This recipe is something I came up with as a quick fix to my sweet tooth one lazy weekend afternoon. So yummy and quick!

Number Of Ingredients 6

4 tablespoons whole wheat flour
4 tablespoons Splenda sugar substitute
2 tablespoons brown sugar
1 teaspoon baking powder
1 -2 tablespoon fresh blueberries
5 tablespoons nonfat milk

Steps:

  • Take a coffee mug and add the flour, splenda, brown sugar and baking powder. Mix the ingredients together.
  • Add the milk and stir. Continue adding more milk and stirring until it looks like cake batter.
  • Add a handful of blueberries and stir them inches.
  • Place mug in the microwave.
  • Microwave on high for 2-3 minutes, depending on your microwave's wattage. I sometimes microwave for 1.5 minutes and cake comes out with a nice sauce.
  • Enjoy!

3 tablespoons all-purpose flour
2 tablespoons cocoa powder
3 tablespoons sugar
¼ teaspoon baking powder
3 tablespoons vegetable oil, or canola oil
¼ cup milk
3 tablespoons chocolate chips
whipped cream, to serve
blueberry, to serve
raspberry, to serve
fresh mint, to serve

Steps:

  • Spray the inside of a microwave-safe ceramic mug. Add in flour, cocoa powder, sugar, and baking powder. Mix to combine.
  • Add the vegetable oil, milk, and stir until smooth. Stir in the chocolate chips.
  • Microwave on high for 1 minute 30 seconds. Let cool completely.
  • Top with whipped cream, sprinkle on fresh blueberries, raspberries, and mint.
  • Enjoy!

Blueberry and white chocolate make the perfect couple in our dessert for two that can be ready in 8 minutes.

1/3 cup Original Bisquick™ mix
1/4 cup granulated sugar
3 tablespoons plus 1 teaspoon milk
3 tablespoons vegetable oil
1/4 teaspoon vanilla
1 egg
1/4 cup fresh blueberries
1/4 cup white vanilla baking chips
Fresh whipped cream, if desired

Steps:

  • In medium bowl, beat Bisquick mix, sugar, milk, oil, vanilla and egg until just a few small lumps remain. Divide batter evenly into 2 ungreased mugs.
  • Top each mug with blueberries and chips (do not stir).
  • Microwave both mugs at the same time uncovered 2 1/2 to 3 minutes or until cakes are done and toothpick inserted in center comes out clean.
  • Cool slightly; top with whipped cream and more blueberries just before serving, if desired.
