1 piece boneless fully cooked ham (16 ounces)
6 medium carrots, halved lengthwise and cut into thirds
4 medium red potatoes, quartered
2 medium onions, cut into wedges
1 bay leaf
1 teaspoon dried thyme
1 teaspoon peppercorns
1 garlic clove, halved
1/2 teaspoon whole allspice
1/2 medium head cabbage, cut into wedges

Steps:

  • Place the ham, carrots, potatoes and onions in a Dutch oven. Place the bay leaf, thyme, peppercorns, garlic and allspice on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string. , Add to pan. Add water just to cover the ham and vegetables; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Add cabbage; cover and simmer 15-20 minutes longer or until vegetables are tender; drain. Discard spice bag.

The hearty, homey flavor makes for such a perfect comfort food that your family will never notice that all those veggies are good for them. The nutritional information is going to be off because the veggie amounts are sized for 6-8 servings, but the ham will leave you with plenty of leftovers to use in the many wonderful dishes that call for ham. Use any, all, or none of the optional veggies according to availability and personal taste.

8 -12 lbs half ham or 8 -12 lbs smoked pork shoulder
6 -8 small onions, peeled
6 -8 small red potatoes, scrubbed
6 -8 carrots, peeled and cut in chunks
2 -3 parsnips, peeled and cut in chunks (optional)
1 -2 celeriac, bulbs peeled and cut in chunks (optional)
1 -2 turnips (optional) or 1 -2 rutabaga, peeled and cut in chunks (optional)
1 medium cabbage, cut in 6-8 wedges
12 -15 whole cloves
fresh ground black pepper
butter (optional)
cold water

Steps:

  • Remove the ham from its wrappings. Cut off the skin and make sure you remove the plastic thing that covers the end of the bone.
  • Stud the ham with the whole cloves, distributing them evenly over the surface.
  • Put ham and onions into a very large pot and cover with COLD water. Its important to use cold water because it draws the excess salt out of the meat and makes a more flavorful broth.
  • Bring to a boil slowly over medium heat. Reduce heat and simmer 15 minutes.
  • Add all the veggies except the cabbage. Raise heat and bring to a boil again. Reduce heat and simmer another 15 minutes or until the largest potatoes are nearly cooked.
  • Add the cabbage wedges. Raise heat and bring to a boil. Simmer another 10-20 minutes until cabbage is cooked but not mushy.
  • Use a large, slotted, serving spoon to remove all the veggies to a large serving dish.
  • Lift ham onto a platter and carve off a suitable number of servings for the meal.
  • Serve each person a slice of ham and a portion of each vegetable. Grind black pepper over the plate and offer butter for the potatoes and other roots if desired.

1 bouquet garni
2 small onions, peeled

Steps:

  • The night before the gammon is to be cooked place it in a bowl of cold water and allow to soak.
  • This removes some of the salt and tenderises it a little bit.
  • Place in a large cooking pot, (make sure you have a lid for it), cover with cold water, add the onions and bouquet garni and bring to the boil.
  • Turn the heat right down so the water is barely bubbling and put on the lid.
  • Cook for 20 minutes per pound of meat.
  • Once the cooking time is up leave the meat in the liquour until cooled.
  • This stops it tensing up, and drying out, and makes it lovely and tender.

Grandma loved this boiled dinner with ham hocks. I use ham or corned beef when I make it but I want to post the original for the cookbook I am working on. If you like old fashioned ham hocks you might like this one.

6 potatoes (peeled and quartered)
6 carrots (cut into 2 inch lengths)
2 onions, quartered
1 tsp garlic salt
3 lb ham hocks, corned beef, or ham
2 tsp dill seed
1/2 tsp pepper
1 qt beef broth
1 large cabbage quartered, and cut in half

Steps:

  • 1. In a 5 to 6 quart stock pot, combine potatoes, carrots, onion, and garlic. Place the meat on top of the vegetables; sprinkle with dill seed and pepper. Pour the broth over the all. Meat should be covered. Add water, if needed to raise level of liquid.
  • 2. Cover and cook on simmer for 2-2 1/2 hours. Watch level of liquid while cooking to keep all ingredients in simmering liquid. Meat should be almost done, if so add cabbage. (Otherwise cook a bit longer before adding cabbage.) Cook 30-40 minutes more until meat and cabbage are done.

1 cup brown sugar
1/2 cup yellow mustard
1 (2 liter) bottle carbonated lemon-lime beverage
1 (1 3/8 liter) can pineapple juice

Steps:

  • Place the ham in a pot large enough to hold it without it sticking up out of the liquid you are going to add. (If you are using a boneless ham please pierce it with a fork several times to allow the flavor to get inside the meat).
  • To the pot add the lemon lime soda, pineapple juice, mustard and brown sugar. Stir to dissolve the sugar.
  • Bring to the boil and reduce heat to a simmer.
  • Cook at least 2 hours - longer is better.

  • Preheat oven to 350 degrees F (180 degrees C). Grease 2 baking sheets with cooking spray.
  • Combine ham, Gouda cheese, and hard-boiled eggs in a bowl; mix well.
  • Arrange pastry disks on a flat surface; dab a little water around the rims. Place a large tablespoonful of ham and cheese mixture in the center; fold pastry over and press edge with a fork to seal well.

2 slice bacon (chopped)
1 onion (chopped)
2 Tbsp butter
1/4 c flour
1/2 tsp rosemary, dried
1 tsp dill, dried
salt and pepper
5 cooked potatoes
1 c cooked carrots, diced
1 c cooked parsnips, diced
8 c chicken broth
1 cup cooked diced ham
1/2 c cream or milk
1/2 c shredded chedder cheese (for garnish)

Steps:

  • 1. render bacon on large pot and add onion and cook till onion is almost carmelized, add butter and flour and cook til golden in color
  • 2. add spices
  • 3. add Chicken stock, potatoes, carrots and parsnips. mash or use emersion blender to break down veggies
  • 4. cook to a boil and then add cooked ham cook 5 min to heat though
  • 5. remove from heat and stir in cream.
  • 6. serve and top with 1 to 2 Tbls. cheese
  • 7. serve with chedder biscut...yummy

6 medium carrots, peeled and cut into3/4-inch lengths
1 large onion, peeled and cut into 1/2-inch cubes
1 bay leaf
2 ham hocks
7 cups chicken broth, homemade or low-sodium canned
Crushed red pepper flakes to taste
2 teaspoons minced cilantro

Steps:

  • Combine the turnips, carrots, onion, bay leaf, ham hocks and chicken broth in a large pot. Bring to a boil. Reduce to a simmer and cook until vegetables are tender, about 30 minutes.
  • Remove the ham hocks from the broth. Remove the meat from the bone, trim of all fat and cut into thin strips.
  • Ladle the broth and vegetables into soup bowls. Divide the meat among the bowls. Garnish each bowl with some pepper flakes and cilantro. Serve immediately.

1/2 pound fresh mushrooms, sliced
1/4 cup butter, divided
1 cup dry bread crumbs
1-1/2 pounds cubed fully cooked ham
4 hard-boiled large eggs, chopped

Steps:

  • In a saucepan, combine flour and milk until smooth; stir in mushroom soup. Bring to a boil; cook and stir for 2 minutes or until thickened. In a skillet, saute mushrooms in 2 tablespoons butter until tender. Add to the sauce. In the same skillet, brown bread crumbs in the remaining butter., In a greased 2-qt. baking dish, layer half of the ham, eggs and buttered bread crumbs.   • 1. Place the pork into a large pot and fill with enough water to cover. Season with salt and pepper, cover and bring to a boil. Reduce heat to low and simmer for about 45 min to an hour. 2. Add the carrots and simmer for an additional 15 minutes. 3. Add the onion and potatoes and simmer an additional 10 minutes. 4. Remove the pork to let cool a little and add the cabbage and simmer an additional 15 minutes. 4. Cut the pork into pieces. Return pork to pot until ready to serve. Season with more salt and pepper if needed.

1-1/2 lb fillet of ham
1 curly leaf cabbage
1 meduim turnip
1 meduim white onion (chopped)
6-8 roosters potatoes
1 tsp butter
1 Tbsp olive oil
GLAZE FOR HAM
2 Tbsp honey
1 pinch ground clove
8-10 whole cloves
FOR PARSLEY WHITE SAUCE
4 Tbsp butter
5 Tbsp plain flour
pinch salt and while pepper
2 c full fat milk
1 Tbsp dried parsley

Steps:

  • 1. Fill a heavy bottom pot half way up with cold water, over a medium heat. place in the fillet of ham and leave to simmer for 45 minutes ,
  • 2. prepare the cabbage, wash and sliced not too thinly . peel ,chopped the onion and place cabbage and onion into pot along with the simmering ham for the remaining 15 minutes.
  • 3. When the ham is cooked turn off the heat, and lift out the ham . place the ham into oven dish , let cool for few minutes so you can work with it. score top of ham with a sharp knife, mix honey and ground clove to make a glaze and rub all over the ham. Push the cloves into the skin randomly, place the ham into the oven to roast at 180c/375f for 30 minutes .
  • 4. The ham water can be saved to make a stock for a delicious soup ,or freeze a little ham water in a tub to cook with the Brussels spouts for Christmas dinner adds a fantastic flavour . Set aside the cooked cabbage and onion ,will reheat later
  • 5. wash ,peel potatoes and turnip . cut potatoes into halfs and turnip chopped to smallest pieces , place turnip in bottom of the steamer pot , with another connection pot place potatoes on top and steam for 20 minutes over high heat until potatoes are soft and floury. once cooked take off heat, smash the potatoes up with some butter, and same with the turnip but add a little cracked black pepper also.
  • 6. Take ham out of oven leave to rest ,while you start on the parsley sauce: melt the butter in a small pot, over medium heat whisk in the flour ,salt & pepper to make a roux. add the milk & parsley whisk until smooth, stay with it until it thickened .
  • 7. put the cooked cabbage and onion into a frying pan over medium heat ,add olive oil and fry up to reheat for 5 minutes. slice down the cooked ham and start to plate up and enjoy...:)

One 13- to 15-pound uncooked Virginia ham

Steps:

  • Three days before cooking, scrub the ham with a stiff brush under cold running water. When the moldy outer covering has been scrubbed off, rinse the ham well and then place in a large pot. Cover with cold water and set aside in a cool place to soak for 3 days, changing the water daily.
  • When ready to cook, drain the ham and cover with fresh cold water. Cover the pot and bring to a boil. Watch the pot closely, and the minute the water nears a boil, turn down the heat to a bare simmer. Cook the ham for about 5 hours, watching to make sure the water stays at a low simmer. After 4 1/2 hours, check the ham to see if the skin is bubbled and soft. If not, return it to the pot.
  • When the ham is done, cool it in a shallow pan. When cool enough to handle, remove the skin with a sharp knife. Also trim a bit of the fat, but leave a thin coating to keep in the moisture. Cut into very thin slices and serve with freshly baked biscuits spread with butter or mustard, such as honey mustard.

How to make Fall Apart Boiled Ham

Servings 6 - 8
1 large bone in Shoulder Ham (at least 3 lbs)
2 Onions in quarters
3 sticks of Celery roughly chopped
2 Apples in quarters
5 - 8 Cloves of Garlic smashed
2 Bay Leaves
A few Peppercorns
Pinch or two of Salt

Steps:

  • Rinse the Ham well and put it in a big pot. Big enough so that all or at least most of it can be covered by the liquid.
  • Throw in all the other ingredients into the pot and fill with the liquid until the Ham is covered or almost covered. Water or whatever liquid you choose.
  • Bring the works to a boil and lower the heat so its simmering.
  • Let it simmer for 3 - 4 hours or till you cant stand to smell the goodness anymore.
  • Pull the Ham out of the pot, pull it apart, cut the fat off and slice or pull it into pieces.
  • Serve it up and watch the ham melt in your mouth! So good!
