4 boneless, center cut pork chops
2 garlic cloves, minced
2 Tbsp onion, chopped
2 Tbsp lemon juice
2 Tbsp soy sauce
1 Tbsp honey

Steps:

  • 1. Combine minced garlic with chopped onion, lemon juice, soy sauce, and honey. > I double so I have sauce leftover to have with the meal.
  • 2. Place chops in pan on stovetop or on grill. Brush with garlice onion mixture.
  • 3. Cook thoroughly.

4 boneless pork chops (1-inch thick)
3 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder (or onion powder)
1 1/2 teaspoon salt
1 teaspoon black pepper
fresh parsley and thyme (optional garnish)

Steps:

  • Remove the pork chops from the fridge 20 minutes ahead of time. (This helps them to reach room temperature for even cooking.)
  • Pat dry with paper towels to remove excess moisture. Set aside.
  • In a small bowl, mix garlic powder, paprika, salt and black pepper. (If your pork chops is brined, you can omit the salt.)
  • Rub the chops on all sides with 1 tablespoon olive oil. Then rub in the seasoning mixture evenly on all sides.
  • Place a large cast iron pan on medium-high heat. When hot, add the remaining 1 tablespoon oil and swirl the pan to coat.
  • Add the pork chops and fry until the internal temperature reaches 140°F / 60°C**, flipping every minute to prevent overheating.
  • Cooking time will be about 6-7 minutes in total (about 3-4 minutes PER SIDE) for 1-inch chops 1-inch chops*** (see notes for other thicknesses). Add optional thyme to the pan halfway through.
  • Remove from heat and transfer the pork chops to a plate. Cover with foil or a plate and let rest for 3-5 minutes to let the juices redistribute through the meat.
  • Garnish with optional minced parsley before serving.

I usually prepare this recipe for 300 plus senior citizens where I work, but I've scaled it down for home use. The recipe is for freshly seasoned and breaded pork chops that come out nice and moist.

2 cups all-purpose flour
6 eggs
⅛ cup milk
2 cups seasoned bread crumbs
1 teaspoon lemon pepper
1 tablespoon dried parsley
1 teaspoon garlic powder
¼ teaspoon dried dill weed
1 teaspoon Italian-style seasoning
6 (3/4 inch thick) center cut pork chops

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place the flour in a bowl. Combine the eggs and milk in a separate bowl, mixing together well, and then place the bread crumbs in another separate bowl. To the bread crumbs stir in the lemon pepper, parsley, garlic powder, dill and Italian-style seasoning.
  • Dip each chop into the flour, shaking off any excess flour, then dip into the egg/milk mixture, and, finally, dredge each chop liberally in the bread crumbs.
  • Lay the chops into a lightly greased 9x13 inch baking dish and pour water as needed into the dish, enough to just cover the bottom.
  • Bake for 40 minutes, then reduce heat to 325 degrees F (165 degrees C) for 20 more minutes.
