Corn bread made with blue cornmeal and more of almost every ingredient you would put in regular corn bread. It is almost cakelike. This is a pot luck winner.

1 cup blue cornmeal
1 cup all-purpose flour
5 teaspoons baking powder
¼ cup white sugar
1 pinch salt
2 eggs, beaten
1 cup milk
½ cup butter

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking dish.
  • Mix cornmeal, flour, baking powder, sugar, and salt in a bowl. Sift 3 times.
  • Stir the eggs and milk into the cornmeal mixture. Place the butter in the prepared baking dish, and melt in the preheated oven. Mix hot, melted butter into the cornmeal mixture. Transfer cornmeal mixture to the prepared baking dish.
  • Bake on center rack in the preheated oven for 30 to 35 minutes, until the edges of the cornbread pull away from the sides of the dish, and a toothpick inserted into the center comes out clean. Let cool 10 minutes before cutting.

I've been making this good coffee cake with eggs for breakfast along time, it's a great alternative to biscuits..

1/2 stick butter
1/2 c crushed pineapple, drained save and use juice
1/2 c brown sugar, lightly packed
1/2 c ham, diced or cubed
1 box jiffy cornbread mix
1/3 c measured half milk & pineapple juice
1 large egg

Steps:

  • 1. Preheat oven to 350. Melt the butter in a 9x7 inch baking dish in the oven. After it's melted sprinkle the brown sugar over melted butter, then sprinkle the ham over the brown sugar.
  • 2. Mix your cornbread mix with your 1 egg, and the 1/3 cup liquid (half milk & half pineapple juice) pour the batter over the top of the ham, brown sugar and pineapple mixture.
  • 3. Bake in a 350 oven for 25 minutes or until cornbread is golden and pineapple mixture is bubble out the sides. Test center of bread with a toothpick, if it comes out clean it's done.
  • 4. Remove cake from oven and run a knife around the outside of cake. Flip the cake over like you do an upside down cake onto a platter. Let the cake cool about 20-30 minutes before eating.

PINEAPPLE CORNBREAD

This is actually a dessert and not actually cornbread. Recipe came from the back of a corn meal mix package. Quick to make and quite tasty too.

4 tablespoons butter
1 cup brown sugar, divided
2 tablespoons brown sugar, divided
1 cup self-rising cornmeal
1 (20 ounce) can crushed pineapple in syrup, undrained
1 egg, beaten
1/4 cup pecans, chopped
whipped cream (optional)

Steps:

  • Preheat oven to 425 degrees.
  • Melt butter in 10-inch cast iron skillet.
  • Sprinkle 1 tablespoon brown sugar over butter.
  • In large bowl, combine corn meal mix, 1 cup brown sugar, pineapple, egg and pecans; stir to blend.
  • Pour batter over brown sugar and butter.
  • Sprinkle remaining 1 tablespoon brown sugar over batter.
  • Bake at 425 degrees for 25 to 30 minutes or until golden brown.
  • Serve warm by spooning into dessert dishes or let cool and cut into wedges.
  • Top with whipped cream, if desired.

2 teaspoons kosher salt
3 teaspoons baking soda
1 teaspoon baking soda
1 ½ cups buttermilk
4 large eggs
1 stick unsalted butter, melted
½ cup honey
1 cup frozen corn

Steps:

  • Make the herbed honey butter: In a medium bowl, combine the butter, honey, parsley, thyme, and salt. Using a rubber spatula, mix all the ingredients until smooth and incorporated, about 3 minutes. Scoop the butter onto a piece of plastic wrap and roll into a log, then wrap tightly. Refrigerate for at least 1 hour, or overnight.
  • Make the cornbread muffins: Preheat the oven to 400°F (200°C). Lightly grease a 12-cup muffin tin with nonstick spray.
  • In a medium bowl, mix together the cornmeal, flour, sugar, salt, baking soda, and baking powder.

1/2 cup whole wheat pastry flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt (optional)
1 tablespoon honey or 1 tablespoon maple syrup
1 egg, beaten
1/3 cup nonfat dry milk powder
2/3 cup water
1 tablespoon cooking oil

Steps:

  • Lightly spray a 8- to 9-inch cast iron skillet with cooking spray and drizzle with the 1 tablespoon cooking oil.
  • Place the skillet in the oven while it preheats.
  • Preheat oven to 425°F.
  • In a medium size bowl, combine dry ingredients.
  • Combine liquids and slowly add to combined dry ingredients, mixing well.
