Steps:
- In baked pie crust add sliced strawberries.
- In small saucepan, mix water, sugar, and cornstarch and bring to boil. Boil until mixture is clear and thick, approximately 2 minutes.
- Remove saucepan from heat and add the strawberry gelatin, stirring until dissolved. Pour this over the strawberries in pie shell. Chill and serve.

- Blend together cornstarch and sugar. Combine in saucepan with water. Cook, stirring until thick 3 to 5 minutes. Remove from heat. Add gelatin. Stir until dissolves. Mix berries in gelatin before placing in pie shell. Pour into pie shell let chill 2 or 3 hours. Garnish with whipped topping.

- Filling: In a medium sized sauce pan combine sugar, cornstarch, and water until creamy. Cook over a medium to a medium high heat until the mixture becomes thick 3-5 min. When this mixture becomes thick remove from heat add gelatin. Stir until dissolves. Wash, and cut strawberries into quarters, or smaller depending on how large they are. Mix berries with jello mix and place in pie shell. Chill 2-3 hours. Serve with plenty of Whipped Cream.
GRANDMA'S BIG BOY STRAWBERRY PIE
In searching the recipes already posted, I see they are very similar. However, this uses less filling with the strawberries- which really allows the freshness to shine.

- Slice berries into shell. Pour jello mixture over berries. Chill.
- Serve with whipped cream, as desired.

This pie not only looks beautiful but is very delicious. My non-diabetic family wants me to make it every day. Came from diabetic-recipes.com... I love strawberry pie and was looking for a recipe I could use. Be sure to use the directions in this recipe and not those on the jello box. And fresh strawberries work a lot better then frozen. - Place boiling water in large bowl. Stir in Jello till dissolved. Chill until slightly set-- about 10- 20 minutes.
- Stir in strawberries Chill another 10 minutes.
- Fold in yogurt.

BOB'S BIG BOY STRAWBERRY PIE FOR DIABETICS
I loved Bob's Big Boy restaurants growing up in Southern California. This was one of their signature dishes & I tweaked it for us diabetics! NOTE: You can cut the Splenda/sugar blend to 2/3 C if the filling is too sweet for you.

Steps:
- 1. Blend together in a sauce pan the Splenda/sugar blend & corn starch
- 2. Add the water, and stir till dissolved
- 3. Cook until thick, stirring constantly, about 3 to 5 minutes
- 4. Add the jello
- 5. Stir till the jello completely dissolves
- 6. Dump in the strawberries, and stir to combine
- 7. Fill each pie shell evenly
- 8. stick them in the fridge for 4 hours
- 9. Whip the heavy whipping cream with the Splenda/sugar blend and vanilla until stiff peaks form
- 10. Cover each pie evenly with the whipped cream
- 11. Serve
