Steps:
- Preheat oven to 400 degrees.
- Arrange sliced apples on a baking sheet and drizzle honey over them. Bake at 400 degrees for 10-15 minutes until apples are moist and tender.
- Remove apples from the oven and lower the oven temperature to 350 degrees.
- In a large bowl, mash bananas and brown sugar until creamy, don't worry if there are a few lumps.
- Add the apple sauce and eggs and beat with a whisk until well combined.
- Add the flour, almond meal, baking powder, cinnamon, nutmeg, and ginger; use a spatula to fold together.
- Grease the cake pan with melted butter and arrange one layer of apple slices on the bottom of the pan.
- Pour half the banana batter into the pan, and arrange a second layer of apples around the outside edges.
- Spoon frozen blueberries into the center area of the cake and gently cover with the remaining batter.
- Bake the cake in 350 degree oven for about 1 hour; check it at 45mins.
- Serve with natural yoghurt and a drizzle of honey.

BLUEBERRY SURPRISE FRENCH TOAST CASSEROLE
This gem comes from the Turkey Run Inn at the Turkey Run State Park in Indiana. Perfect make ahead dish for a special holiday breakfast or brunch. Prep time does not include overnight chill time.

Steps:
- Place half of the bread cubes over the bottom of a well-buttered 13x9x2-inch baking dish.
- Sprinkle cream cheese and blueberries over bread cubes.
- Arrange remaining bread cubes over blueberries.
- In a large mixing bowl, beat eggs with a rotary beater, beat in milk and the 1/2 cup syrup.
- Carefully pour egg mixture over the bread mixture.
- Cover and chill in the refrigerator for 2 to 24 hours.
- Bake, covered, in a 375 oven for 25 minutes.
- Uncover and bake about 25 minutes more or till a knife inserted near the center comes out clean, and topping is puffed and golden brown.
- Let stand for 10 minutes before serving.
- Serve warm with blueberry-flavored or maple syrup.
- NOTE: To dry bread slices, arrange bread in a single layer on a wire rack, cover loosely and let stand overnight.
- Or cut bread into 1/2-inch cubes, spread in a large baking pan.
- Bake, uncovered in a 300 oven for 10 to 15 minutes or till dry, stirring twice, cool.
BLUEBERRY BANANA SURPRISE
The ingredients in this may sound strange together but it's actually a light and refreshing dessert. My Mom always made it to take to church potluck dinners and it was always a hit. I needed a quick dessert that would feed a crowd and this one was perfect. My husband is a choc-aholic even likes this one! Origination unknown.

Steps:
- For crust: mix graham crackers crumbs, melted margarine and 1/4 cup sugar in a 9x13 glass pan. Press into the bottom of the pan to make a crust. Chill in the refrigerator while making the topping. (Note: You may need to add a little more melted margarine if the crumbs appear to be too dry, however, you don't want the crust to be greasy.).
- In a deep bowl, mix cream cheese, Dream Whip, milk and 1/2 cup sugar with a hand mixer until smooth.
- Pour cream cheese mixture over crust.
- Slice bananas in 1/4 inch slices and cover cream cheese mixture. (You may need more than 3 bananas if they are small.).
- Pour blueberry pie filling over bananas and spread evenly.
- Chill until ready to serve.

This recipe came from my son's mother-in-law, Trudy Rawls. My husband is a big time blueberry lover, so he made sure we got this recipe. You could use any other flavor pie filling. But around my house, it has got to be blueberry.

- 1. Preheat oven to 350 degrees. Mix the crust ingredients together and press into a greased 9 x 13 inch pan. Bake at 350 degrees until crisp, about 10-12 minutes.
- 2. Mix together cream cheese, confectioner's sugar, and Cool Whip. Spread over the prepared crust
- 3. Gently and evenly top with the blueberry pie filling. Refrigerate until set and ready to serve.

Uncover and bake about 25 minutes more or until a knife inserted near the center comes out clean, and topping is puffed and golden brown. Let stand for 10 minutes before serving. Serve warm with blueberry-flavor or maple syrup.
BLUEBERRY SURPRISE PIE
Always a hit and the only cooking involved is baking the crust. Or use a graham cracker one and don't cook at all!

- 1. Beat together cream cheese and sugar until fluffy.
- 2. Gently fold the cool whip into the cream cheese mixture.
- 3. Slice bananas into the bottom of the cooled pie crusts.

Steps:
- 1. In a bowl, combine all dry ingredients. In another bowl combine oil, beaten egg and milk.
- 2. Add to dry ingredients and stir only to combine. Fold in blueberries.
- 3. Soften cream cheese and whip. Add powdered sugar and whip until fluffy.
- 4. Mix flour, sugar, cinnamon and butter with a fork. Place paper liners in 12 muffin tins. Fill 1/3 of batter then add 1/2 teaspoon of the filling.
- 5. Add enough batter until liner is almost full. Sprinkle with 1 teaspoon topping.
- 6. Bake at 350 for 20-25 minutes.
