Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray 16 muffin cups with cooking spray or line cups with paper liners.
  • Combine 1/2 cup flour, 1/4 cup brown sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt in a small bowl. Cut butter into the flour mixture until it is crumbly. Set crumb topping aside.
  • Whisk 2 cups flour, baking powder, 1 teaspoon cinnamon, and 1/4 teaspoon salt together in a large bowl, making a well in the center. 8 tablespoons unsalted butter, room temperature
1 cup sugar plus 1 tbls. sugar
2 large eggs
1 teaspoon vanilla (use pure!)
1/2 cup sour cream
1/2 cup whole milk
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
2 1/2 cups fresh blueberries
2 tablespoons light brown sugar
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350*F.
  • Line a 12 cup muffin tin with paper liners.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and 1 cup of the sugar until light and fluffy, 2-3 minutes. With the mixer on low speed, add the eggs, one at a time, then add vanilla, sour cream, and milk.
  • In a separate bowl, sift flour, baking powder, baking soda, and salt together. With the mixer on low speed, add the flour mixture to the batter, and beat until just mixed. Fold in the blueberries gently with a spatula, and make sure batter is well mixed.
  • In a small bowl, stir the brown sugar, cinnamon, and remaining tbls. of white sugar together.
  • Scoop the batter into the prepared muffin tin, filling each cup just over the top, and bake 10 minutes.
  • Remove from oven, sprinkle with the brown sugar and cinnamon topping, and bake 10-15 more minutes, until the muffins are lightly browned on top and a toothpick stuck into the middle of the muffin comes out clean.

142ml carton soured cream

6 tbsp sparkling water
demerara sugar to sprinkle

  • Heat the oven to 200C/fan 180C/gas 6 and put 8 muffin cases in a muffin tray. Mix the flour, baking powder and sugar in a large bowl, add the melted butter, soured cream, eggs and lemon zest and beat just long enough to give a thick, smooth mixture - don't over-beat. Carefully stir in the fruit and finally the sparkling water, until just evenly combined.
  • Divide the mixture between the muffin cases - they should be nice and full. Sprinkle generously with the sugar and bake for 25-30 mins or until risen and golden. The muffins are best served just warm. Will keep fresh in an airtight container in a cool place for 1-2 days.

My family and I love these muffins. I wanted a blueberry muffin to satisfy my tastebuds so I played around with a couple of different recipes from The Joy of Cooking and created this recipe that combined the flavors I was looking for in a breakfast muffin.

2 eggs
1 cup sour cream
1 1/4 cups sugar
1/4 cup milk
lemon zest, 1 whole lemon
1 tablespoon lemon juice
3 cups all-purpose flour
1 teaspoon salt

2 cups fresh blueberries

Steps:

  • pre-heat oven to 375 degrees.
  • In a large mixing bowl, start with the eggs and lightly beat, add the "wet" ingredients in the order listed, sour cream, sugar, milk, lemon zest and lemon juice, mixing until well blended 1 to 2 minutes.
  • In a seperate bowl sift the flour with the salt, baking soda and baking powder. Once sifted stir the flour mixture into the wet mixture with a spatula, carefull not to over mix the batter. It is OK to have some lumps in the batter and the batter will be thick. Gently fold in the blueberrys so as not to mash them into the batter.
  • I like my muffins a little on the large size so I fill the paper baking cups 3/4 of the way full, in regular or jumbo muffin pans.
  • For regular muffins bake at 375 for approximately 16 to 18 minutes and for jumbo muffins bake for 20 to 22 minutes.
  • Let the muffins cool in the muffin pan for 2 to 3 mintues then remove to a cooling rake for another 5 minutes.
  • Serve warm.

1 1/2 cups blueberries
1 (8 ounce) package cream cheese, softened
1/4 cup sugar
2 tablespoons brown sugar, for the topping

Steps:

  • Bring all ingredients to room temperature.
  • In a small pan heat the butter over a low heat until melted.
  • Increase heat and swirl gently until butter takes on a slightly brown color.
  • Add oil, stir and allow to cool slightly while the oven's preheating to 425°F.
  • Grease a standard 12 muffin tin, I prefer a medium coat of Crisco.
  • Mix filling ingredients in a small bowl and beat at medium speed (a hand mixer is fine) until well combined and creamy, about 2 minutes.
  • Mix dry ingredients in a large bowl and whisk to combine.
  • Add butter milk to cooled butter, stir and add eggs and vanilla, stir to combine.
  • Pour wet mixture into dry mixture, mix with a wooden spoon or rubber spatula until the dry ingredients are just moist.
  • Don't over mix.
  • Fold in blueberries and add spoon into tin, it will yield 12 muffins, so take your time and divide it evenly.
  • With two teaspoons (like the ones that you use at the dinner table) create a well in the center of a muffin and place a heaping spoonful of cream cheese in that well.
  • Do them one at a time and be sure not to go to the bottom of the muffin.
  • Once again there is enough to do all 12 muffins, so take your time and divide it equally.
  • Lightly sprinkle just a bit of brown sugar over each muffin.
  • Bake for 18-22 minutes, tops will be light brown and a toothpick inserted in the cake part of the muffin will come out clean.
  • Muffins should just be starting to pull away from the sides of the tin.
  • Allow to cool in pan for 20 minutes on a rack.
  • This seems like a long time, but the filling makes these delicate and the extra cooling time allows them to set.
  • Once removed from the pans allow the muffins to cool to room temperature on a rack.

  • Combine ice cream and flour; stir until batter is smooth and thick.
  • Mix sugar and cinnamon, set aside 1 tablespoon.
  • Sprinkle remaining mixture over batter.
  • Gently fold in blueberries.
  • Fill greased or paper lined muffin cups 2/3 full.
  • Sprinkle with reserved sugar-cinnamon mixture.
  • Bake in 400F oven for 20-25 minutes.

I went to a Taste of Home Cooking School a few years ago and this is one of the featured recipes. I have made these for Ladies Retreats because they are so easy to put together.

2 c biscuit/baking mix
3/4 c plus 2 tablespoons sugar, divided
2 eggs
1 c sour cream
1 c fresh or frozen blueberries, (do not thaw first)

Steps:

  • 1. In a bowl, combine the biscuit mix and 3/4 cup sugar.
  • 2. In a second bowl, combine eggs and sour cream; stir into dry ingredients just until combined.
  • 3. Fold in blueberries. Fill greased muffin cups 3/4 full. Sprinkle with with remaining sugar.
  • 4. Bake at 375-degrees for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes in pan before removing to a wire rack.
  • 5. Makes 12 muffins. I make life easier and line the muffin tins with cupcake liners. They come out easier and clean up is a breeze.
