Blue Corn-Blueberry Pancakes with Orange-Honey Butter and Cinnamon Maple Syrup image

1 1/2 cups all-purpose flour
1/2 cup blue cornmeal
Pinch salt
1 tablespoon sugar
2 large eggs
1 1/2 to 2 cups milk
2 tablespoons melted unsalted butter
1 cup fresh blueberries
Bananas, peeled and sliced
Mixed berries
3 cups fresh squeezed orange juice
2 sticks butter, slightly softened
2 tablespoons honey
Pinch salt
2 cups pure maple syrup
2 cinnamon sticks

Steps:

  • Preheat non-stick griddle. Mix together the dry ingredients in a medium bowl. Beat the eggs and 1 1/2 cups of the milk in a medium bowl until combined, then stir in the melted butter. Add the wet ingredients to the dry ingredients and mix until just combined then gently fold in the blueberries. If the batter seems too thick, add some of the remaining milk. Ladle approximately 1/4 cup of the batter onto the griddle for each pancake. Cook until the bottom is light golden brown, flip over and continue cooking for about 30 seconds. Remove to an ovenproof plate and keep warm in a 200 degree oven until ready to serve. Serve 3 per person with a dollop of orange-honey butter, maple-cinnamon syrup and bananas and berries. Dust with confectioners' sugar.
  • Orange-Honey Butter: Place orange juice in a small saucepan over high heat and reduce to 3 tablespoons. Place butter in a bowl, add the orange syrup, honey and salt and mix until combined. Scoop into a large ramekin, cover with plastic wrap and refrigerate until firm, about 2 hours.
  • Cinnamon Maple Syrup: Heat syrup and cinnamon sticks over low heat for 10 minutes. Remove and let steep for 1 hour. Remove sticks and pour into a small pitcher.

1 clove garlic, minced
1/2 teaspoon kosher salt

6 cups red leaf lettuce

1 Gala apple, cored and sliced
1/4 cup red onion, thinly sliced
1/2 cup pecans, toasted

Steps:

  • Preheat grill for direct heat grilling.
  • Season chicken breasts with 1/2 teaspoon kosher salt, 1/4 teaspoon pepper and garlic powder and grill, turning once, until chicken is cooked through. Let stand 10 minutes; slice and reserve.
  • In a bowl, whisk honey, Dijon mustard, vinegar, olive oil, garlic, 1/2 teaspoon kosher salt and 1/8 teaspoon pepper until blended.

5 cups fresh or frozen blueberries, thawed
1 cup apple juice
1 package (1-3/4 ounces) pectin for lower sugar recipes
1 cup honey
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Rinse five 1-cup plastic or freezer-safe containers and lids with boiling water. Dry thoroughly., Place blueberries in a large saucepan; mash blueberries. Stir in juice and pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in honey, nutmeg and cinnamon; return to a full rolling boil. Boil and stir 1 minute. Remove from heat; stir in vanilla., Immediately fill all containers to within 1/2 in. of tops. Wipe off top edges of containers; immediately cover with lids. 2 1/2 cups blueberries, coarsely chopped (fresh or frozen)
2 1/2 cups sugar
1 cup liquid honey
1 tablespoon lemon juice
85 ml liquid fruit pectin (2 7/8 ounces approximately)

Steps:

  • Place blueberries, sugar, honey and lemon juice into a non-reactive saucepan and bring to a boil, stirring.
  • Boil hard for 2 minutes, stirring constantly.
  • Take off the heat, stir in the pectin and ladle into hot sterilized jars.
  • Seal and process in a hot water bath for 10 minutes.

1 cup water
3/4 cup sugar
1 tablespoon lemon juice
2 cups whipping cream
1/4 cup honey
1 vanilla bean, split, seeds scraped
1/4 cup water
1 envelope unflavored gelatin
1 cup whole-fat buttermilk

Steps:

  • To make blueberry sauce, in 2-quart saucepan, heat to boiling blueberries, 1 cup water and the sugar over medium heat. Stir in lemon juice. Reduce heat to medium-low; simmer 10 minutes or until sauce begins to thicken, stirring occasionally and crushing some of the berries with back of spoon. Set aside to cool to room temperature.
  • To make panna cotta, in another 2-quart saucepan, heat to boiling whipping cream, honey, vanilla bean and seeds over medium heat. Remove from heat; cover and let cream steep 30 minutes to infuse vanilla flavor into liquid.
  • When cream is steeped, in small bowl, pour 1/4 cup water; sprinkle gelatin over water. Set aside.
  • Reheat cream mixture. Remove vanilla bean and seeds; add softened gelatin. Remove from heat; beat with whisk until gelatin is dissolved. Add buttermilk; beat with whisk until blended.
  • To assemble desserts, spoon small amount of blueberry sauce in bottom of each serving glass or dish. Carefully pour panna cotta mixture over sauce. Let stand at room temperature about 20 minutes. Refrigerate 3 to 4 hours before serving.

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
  • For the blueberry filling: Add the blueberries, sugar, flour, cinnamon and lemon juice to the prepared baking dish; toss to combine. Set aside.
  • For the cobbler topping: In a medium bowl, mix the flour, sugar, melted butter, milk, baking powder, cinnamon, salt and eggs. Stir to combine, then dollop the batter over the blueberries to cover.

  • Cook Almonds
  • Preheat oven to 350 degrees
  • Place 1 tablespoon of honey, butter, and 1/2 teaspoon of olive oil in a medium oven safe pan.
  • Heat pan on the stovetop until butter is melted, stirring to combine
  • Add almonds and salt and stir to coat.
  • Spread almonds in an even layer and bake for approx 8 minutes or until golden brown.
  • Stir after the first 5 minutes.
  • Once golden spread almonds out on parchment paper to cool completely.

  • Add more honey and olive oil if too tart or add more lemon juice if too bland. Add pepper to taste.
  • Assemble Salad
  • Place arugula in a bowl with 2 tablespoons of dressing. Toss to combine
  • Scatter blueberries, goat cheese and almonds on the top. Serve immediately with extra dress to be passed.

5 cups fresh or frozen blueberries, thawed
1 cup apple juice
1 package (1-3/4 ounces) pectin for lower sugar recipes
1 cup honey
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Rinse five 1-cup plastic or freezer-safe containers and lids with boiling water. Dry thoroughly.
  • Place blueberries in a large saucepan; mash blueberries. Stir in juice and pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in honey, nutmeg and cinnamon; return to a full rolling boil. Boil and stir 1 minute. Remove from heat; stir in vanilla.
  • Immediately fill all containers to within 1/2 in. of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours.
  • Jam is now ready to use. Refrigerate up to 2 weeks or freeze up to 12 months. Thaw frozen jam in refrigerator before serving.

BLUEBERRY(OR BLACKBERRY) COBBLER WITH HONEY BISCUITS

This is a sweet and tart berry cobbler,and has plenty of yummy juice to spoon over vanilla ice cream. Adapted from Food&Wine magazine.

1 cup flour
2/3 cup finely ground cornmeal
1/4 cup white sugar, plus
1 tablespoon white sugar
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
6 tablespoons unsalted butter, cut into small pieces, chilled
2/3 cup heavy cream, plus
1 tablespoon heavy cream
6 cups blueberries (about 2 pounds) or 6 cups blackberries
2 tablespoons honey
3 tablespoons fresh orange juice
1/2 teaspoon finely grated lemon zest
1 tablespoon cornstarch
1 tablespoon brown sugar (or turbinado sugar)
vanilla ice cream, for serving

Steps:

  • Preheat the oven to 350°F In a food processor, pulse the flour, cornmeal, 3 tablespoons of the granulated sugar, the baking powder, cinnamon and salt to mix. Add the butter and pulse until the mixture resembles coarse meal. Add the 2/3 cup heavy cream and pulse just until a smooth dough forms. On a lightly floured surface, pat the dough into a ball. Flatten slightly, then roll out the dough to a 1/2" thickness. Using a floured 1 1/2" round biscuit cutter, cut out 32 rounds; pat the scraps together and reroll if necessary.
  • In a medium bowl, toss the berries with the honey, orange juice, lemon zest, cornstarch and the remaining 2 tablespoons of granulated sugar. Pour the berries into a 2-quart baking dish. Arrange the biscuit rounds over the fruit in rows so they touch but do not overlap. Brush the rounds with the remaining 1 tablespoon of cream and sprinkle with brown sugar. Bake for 50 minutes, or until the fruit juices are bubbling and thickened and biscuits are golden brown. Let cool slightly, and serve with ice cream. Enjoy!

  • The blueberry(or blackberry) cobbler can be baked 8 hours ahead and kept at room temperature.
