My kids love them, they all ways want me to make them. I drizzle them with melted chocolate and vanilla-flavored candy coating. Delicious!

½ cup butter or margarine
1 cup white sugar
⅓ cup unsweetened cocoa powder
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
¾ teaspoon baking powder
¼ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
  • Melt butter in medium sauce pan. Remove from heat, and stir in sugar and cocoa. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the chocolate mixture until just blended. Fold in walnuts, if desired. Spread the batter evenly into the prepared pan.
  • Bake for 25 minutes in the preheated oven, or until a wooden pick inserted into the center comes out clean. Cool in pan on a wire rack.

Beautiful individual chocolate brownie cakes with a dollop of softly whipped cream and extra fruit for garnish

175g butter , chopped, plus extra for greasing
200g dark chocolate , chopped
250g soft light brown sugar
1 tsp vanilla extract
85g plain flour
50g cocoa powder , plus a little extra to serve
¼ tsp baking powder
3 large eggs , beaten
200g cherry , halved and stoned, plus 12 with stalks attached, to serve (optional)
double cream , to serve (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter 12 holes of a deep muffin tray and line each hole with a strip of baking parchment - this will help you lift out the brownies later (or line 16 holes of 2 trays with muffin cases). Put the butter, 150g of the chocolate, sugar and vanilla in a heatproof bowl, suspended over a pan of barely simmering water. Heat gently, stirring now and again until melted, then remove from the heat and leave to cool for a few mins. Meanwhile, sift the flour, cocoa, baking powder and a good pinch of salt together in a large bowl.
  • Add the warm, melted chocolate mixture, the eggs, cherries and the remaining 50g chocolate to the dry ingredients, then mix until just combined. Divide the mixture between the holes of the muffin tray/cases, making sure each one gets a few pieces of cherry. Bake for 18 mins until cooked but still gooey in the centre - they will continue cooking a little as they cool down. Leave to cool for 30 mins in the tin before transferring to a wire rack to cool completely, or eating warm with a dollop of cream, a dusting of cocoa and extra cherries on top, if you like.

2 ounces unsweetened chocolate
3/4 cup whole wheat flour
3/4 teaspoon baking powder
1/4 teaspoon salt
2 eggs
3/4 cup honey
1/2 cup unsweetened coconut, shredded
1/2 cup pecans, chopped

Steps:

  • Heat oven to 325°F Butter 8-by-8-inch baking dish; set aside.
  • In saucepan, melt butter and chocolate together, or microwave in microwave-safe bowl until smooth.
  • In small bowl, whisk together flour, baking powder and salt. Set aside.
  • In large bowl, beat eggs until frothy. Gradually beat in honey. Beat in small amount of chocolate mixture, then gradually beat in remaining chocolate mixture.
  • Add flour mixture and beat until smooth. Stir in coconut and pecans.
  • Pour batter into prepared dish and bake for 25 to 30 minutes, or until toothpick inserted in center comes out clean. Cool completely before cutting.

4 ounces unsweetened chocolate squares
4 ounces semi-sweet chocolate baking squares
1/3 cup butter
6 ounces cream cheese, softened
2 cups sugar, divided
6 large eggs, divided
1 teaspoon vanilla extract
2 tablespoons flour
9 ounces semi-sweet chocolate chips, divided
2 teaspoons vanilla extract
1 cup flour
1 teaspoon baking powder
1 teaspoon salt
1 cup whipping cream
8 ounces semi-sweet chocolate chips
1/2 cup butter
1 cup light brown sugar
1/2 cup whipping cream
1/2 teaspoon vanilla extract

Steps:

  • Microwave first 3 ingredients until melted. Cool slightly.
  • Beat cream cheese and 1/4 cup butter at medium speed until creamy. Gradually add 1/2 cup sugar. Add 2 eggs, 1 at a time. Stir in 1 teaspoon vanilla. Fold in 2 tablespoons flour and 1/2 cup chocolate morsels.
  • In a separate bowl beat remaining four eggs and add 1 1/2 cups sugar. Add melted chocolate mixture and 2 tsp vanilla. Add 1 cup flour, baking powder, and salt. Stir in remaining 1 cup chocolate morsels.
  • Reserve 3 cups of chocolate batter. Pour remaining chocolate batter into a 13 X 9 inch greased pan. Pour cream cheese batter over this. Top with remaining chocolate batter. Swirl with knife.
  • Bake at 325 degrees for 40 to 45 minutes until toothpick comes out clean.
  • Serve with caramel and chocolate sauce. Spread a thin layer of caramel sauce on bottom of plate. Place brownie square in center. With chocolate sauce squirt dots around brownie. Using a toothpick pull through to make a swirl design.
  • Chocolate Sauce: Bring cream to boil in heavy sauce pan. Remove from heat. Add chocolate and stir until melted. Place in squirt bottle to swirl into caramel sauce.
  • Caramel Sauce: Melt butter in heavy sauce pan over medium heat. Add sugar and stir constantly. After mixture boils, add cream and vanilla. Remove from heat.
