1 (1 1/4 ounce) envelope dry onion soup mix
1 cup sour cream
2 eggs, slightly beaten
1 1/2 lbs ground beef
1 cup soft breadcrumbs
2 slices bacon

Steps:

  • Combine onion soup mix with sour cream in a bowl; add eggs.
  • Mix in ground beef.
  • Add bread crumbs; mix well.
  • Shape into a loaf.
  • Place in loaf pan; lay bacon over top.
  • Place in preheated 500ºF oven.
  • Reduce heat.
  • Bake at 375ºF for 1 hour.

This is a great go to recipe. It's easy and relatively inexpensive to make.

1 1/2 lb lean ground beef or turkey
3/4 c quaker oats
3/4 c finely chopped onion
1/2 c ketchup
1 egg, lightly beaten
1 Tbsp worcestershire sauce
2 clove garlic, minced
1/2 tsp salt
1/4 tsp pepper
FOR THE SAUCE:
1/2 c grated onion
1 c ketchup
5 Tbsp brown sugar
1-2 Tbsp vinegar

Steps:

  • 1. Heat oven to 350 degrees. Combine all ingredientsin large bowl; mix lightly but thoroughly. Bake 50-55 minutes or until meatloaf is to medium doneness. (Beef 160 degrees, Turkey 170).
  • 2. Twenty minutes before the meatloaf is done, drain off grease and liquid. Cover the meatloaf with 1/2 cup of the grated onion. Mix the remaining sauce ingredients in a pan and heat slightly, do not boil. Brush on top of meatloaf. If you like more sauce you can always double the ingredients. Let stand 5 minutes before slicing.

4 tablespoons vegetable shortening
2 cups self-rising flour, plus extra for dusting
3/4 cup well-shaken buttermilk
Cooking spray, for greasing
1 pound lean ground beef
1 tablespoon dried minced onion
Pinch of salt and pepper

1/3 cup self-rising flour
2 cups canned diced tomatoes, drained and juices reserved
2 cups canned diced tomatoes, drained and juices reserved
1 3/4 cups frozen peas, thawed

Steps:

  • For the biscuit dough: Using a pastry blender or two table knives, cut the shortening into the flour in a medium bowl until it resembles coarse meal. Use a fork to stir in the buttermilk to make a soft dough, or until the dough comes together and leaves the sides of the bowl. Continue stirring with the fork until all the flour is worked into the dough, and then turn the dough onto a lightly floured board and knead three or four times until smooth and manageable.
  • For the meatloaf: Preheat the oven to 450 degrees F. Grease a baking sheet with cooking spray.
  • Combine the beef, onion, salt and pepper in a large skillet and cook over a medium heat until the meat is browned, 12 to 15 minutes. Remove from the heat and stir in the flour and 1/3 cup of the reserved tomato liquid. Remove 1 cup of this meat mixture and set aside. Add the tomatoes and the peas to the remaining mixture in the skillet. Set aside.
  • On a well-floured surface, roll the biscuit dough into a large rectangle about 1/2 inch thick. Spread the reserved cup of meat mixture thinly over the dough, and then roll the dough like a jelly roll, beginning from one long edge. Place the roll on the prepared baking sheet. Using kitchen shears or a very sharp knife, cut 1-inch slices almost through to the bottom of the roll. To expose some of the filling, pull alternate slices to the left and right. Bake until browned, about 15 minutes
  • Reheat the beef and vegetable mixture. Slice the baked loaf and spoon some of the hot vegetable and meat mixture over each slice.

HEARTY MEATLOAF

Including my late hubby, we usually had several strapping lads at our table who loved to eat (seriously, they were like locusts, and I had the grocery bills to prove it). It's a large loaf and occasionally we even had leftovers! It's pretty basic, but feel free to spice it up according to your family's taste.

2 pound(s) ground beef
2 pound(s) sausage
1 1/2 cup(s) Panko bread crumbs (plain or flavored)
3 eggs (beaten)
3/4 cup(s) milk
2 onions
2 teaspoon(s) minced garlic (heaping)
1 tablespoon(s) dry mustard
GLAZE
1 cup(s) brown sugar, firmly packed
1 cup(s) ketchup
3 teaspoon(s) chili powder
1/2 teaspoon(s) cayenne pepper
2 1/2 teaspoon(s) salt

Steps:

  • Combine meat, crumbs, spices, eggs, and milk in a large bowl. Mix by hand until well blended.
  • Turn out into a large Pyrex baking dish and form into a loaf.
  • Combine glaze ingredients in a small bowl and mix until well blended. Add extra seasonings as desired.
  • Pour over meatloaf.
  • Bake at 375 for about 60 minutes. (Should temp at 140 on meat thermometer) Remove from oven and let rest 5 minutes. Slice and serve.

What makes this meat loaf recipe special is the addition of horseradish to both the meat and the glaze. I am a big fan of horseradish, so the only thing that would make this dish better would be MORE of it! Otherwise, always remember "Just A Pinch".

1 pkg onion soup mix
1 Tbsp horseradish
2 tsp salt
1/4 tsp pepper

GLAZE INGREDIENTS
1/2 c ketchup
1 Tbsp horseradish
3 Tbsp brown sugar
2 tsp mustard, spicy brown

  • 1. Combine meat and all other ingredients and put into a vegetable oil sprayed pan.
  • 2. Mix glaze ingredients.
  • 3. Pour glaze over.
  • 4. Bake for 1 1/4 hours. 350 degrees

I found this recipe in the early 70's and have never wavered in making it for my family. Now, my daughters make the same one for their little families. It's the best meat loaf I've ever tasted! Maybe it's the cheese?? :)

2 eggs
2/3 c milk
2 tsp salt
3 bread slices
1 small onion, chopped fine
1/2 c shredded raw carrot
1 c shredded cheddar cheese
1 1/2 lb ground beef - pretty lean!
1/4 c brown sugar
1/4 c catsup
1 Tbsp prepared mustard

Steps:

  • 1. Break eggs in large mixing bowl. Add milk, salt and crumbled bread. Let set until bread is soft and disintegated. Add onion, carrot, cheese and beef. Mix well and pack in a loaf pan, OR a 9 x 13 cake pan.
  • 2. For the topping, mix brown sugar, catsup and prepared mustard together and spread on top of the meat loaf.
  • 3. Bake at 350 degrees for one hour. Let stand at least 10 minutes before serving. Enjoy!

MARY'S MMMMM MEATLOAF

The sweetness of the sauce makes this recipe really special. I prepared it without the optional green chilies and jalapenos, but may give that a try next time!

1 1/2 lb lean ground beef (grass-fed preferred)
1 - 8 oz can(s) tomato sauce
1/2 sleeve ritz crackers (crushed) - do not substitute
1/2 Tbsp garlic powder
1/2 bell pepper (chopped)
1/2 onion (chopped)
4 slices sandwich cheese (cut in small pieces)
1 egg
GLAZE FOR TOP
1/2 c ketchup
1/4 c brown sugar
1 tsp prepared mustard

Steps:

  • 1. Beat egg and blend in the tomato sauce and garlic salt. Add cheese, chopped onion, bell pepper, RITZ crackers, and ground beef. Thoroughly squish together with hands (yes, it is messy) If you don't want to get your hands messy, do as my friend did - put it all in a food processor and mix.
  • 2. Spread in a 1 1/2 quart baking dish.
  • 3. Bake in preheated 350 degree oven for 50 minutes.
  • 4. Remove and drain off fat. Poke holes in the top and pour glaze on top.
  • 5. Return to oven and bake 10 minutes.
