This is one great tasting salad I enjoy making one time a year: when the blueberries are in season. It's pretty much the only thing I make with blueberries, since they are expensive. A pretty colored salad! This is a great salad to have for the 4th of July.

1 (3 ounce) package lime flavored Jell-O® mix
1 tablespoon sugar
2 tablespoons lime juice
1 ½ cups boiling water
1 (8 ounce) container frozen whipped topping, thawed
1 pint fresh blueberries

Steps:

  • In a medium bowl, whisk together the gelatin mix, sugar, lime juice, and boiling water for one minute, or until the gelatin is completely dissolved. Cover, and chill for one hour, or until slightly thickened.
  • When the gelatin mixture is thick, whip with a whisk or electric mixer until light in color, and double in volume. Whisk in whipped topping, and fold in blueberries. Lightly grease a 5 or 6 cup gelatin mold, and fill with the gelatin mixture. Chill for 4 hours, or until firm. Carefully unmold onto a platter, and serve.

1 (3 ounce) package lime gelatin
1 tablespoon sugar
2 tablespoons lime juice
1 1/2 cups boiling water
1 (8 ounce) container frozen whipped topping, thawed
1 pint fresh blueberries (Frozen blueberries can also be used, but be sure they're thawed and well drained first.)

Steps:

  • In a medium bowl, combine the gelatin, sugar, lime juice and boiling water, stirring until the gelatin and sugar are dissolved.
  • Chill for about 1 hour or until slightly thickened.
  • Beat the gelatin until light-colored and doubled in volume.
  • Beat in the whipped topping, then gently fold in the blueberries.
  • Pour into a 4-to 5-cup gelatin mold.
  • Cover and chill for 3 to 4 hours, or until firm.
  • Dip the mold briefly into warm water, then unmold onto a large serving platter.
