PEACH BLUEBERRY COBBLER-EASY WITH BISQUICK



Peach Blueberry Cobbler-Easy With Bisquick image

Quick & easy to put together for a last minute dessert. Served warm with Ice Cream it is comfort food desert at it's best. Got the recipe off a box of Bisquick years ago and tweaked it to my personal tastes.

Number Of Ingredients 9

1 cup Bisquick
1 cup milk
1/2 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1/2 cup butter, melted
1 cup white sugar
1 (29 ounce) can peach pie filling
1/2 cup fresh blueberries, if using frozen, do not thaw
1 tablespoon cinnamon sugar

Steps:

  • Preheat oven to 375; 350 for glass.
  • While oven is preheating, put butter in 8 x 8 x 2 pan, place pan in oven to melt the butter. Keep close watch so that it doesn't burn.
  • Mix together Bisquick, Milk, Nutmeg and Cinnamon.
  • Remove pan with melted butter from oven, pour batter over melted butter. Stir Lightly just to mix all together.
  • Pour Peach Pie filling evenly over batter mixture and then sprinkle Blueberries over top of Peach Pie Filling, DO NOT STIR!
  • Sprinkle Cinnamon Sugar over the top of everything, if you need more than one TBSP it is ok, but be careful that the cinnamon doesn't overwhelm the taste the fruit.
  • Bake for 45-55 minutes or until golden brown.

1 1/2 cups fresh sliced peaches
1 1/2 cups fresh blueberries
1/3 cup sugar
1 1/2 teaspoons cornstarch
1/2 cup Bisquick reduced-fat baking mix
2 tablespoons chopped nuts
4 tablespoons brown sugar
1/2 teaspoon cinnamon
4 tablespoons skim milk
2 cups low-fat vanilla ice cream

Steps:

  • Preheat oven to 350°F.
  • Prepare fresh fruit, and mix with sugar and cornstarch in large bowl.
  • Transfer to an 8-inch baking pan.
  • In medium mixing bowl, combine Bisquick, nuts, brown sugar, and cinnamon.
  • Add milk and stir just until moistened.
  • Drop topping in small mounds over fruit.
  • Bake 20 minutes or until topping is light golden brown and a toothpick inserted into the topping comes out clean.
  • Serve warm with vanilla ice cream.

Blueberry Cobbler, Bisquick Recipe - (4/5) image

1/2 c. sugar
1 tbsp. cornstarch
4 c. fresh or frozen blueberries
2 tbsp. water
1 c. Bisquick baking mix
1/4 c. milk
1/4 c. chopped pecans (if desired)
1 tbsp. sugar
1 tbsp. butter, melted

Steps:

  • Heat oven to 400 degrees. Mix 1/2 cup sugar and cornstarch in 2 quart saucepan. Stir in blueberries and water. Heat to boiling, stirring constantly. Boil and stir 1 minute. Pour into ungreased 1 1/2 quart casserole. Mix remaining ingredients until soft ball forms. Drop dough by tablespoonfuls onto hot blueberry mixture. Bake until golden brown, about 15 minutes.
