2 tablespoons sugar
2 tablespoons brown sugar
1 tablespoon cornstarch
1/2 cup water
1 tablespoon lemon juice
2 cups sliced peeled fresh peaches
1 cup blueberries
TOPPING:
1 cup all-purpose flour
1/4 cup sugar
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 cup butter, softened

Steps:

  • In a saucepan, combine first five ingredients. Bring to boil, stirring until thick. Add fruit and pour into a 2-qt. baking dish. For topping, combine flour, sugar, baking powder and salt in a bowl. Stir in milk and butter. Spread over fruit mixture an bake at 375° for 50 minutes or until topping is golden brown and tests done. Serve warm.

1 cup frozen blueberries
¾ cup all-purpose flour
½ cup white sugar
1 teaspoon baking powder

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x9-inch glass baking dish.
  • Pour peaches into the prepared dish, and sprinkle the blueberries over the peaches. In a bowl, whisk the flour, sugar, and baking powder until thoroughly combined. With a pastry cutter, cut the butter into the flour mixture to make a crumble, and spread the crumble mixture over the fruit.

2 3/4 pounds peaches, halved lengthwise, pitted, and cut into 3/4-inch-thick wedges (about 8 cups)
1 cup blueberries, (about 1/2 pint)
2/3 cup granulated sugar
3 tablespoons cornstarch
2 tablespoons packed light-brown sugar
1 tablespoon freshly squeezed lemon juice
1 teaspoon finely grated, peeled fresh ginger
Salt
2 cups all-purpose flour
2 teaspoons baking powder
1/2 cup cold unsalted butter, (1 stick), cut into small pieces
1 vanilla bean, halved lengthwise
1 cup plus 2 tablespoons heavy cream, plus more for brushing
Sanding sugar, for sprinkling

Steps:

  • Preheat oven to 375 degrees. with racks in upper and lower thirds. Stir together peaches, blueberries, 1/3 cup granulated sugar, the cornstarch, brown sugar, lemon juice, ginger, and a pinch of salt in a large bowl. Transfer to a 12-by-8 1/2-inch (2-quart) baking dish; set aside.
  • Whisk flour, baking powder, 1/2 teaspoon salt, and remaining 1/3 cup granulated sugar in a medium bowl. Cut butter into flour mixture using a pastry blender or 2 knives to form clumps that are no larger than small peas.
  • Scrape vanilla bean seeds into the cream; stir with a fork to combine. Discard pod. Add cream mixture to flour mixture; stir until a soft, sticky dough forms. Divide dough into 10 equal pieces; arrange over filling. Brush dough with cream, and sprinkle with sanding sugar.
  • Place a parchment-lined baking sheet on bottom rack of oven to catch juices. Bake cobbler on top rack directly over the baking sheet until topping is golden brown and juices are bubbling, 55 to 70 minutes. If topping is browning too quickly, cover loosely with foil. Let cool on a wire rack 1 hour before serving.

Quick & easy to put together for a last minute dessert. Served warm with Ice Cream it is comfort food desert at it's best. Got the recipe off a box of Bisquick years ago and tweaked it to my personal tastes.

1 cup milk
1/2 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1/2 cup butter, melted

1 (29 ounce) can peach pie filling
1/2 cup fresh blueberries, if using frozen, do not thaw
1 tablespoon cinnamon sugar

Steps:

  • Preheat oven to 375; 350 for glass.
  • While oven is preheating, put butter in 8 x 8 x 2 pan, place pan in oven to melt the butter. Keep close watch so that it doesn't burn.
  • Mix together Bisquick, Milk, Nutmeg and Cinnamon.
  • Remove pan with melted butter from oven, pour batter over melted butter. Stir Lightly just to mix all together.
  • Pour Peach Pie filling evenly over batter mixture and then sprinkle Blueberries over top of Peach Pie Filling, DO NOT STIR!
  • Sprinkle Cinnamon Sugar over the top of everything, if you need more than one TBSP it is ok, but be careful that the cinnamon doesn't overwhelm the taste the fruit.
  • Bake for 45-55 minutes or until golden brown.

Summer is the best time of the year because fresh, organic, local fruit is so readily available! This is a recipe I put together trying to stay with clean foods, local fresh fruit, and nut flour. I do not eat gluten free, but I love the way nut flours work in baked good. So this one is made using almond flour rather than wheat flour (but wheat would work fine) and I used very ripe fruit so didn't need all the sugar in other recipes. Turned out delicious! A definite keeper!

3 cups fresh peaches
1 cup fresh blueberries
2 teaspoons cinnamon
1 tablespoon cornstarch
1/3 cup sucanat or 1/3 cup white sugar
1 teaspoon baking powder
2/3 cup almond flour or 2/3 cup flour
1/4 cup butter
1/4 cup hot water

Steps:

  • Bring a large pot of water to boil, and have a large bowl with cold (ice) water standing by. Drop the peaches into the boiling water one a time. Keep them in there for no more than a minute, then take out and immediately put into cold water. The skins will slide right off!
  • Slice peaches into a prepared baking dish. Add blueberries. Mix 1 tsp of the cinnamon and all of the cornstarch. Note, I do not add additional sweetener to the fruit, but you might want to if they are not ripe, or not in season.
  • Melt the butter and let it cool a bit. Mix together the baking powder, the additional cinnamon, sucanat (which is dried sugar cane juice and is AWESOME), almond flour (or you can go half almond flour with wheat flour, or just go with wheat flour), and butter. Add the hot water until it is the conisistency of a sweet bread batter. Pour over your fruit and bake at 425 for 30-40 minutes or until the top is golden brown.

1 cup blueberries

1 lemon zest
1 vanilla bean, split lengthwise and seeds scraped
4 cups blueberry

2 cups all purpose flour, plus more for dusting
¼ cup granulated sugar
2 tablespoons baking powder
1 teaspoon kosher salt
1 stick unsalted butter, frozen

  • Make the filling: In a large bowl, whisk together the sugar, flour, salt, lemon juice and zest, and the vanilla bean seeds.
  • Add the blueberries and peaches and use a spatula to toss until well coated.
  • Transfer the filling to a 10-inch (25 cm) cast-iron skillet. Refrigerate until ready to top.

1/4 cup bourbon (or dark rum)
1/4 cup sugar

1 teaspoon fresh lemon juice
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 cup rolled oats
1/2 cup sugar

1 quart good-quality vanilla yogurt, for serving

  • Start a campfire and wait until the flames die down and the coals glow red with white ash. Meanwhile, make the filling: In a large bowl, combine the peaches, blueberries, bourbon, sugar, cornstarch, cinnamon, lemon zest, lemon juice and vanilla. Mix well to coat the peaches and blueberries evenly. Set aside.

  • Pour the filling into a 12-inch cast-iron skillet or Dutch oven with a fitted lid and spread it out evenly. Spoon the topping mixture evenly over the filling, then cover with the lid. Place the skillet adjacent to the hot coals in a place where it will get a good amount of radiant heat so the topping cooks through evenly without burning. Use a metal shovel to pile hot coals on top of the lid (this will distribute heat from the top). Cook 45 to 50 minutes, rotating the skillet 90 degrees every 10 minutes so the cobbler cooks evenly. (Feed the fire with more wood as needed.) Change out the hot coals on top 2 or 3 times during cooking so the top stays hot throughout. When the cobbler is done, the fruit will be bubbling around the edges and the topping will be light and fluffy. Serve the cobbler straight from the pan with vanilla yogurt on the side.
  • You can also bake the cobbler, uncovered, in a 375 degrees F oven, 30 to 35 minutes.

1/2 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 tablespoon cornstarch
3 large peaches, peeled, pitted, and cut into 1/2-inch thick wedges
2 1/2 cups blueberries
1 tablespoon fresh lemon juice
Lemon zest, optional
1 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 tablespoons sugar
3/4 teaspoons salt
6 tablespoons cold unsalted butter, cut into small pieces or grated
1/2 cup buttermilk

Steps:

  • Preheat the oven to 400 degrees F.
  • For the filling:
  • In a large mixing bowl, combine the sugar, cinnamon, salt, and cornstarch. Add the peaches, and blueberries, and mix, coating the fruit evenly with the sugar mixture. Toss with the lemon juice and zest, if desired. Put the fruit filling in a cast iron skillet and place in the oven for 15 to 20 minutes. In the meantime, make the biscuit dough.
  • For the topping:
  • Whisk the flour, baking powder, baking soda, sugar, and salt in a large mixing bowl. Using a food processor, a pastry cutter, or your fingertips incorporate the chilled butter into the dry ingredients until the mixture resembles coarse meal. Add the buttermilk and stir just until moistened.
  • Carefully remove the skillet from the oven, and drop 6 to 8 (1/2 cup) portions of biscuit dough on top of the cooked fruit, spacing the mounds about a 1/2-inch apart.
  • Increase the oven temperature to 425 degrees F and bake until the biscuits are golden brown on top and the fruit is bubbling, about 30 minutes. Allow to cool for 15 minutes before serving.

1/4 cup unsalted butter
1 cup all purpose flour
2 cups sugar, or 1 cup of Splenda for Baking
3 teaspoons baking powder
pinch salt
1 cup buttermilk
1/4 cup (about)milk
4 cups peeled, pitted and sliced fresh peaches (about 6 medium)
1 cup fresh or frozen blueberrys
1 tablespoon fresh lemon juice
several dashes ground cinnamon or nutmeg

Steps:

  • Preheat oven to 375 degrees Spray an 8 in square baking dish with Pam. Melt the butter in the baking dish in the oven. In a medium bowl comibine the flour, 1 cup of regular sugar, or 1/2 cup Splenda Sugar for Baking, the baking powder, and the salt and mix well. Stir in the buttermilk until just combined. Add the regular milk a little at a time to get a thick pancake like batter. Pour this batter over the melted butter but do not stir them together. In a saucepan, combine the peaches, lemon juice and the remaining sugar, or Splenda and bring to a boil over high heat, stirring constantly. Taste for sweetness, adding more sugar or Splenda if necessary. Stir in the the blueberries. Add the cinnamon or nutmeg. Pour the hot fruit over the batter but do not stir them together. Bake in the preheated oven for 40 to 45 minutes or until top is golden brown. If using a convection oven adjust time to 25 to 35 minutes. Server warm with vanilla ice cream or bourbon *creme fraiche. Bourbon Creme Fraiche: In a small mixing bowl place one dollop of creme fraiche for each serving. I use a regular teaspoon size serving spoon, not a measuring spoon. Add in a cap full of bourbon, a dash of vanilla and a little Splenda or sugar to taste. Wisk by hand until soft peaks form (like whipped cream). Serve a dollop over each portin of warm cobbler. *Creme Fraiche can be found at Trader Joe's near the cream cheese. If you can't find it you can subsitute sour cream.

DUMPLINGS:
1 cup (rounded) all-purpose flour
2 tablespoons sugar
1-1/2 teaspoons baking powder
1/8 teaspoon salt
1 teaspoon grated lemon zest
1/4 cup butter
1/2 cup heavy whipping cream or evaporated milk
Vanilla ice cream, optional

Steps:

  • In a 1-1/2-qt. baking dish, combine peaches, sugar, tapioca and lemon juice. Sprinkle blueberries over top. Sprinkle with nutmeg; set aside. , For dumplings, combine first five ingredients in bowl; cut in butter with a pastry blender until mixture resembles cornmeal. Add cream or milk; stir until dough is mixed and moistened. Drop by tablespoonfuls over fruit mixture. Sprinkle nutmeg over dumplings., Bake at 400° for 25-30 minutes or until top is golden brown. Serve warm with ice cream if desired.

1 cup blueberries (about 1/2 pt)
2/3 cup granulated sugar
3 TBSP. cornstarch
2 TBSP. packed light brown sugar
1 TBSP. freshly squeezed lemon juice
1 tsp. finely grated nutmeg
salt.
2 cups all purpose flour
2 tsp. baking powder
1/2 cup COLD, unsalted butter (1 stick) cut into small pieces
1 tsp. vanilla
1 cup plus 2 TBSP. heavy cream, plus more for brushing
Turbinado sugar for sprinkling

Steps:

  • Preheat oven 375 degrees with racks in upper and lower thirds. Stir together peaches, blueberries, 1/3 cup sugar, cornstarch, brown sugar, lemon juice, nutmeg, & pinch of salt in large bowl. Transfer to 12"x8 1/2" (2+QUART) baking dish; set aside. Whisk flour, baking powder, 1/2 tsp. salt and remaining sugar in medium bowl. Cut butter into flour mixture, using pastry blender to form clumps no larger than small peas. Add vanilla and cream. Stir until soft, sticky dough forms. Divide into 10 pieces and arrange over filling. Brush dough with extra cream and sprinkle with turbinado sugar. Place lined baking sheet on bottom rack of oven to catch juices. Bake cobbler on top rack directly over baking sheet until topping is golden brown and juices are bubbling, 55-70 minutes (mine took about 70 min.) If browning too quickly, cover loosely with foil. Let cool 1 hour before serving.
