the batter seemed not quite the same, but the rest is authentic. This can also be made with duck, in which case it becomes Warr Shu Opp.

This was served in a popular Detroit Chinese restaurant and it was actually the first Chinese food that I ever ate. I loved it then and love it now....

2 whole skinless boneless chicken breasts or 8 chicken tenders
1/2 tsp salt
1 Tbsp dry sherry
SAUCE:
4 Tbsp cornstarch
3 Tbsp water
3 c chicken broth
1 1/2 c fresh mushrooms, chopped
3 Tbsp butter
3 Tbsp chicken bouillon granules
BATTER:
3 Tbsp cornstarch
3 Tbsp flour
1/2 tsp baking powder
1 egg, beaten
1 Tbsp water
1 Tbsp soy sauce
BASE
1 c shredded lettuce
1/3 c toasted slivered almonds
4 green onions, sliced with part of the tops.
OIL FOR DEEP FRYING

Steps:

  • 1. Sprinkle chicken with salt and sherry and marinate for 15 minutes. While chicken is marinating, prepare the sauce. Mix together the cornstarch and water in a small saucepan until smooth. Gradually mix in the chicken broth, mushrooms,soy sauce, butter and boullion granules. Bring mixture to a boil, stirring constantly. Let boil for 1 minute, and keep warm. To prepare batter: Beat together the cornstarch, flour, baking powder, egg and water until smooth. Coat each piece of chicken with the batter. Heat large skillet or wok and add oil to a depth of 1/2 inch. Heat to 375 degrees. Cook coated chicken pieces in oil until they are golden brown, turning once. This should take about 5-7 minutes. Drain the chicken on a tempura rack if you have one or on a paper towel. Cut the fried chicken in diagonal strips. Reassemble the strips into a chicken breast shape and place on a bed of shredded lettuce. Sprinkle with toasted almonds and green onions. Spoon the sauce over the chicken and serve.

8 boneless chicken breast halves (about 3 pounds with or without the skin)
salt & fresh ground pepper
2 -3 tablespoons unsalted butter
1/3 cup finely chopped onion
1 teaspoon minced garlic
2 cups dry unseasoned breadcrumbs
1/4 cup grated parmesan cheese
1/4 cup finely chopped fresh parsley
1/2 teaspoon dried rosemary, crumbled
1/2 teaspoon dried sage, crumbled

1/3-2/3 cup chicken stock

Steps:

  • Preheat the oven to 350°F.
  • Rinse and pat dry the chicken breasts.
  • Trim any fat around the edges.
  • If you wish, remove the white tendon running through the tenderloins.
  • Place the chicken breasts 1 at a time between sheets of wax paper and gently pound with a mallet until about 3/8 inch thick.
  • Season with salt and ground black pepper.
  • Heat unsalted butter in a small skillet over medium high heat until the foam begins to subside.
  • Add onions and cook, stirring, until tender but not brown, about 5 minutes: Stir in minced garlic and cook for 30 seconds.
  • Remove the mixture to a bowl and stir in bread crumbs, Parmesan cheese, parsley, rosemary, sage, salt and pepper.
  • Stir in the chicken stock.
  • The stuffing should be just moist enough to hold together in a crumbly ball when squeezed firmly in the hand.
  • Do not over moisten.
  • Taste and adjust the seasonings.
  • Lightly oil a 13 x 9-inch baking pan.
  • Place 1/4 cup stuffing on the center of the underside of each breast and press lightly to compact it.
  • Bring the top and bottom flaps of the chicken up over the stuffing, slightly overlapping the ends, then fold up the sides to enclose the stuffing completely.

  • Preheat your oven to 425°F. Lay the skinless chicken tenders out on paper towels, leaving a few inches between each piece, to absorb some of the extra moisture. Cut a lemon into wedges and squeeze fresh lemon juice onto each tender. Watch for seeds and remove any that fall out. Sprinkle sea salt and freshly ground black pepper on each skinless chicken tender. Add any spices or herbs you'd like -- turmeric, chili powder, sage or thyme are all classic choices.   • Prep the chicken:
  • Stir buttermilk, hot sauce, and 1 Tbsp. salt in a wide, shallow bowl. Add chicken and toss to coat.
  • Mix flour, garlic powder, paprika, cayenne, black pepper, and remaining 1 Tbsp. salt in a large bowl.

1/4 teaspoon dried thyme
Pinch chili pepper flakes
Pinch ground mace
Pinch ground allspice
Pinch ground bay leaf
Pinch ground sage
Pinch cayenne pepper, optional
3 teaspoons bacon fat
1/2 pound butter
4 pounds frozen chopped spinach, thaw and remove excess liquid or 3 pounds freshly chopped spinach
2 cups sauteed onion
1 teaspoon kosher salt
1 teaspoon ground fennel seed
1/2 teaspoon white pepper
One 6-pound fresh whole duck
One 4-pound fresh whole chicken
1 cup olive oil, divided
About 5 tablespoons blackening spice, divided
One 25-pound fresh whole turkey

3 whole roasted red bell peppers, cut into strips

Steps:

  • For the andouille sausage stuffing: In a large bowl, mix the pork, liquid smoke, garlic, salt paprika, black pepper, chili pepper flakes, mace, allspice, ground bay leaves, sage and cayenne pepper, if using, with some cold water. In a pan or on a flat-top, brown off the sausage mixture in about 3 teaspoons of bacon fat for flavor. Once the sausage mixture is browned, chill immediately.
  • For the Spinach stuffing: Melt the butter in large skillet. Add the spinach, onion, fennel seed, salt and white pepper and saute for 5 minutes until hot. Set aside to cool.
  • Preparation of the duck and chicken: It is wise to de-bone the duck and chicken first for practice. Place the fresh chicken breast-side down on large cutting board. Starting at the bird's neck, you will cut through the skin along the length of the spine. Using the tip of the knife and starting from the neck end, separate the meat from the rib cage on 1 side. Disjoint the wing from the shoulder blade and reserve for stock. Work towards the thigh bone, cut through the ball and socket joint and "pop" loose using upward pressure with your hand from under the bird. Using your thumbnail, loosen the "oyster meat" (the most tender part) from the frame. With the knife, remove the thigh and leg bone, but keep the leg attached to the bird. Repeat the process on other side of chicken. When both sides are finished, the bird will lay flat. Grab rib cage by the neck area and gently pull towards back to remove the entire carcass and breast bone cartilage. Repeat the same de-boning procedure for the duck. In a well ventilated area or with an exhaust fan on high, preheat a large cast-iron pan to very hot. Rub the boneless chicken and duck with olive oil. Generously sprinkle with blackening spice on both sides. Place skin-side down in the pan for 1 to 2 minutes then turn over and repeat. Refrigerate.
  • De-bone the turkey using the same procedure as the chicken and duck with 2 exceptions: The turkey wings should be left attached to the meat and the bone-in drumstick should be disjointed from the boneless thigh meat and left attached to the meat. The final product should be a flat boneless turkey (except for the wings and drumsticks).
  • To stuff the turducken: Place the turkey skin-side down on a flat surface. Rub the meat with 3 tablespoons olive oil. Sprinkle with 2 tablespoons chopped fresh garlic and 1 tablespoon blackening spice. Spread an even layer of cornbread dressing over the meat about 3/4 inch thick and pat down with hands. Spread 1/4-inch layer of spinach stuffing. Sprinkle with 2 cups of the andouille sausage stuffing. On top, place 6 to 8 slices of roasted red bell peppers. Place the chilled duck, skin-side down, on top of layered stuffing. Repeat the layered stuffing as above. Arrange the chilled chicken, skin-side down, on top of the stuffed duck. Spread the remainder of the stuffing on top of chicken. Press down gently with hands to compact all ingredients.
  • To truss the turducken: This may take another person's help. Lift the sides of the turkey together. Have a helper hold the bird closed while sewing the back of the turkey together using butcher's twine, making the stitches about 1 inch apart, starting at the back of turkey and working towards the neck. Be careful since the Turducken has no boney frame. Roll over breast-side-up and finish sewing the neck portion of bird. Tie off and cut twine. Now sew up the opening at the leg section of turkey. Truss the legs together with twine. For extra support, tie butcher's twine around the bird's width every 3 inches down along the bird's length. Position your hands evenly under the turducken and lift into a large roasting pan with rack inside. The pan should be at least 3-inches deep to catch drippings during cooking. Rub the entire exposed skin of the bird with 2 tablespoons of olive oil, then sprinkle with 1 tablespoon of blackening spice and salt. Add 1/2 cup water to the bottom of the roasting pan. Wrap the drumsticks with aluminum foil. Place parchment paper over the entire bird. Loosely tent the roasting pan with aluminum foil. Bake at 200 degrees F for 12 hours or until the internal temperature reaches 165 degrees F. Remove all foil and parchment paper the last hour of roasting time and turn up temperature to 325 degrees F. Baste with the drippings. When done, remove from the oven and let set in the roasting pan for at least 1 hour. With 2 heavy duty spatulas, insert underneath and remove the turducken from the rack to place on carving platter. Remove all butcher twine, including pulling out the portion along the spine. To serve, cut the turducken in half lengthwise, then cut servings crosswise in approximately 1-inch thicknesses. Serve with gravy and enjoy.

SOUS VIDE CAJUN BONELESS CHICKEN BREAST WITH CREAMY PAN SAUCE



Sous Vide Cajun Boneless Chicken Breast with Creamy Pan Sauce image

Flavorful Cajun seasoning, cream, and Parmesan cheese are the stars in this dish, as is the incredibly juicy chicken that results from cooking sous vide. Traditionally you need to cook chicken to 165 degrees F (74 degrees C) or until no longer pink, however with sous vide cooking, you can achieve the same safety with extended cooking time at lower temperatures. Using an ice bath will lower the chicken temperature slightly, so that it does not overcook during the searing step. If you prefer a lot of sauce, double the sauce ingredients.

4 (6 ounce) skinless, boneless chicken breast halves
4 teaspoons Cajun seasoning
1 tablespoon butter
1 tablespoon avocado oil
1 tablespoon butter
2 cloves garlic, minced
¾ cup unsalted chicken broth
¼ cup heavy cream
¼ teaspoon freshly cracked black pepper
2 tablespoons grated Parmesan cheese
salt to taste
1 tablespoon minced fresh thyme

Steps:

  • Fill a large pot with water and place a sous vide cooker into the water. Set temperature to 140 degrees F (60 degrees C) according to manufacturer's directions.
  • Pound chicken breasts with a meat mallet to an even 3/4- to 1-inch thickness. Season both sides with Cajun seasoning. Place chicken into vacuum bags and seal using a vacuum sealer.
  • Lower bags into the water, making sure they are fully submerged, and set timer for 1 hour. When timer is up, remove chicken from water and immediately place into an ice bath for 5 minutes. Remove chicken from bag and pat completely dry with paper towels.
  • Heat 1 tablespoon of butter and avocado oil in a large skillet over high heat until just smoking. Sear chicken for 30 to 45 seconds per side, moving the chicken around in the skillet to get all sides evenly browned. Remove to a plate and cover with foil to keep warm.
  • Melt butter for sauce in the same skillet over medium heat. Add garlic and saute until fragrant, 15 to 30 seconds. Whisk in chicken broth and bring to a simmer. Cook until slightly reduced down, 3 to 4 minutes. Whisk in heavy cream and black pepper and return to a light simmer. Cook, whisking continually, until thickened. Stir in Parmesan cheese, 1 tablespoon at a time, until melted and combined. Taste sauce and adjust salt, if needed. Sprinkle in thyme and drizzle sauce over chicken.

4 dried New Mexico red chilies*, stemmed and seeded (wear rubber gloves)
1 small onion (about 1/4 pound), halved
3 large garlic cloves
2 tablespoons raisins
1 1/2 teaspoons salt
For chicken:
2 tablespoons nonfat plain yogurt
2 large garlic cloves, minced and mashed to a paste with 1/2 teaspoon salt
1/2 teaspoon ground cumin
four 5-ounce skinless boneless chicken breast halves
1 teaspoon vegetable oil
1 tablespoon coarsely grated Münster
*available at some specialty foods shops

Steps:

  • Preheat oven to 400°F.
  • Make red chili sauce:
  • In a saucepan simmer chilies, onion, and garlic in water to cover 20 minutes and with a slotted spoon transfer to a blender. Add 1/2 cup cooking liquid, raisins, and salt and blend until smooth. Sauce may be made 1 week ahead and chilled, covered.
  • Make chicken:
  • While chilies are simmering, in a bowl stir together yogurt, garlic paste, cumin, and salt to taste. Add chicken and coat with marinade. Marinate chicken, covered and chilled, at least 15 minutes and up to 1 day.
  • In a 10-inch non-stick skillet heat oil over moderately high heat until hot but not smoking. Add chicken with marinade clinging to it, skinned sides down, and sauté 1 minute on each side, or until golden-brown patches appear.
  • Add chili sauce to skillet and bring to a simmer, uncovered, scraping up any brown bits. Transfer chicken mixture to a shallow baking pan just large enough to hold chicken in one layer and bake, covered, 15 minutes. Remove cover and sprinkle Münster over chicken. Remove pan from oven and let stand 1 minute to melt cheese.

Delicious, easy and healthy to make! We have this meal at least twice a month! A big hit with company and the kids! We have the kiddos use Ranch and honey mustard as their dip.

2 lbs boneless chicken breasts, in cubes about 1 1/2 inches wide
4 eggs
1/2 cup flour
1 -2 cup plain breadcrumbs
1/2 cup milk
salt
pepper
garlic powder
red cayenne pepper
buffalo wing sauce

Steps:

  • Prepare an oven pan (cookie sheet should work) with non-stick cooking spray.
  • Preheat oven to 400 degrees Fahrenheit.
  • Set aside 2 medium-sized mixing bowls.
  • Prepare 1 large plate or shallow pan with enough bread crumbs to coat the surface. If using plain or homemade breadcrumbs, add salt, pepper, garlic powder, and a couple of shakes of cayenne pepper to taste; keep breadcrumbs off to the side, you may need more.
  • Add cut up chicken cubes into one of the medium-size mixing bowls, pour milk over chicken, just enough to cover the chicken; you do not need more than this. Set bowl aside for later.
  • Add flour into the other mixing bowl. Dip chicken into flour, coating entirely. You may need to add flour as you go.
  • Add eggs to the milk mixing bowl used earlier; if there is some leftover milk just mix with eggs.
  • Dip about 5 or 6 cubes of chicken at a time in egg mixture.
  • Coat all sides of the chicken in the breadcrumb plate.
  • Add to prepared oven pan.
  • Once all the chicken is added to pan, spray the top with the cooking oil (we use olive oil spray). Season with more salt and pepper, just enough to taste.
  • Put in oven and cook for 20 minutes.
  • Turn pieces of chicken over, spray again with cooking spray, season with salt, pepper, and garlic powder to taste.
  • Cook for an additional 15 minutes.
  • Drizzle the wing sauces of your liking over chicken! Enjoy!

1 teaspoon ground cayenne pepper
1 teaspoon chili powder
1 teaspoon garlic powder

4 boneless skinless chicken breasts (about 1 1/4 lbs)
2 teaspoons vegetable oil
1/2 cup sour cream
1 tablespoon chopped fresh cilantro

Steps:

  • Mix all dry spices in a medium bowl, large enough to also use to coat the chicken.
  • Dip both sides of the chicken breasts in the mixture of spices, coating well.
  • Heat the vegetable oil in a medium skillet over high heat. Once hot, gently place the chicken breasts in hot oil and cook for about two minutes.
  • Once well blackened (yes, they will be a little black but don't worry), turn the breasts over and continue cooking for another 2 minutes or until chicken is thoroughly cooked. Remove chicken from pan.
  • To serve, cut chicken breasts into 3/4-inch slices on an angle and fan out on plate.
  • For a quick and easy topping, mix sour cream, cilantro, salt and pepper together in a small bowl with a whisk and top each serving with a spoonful.
  • Note: Like beef, chicken should rest for a few minutes before cutting or serving. This allows the juices to redistribute and the meat to relax and become more tender.

Steps:

  • Preheat oven to 400 degrees.
  • Spray a 13 x 9 pan with olive oil cooking spray.
  • Put chicken breasts in pan.
  • Spray top of chicken breasts with olive oil cooking spray.
  • Season with salt and pepper.
  • Sprinkle garlic cloves around chicken.
  • Cover pan with aluminum foil.
  • Bake for covered for 30 minutes.

1 whole chicken
Olive oil
2 onions quartered and not peeled
5 cloves garlic
4 stalks celery
1 pound boudin, or an Italian sausage stuffing
1/2 cup chopped onion
Butter
Cajun seasoning, to taste
Cayenne pepper, to taste
White wine or chicken stock
Cornstarch
Smothered okra and tomatoes, for service, optional
Butterbeans, for service, optional

Steps:

  • Preheat oven to 375 degrees F.
  • Starting from backbone remove all bones except for maybe the tips of the wings. Reserve bones.
  • For the chicken stock:
  • To a medium saucepan over medium-high heat, add about 2 to 3 tablespoons olive oil. Once heated, add the vegetables and saute until onions are translucent. Next add the chicken bones and cover with water by about 1 to 2 inches. Bring the mixture to a boil. Once at a boil, reduce the heat and continue to simmer for about 3 to 4 hours, skimming the top as necessary. Next, remove the saucepan from the heat and strain. Either allow the stock to cool down and refrigerate or keep warm until needed.
  • For the stuffed chicken:
  • Stuff boudin mixture into the chicken and sew back together to reform chicken shape. Place chopped onion in bottom drip pan of a 2 piece roasting pan. Place the chicken, breast-side up, in the roasting pan. Place a small piece of butter under the skin on each chicken breast. Season chicken well with Cajun seasoning and cayenne pepper. Place in oven covered at 375 degrees F for about 45 minutes, then uncover and cook an additional 15 to 30 minutes. Deglaze drip pan with white wine or chicken stock and reduce. Pour into strained chicken stock. In a small bowl combine 1 tablespoon cornstarch with 3 tablespoons cold water and whisk until combined. Whisk the cornstarch slurry into the stock mixture and bring to a boil, allowing the sauce to thicken. If the sauce is too thin, add more cornstarch slurry. If it's too thick, add more water. After chicken has rested, top with the gravy and serve with a side of smothered okra, tomatoes and butterbeans, if desired.

  • Heat air fryer to 425°F.
  • Combine cornstarch and baking powder. Add to chicken in medium bowl; mix lightly.
  • Spray air fryer basket with cooking spray. Place half the chicken strips in single layer in prepared basket, gently shaking off any excess cornstarch mixture before placing chicken in basket. Cook 8 to 10 min. or until chicken is golden brown and done. Remove from air fryer. Repeat with remaining chicken strips.
  • Return all chicken strips to air fryer; cook 3 min. to reheat. Transfer chicken strips to bowl. Add wing sauce; mix lightly. Serve with dressing.

Found on Pinterest and traced back to Half Baked Harvest. I don't eat meat, but would serve this to my meateaters! I'm going to try the sauce with tempeh or tofu! These are great because you can totally make them in advance (even freeze them in the sauce and let thaw about 30 minutes before popping them back in the oven) and just pop them back in the oven for a few minutes before you are ready to serve. So easy and so perfect.

1 lb boneless chicken tenderloins, cut into nugget-sized pieces (or breasts)
3/4 cup buttermilk
1 1/2 cups panko breadcrumbs
2 tablespoons whole wheat flour (or conrmeal)
1 cup sweet Thai sweet chili sauce
1/3 cup soy sauce
1/4 cup dark brown sugar
1 tablespoon peanut butter
1 tablespoon tomato paste
1/2 cup apple juice
1/4 cup rice vinegar
1 lime, juiced
1 teaspoon fish sauce (optional, but it adds great flavor)
2 coves garlic, minced (or grated)
1 tablespoon fresh ginger, grated
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
1/4 cup fresh cilantro, chopped, plus more for garnish
cashews, chopped, for garnish

Steps:

  • Preheat the oven to 475°F Line a baking sheet with foil and spray or brush it with the olive oil.
  • Add the chicken to a large bowl and pour the buttermilk overtop. Mix well and set aside.
  • In a shallow pie dish or large bowl add the panko, whole wheat flour and a pinch of salt and pepper. Mix well.
  • Remove each piece of chicken from the buttermilk, and dredge through the crumbs, pressing gently to adhere. Place on the prepared baking sheet. Repeat until all the chicken has been used. Make sure not to crowd your pan, if necessary use two baking sheets. Spray each chicken "wing" with non-stick spray or a mist of olive oil.
  • Bake for 10-12 minutes, then gently flip using kitchen tongs and spray the other side. Bake for 10-12 minutes more, then remove from oven. Reduce the oven to 400 degrees F.
  • While the chicken is baking combine the sweet thai chili sauce, soy sauce, dark brown sugar, peanut butter, tomato paste, apple juice, rice vinegar, lime juice, fish sauce, garlic, ginger, crushed red pepper and pepper in a medium sauce pot. Bring the sauce to a boil, reduce heat and simmer 5 minutes or until sauce has thickened slightly. Remove from the heat and stir in the cilantro.
  • Gently toss each piece of chicken in the sauce, draining the excess sauce back in to the pot. Place the chicken back on the pan and repeat until all the chicken is coated in the sauce. When ready to serve place the pan of chicken back in the oven for 5 minutes to warm through and to help the sauce coat the chicken.
  • Serve with fresh cilantro, chopped cashews and any extra sauce for dipping.
  • The chicken "wings" can be made ahead and coated in the sauce. To reheat the "wings" preheat the oven to 350 degrees F. Cook for 10 to 15 minutes or until hot. Serve as directed.
  • Good served with a side of rice.

  • 1. Pat dry a whole chicken. Note: this method can be done with any bird at all. Think of this game changer for your Holiday turkeys!

  • 3. After the bird is boneless, sprinkle generously with salt and pepper.

  • 5. Preheat oven to 400 degrees. While you wait, it is a good time to tie up your bird with the stuffing inside.
  • 6. I also put about 1/4 cup butter in a large frying pan, get it hot and brown the bird for color and flavor. SAVE the juices in the pan! You will make a pan gravy with this later. Then put it in a roasting pan along with potatoes, carrots and onion. The amount is up to you.
  • 7. Roast your bird until internal temp reaches 160 degrees. Take the temp near a meaty area in both the thigh and a breast.
  • 8. Let the bird rest on your cutting board while you make the pan gravy. Reserve the vegetables in a bowl to serve along side of the meat.
  • 9. FOR PAN GRAVY: Take the pan you browned the bird in and add a cup of chicken stock and about 1/4 to 1/2 cup Sherry. Whisk to release the fond (brown bits) on the pan. This is where the flavor is! Let it reduce just a bit, and in a small glass jar or bowl, add about 2 Tablespoons corn starch and a little water. Mix until it is liquid. Add this SLOWLY to your pan gravy and whisk constantly. You can also add a bit of browning sauce if you would like a bit more color if the fond is too blonde for you. Add salt and pepper to taste.
  • 10. By the time the pan gravy is done, the bird can be carved into beautiful slices exposing the stuffing and chicken meat. Completely void of bones!
  • 11. Pour pan gravy over individual slices of the stuffed roast. Enjoy!

6 whole boneless skinless chicken breasts, cut in half
1/3 cup flour, plus
1 tablespoon all-purpose flour
1/3 cup clarified butter
12 slices prosciutto ham, thin
6 ounces monterey jack cheese, in 6 slices each also cut in half
1/4 cup chopped shallot
3 cloves garlic, minced
1/2 lb mushroom, sliced (about 3 cups)
1/2 cup dry white wine
1 cup chicken broth
1 teaspoon fresh thyme
1 teaspoon oregano leaves
1/2 cup dry sherry
1/2 cup cream
salt and pepper

Steps:

  • Dip chicken in flour; brown in butter.
  • Arrange in a butter 13x9x2-inch baking dish.
  • Top each with 1 slice prosciutto ham and 1/2 slice cheese.
  • Cook shallots and garlic until soft; add mushrooms, wine, broth and herbs.
  • Bring to a boil and cook 10 minutes.
  • Stir into hot mixture 1 T flour and a small amount of sherry.
  • Stir in remaining sherry and cream; season with salt and pepper.
  • Pour sauce over chicken.
  • Bake in a 375° oven for 20 minutes.
