BACON BLUE CHEESE PUFFS
These little appetizers will be a hit at your next party. They are a bit time consuming but worth every minute! The mix of the bacon and blue cheese give these bite size goodies lovely flavor. And all the butter that is brushed on 'em hurt either.

Steps:
- 1. In a small skillet, fry bacon until crisp. Drain well and crumble. In a medium bowl combine cream cheese, blue cheese, mayonnaise, and bacon.
- 2. Layer 5 sheets of phyllo dough brushing each with melted butter. Cut into 8-3 inch squares. Repeat with remaining phyllo dough.
- 3. Fill each phyllo square with 1 teaspoon of filling. Bring sides up towards the center and pinch edges to seal. Brush with butter. Place on a cookie sheet and bake in preheated 375* oven for 20-25 minutes until golden brown. Serve warm and watch your guests enjoy :-)
BLUE CHEESE BACON PUFFS
I have not cooked these myself, but have eaten them. They are great. They were brought by a friend to an office party and, of course, we all had to have the recipe.

Steps:
- Bring water and butter to a boil over med.
- heat.
- Stir in flour, salt and peppers with a wooden spoon until mixture leaves the sides of pan and forms a soft ball.
- Remove from heat.
- Beat in eggs, one at a time.
- Add Cheese, onion& bacon.
- Dip by teaspoonful onto a lightly greased cookie sheet.
- Bake@ 400 F for 20 to 25 minutes.
PEAR AND BLUE CHEESE PUFFS
I made these for New Year's Eve appetizers and they were wonderful. Lovely blend of flavours and textures. Gone in no time at all - best make up a double batch.

Steps:
- Preheat oven to 400F.
- Toss pears in sugar.
- Set aside.
- Roll pastry out into a 14 inch square on a lightly floured board.
- Cut into 36 equal squares.
- Place each in a mini muffin pan.
- Place equal amounts of pear and blue cheese in pastry lined pans.
- Top each with 2 or 3 dried cherries or cranberries.
- Bake for 12 to 15 minutes, until puffed and golden.
- Serve warm.

Steps:
- Bring butter and water to a boil in a saucepan.
- Take pan from heat; add in flour and pepper, beating with a rubber spatula or wooden spoon until mixture leaves the sides of the pan and forms a smooth ball.
- Add in eggs, one at a time, beating well after each addition.
- Stir in cheese; let mixture stand for 15 minutes.
- Drop dough by rounded tablespoonfuls 2 inches apart onto buttered baking sheets.
- Bake in a 400° oven for 30 minutes or until golden.
- Serve warm or at room temperature.
BLUE CHEESE AND BACON PUFFS

- Preheat oven to 425 with rack in lower third. Saute bacon until crisp. Bring milk, water, butter and seasoninsgs to a boil in a med. saucepan over med. heat Add flour and stir with wooden spoon until dough forms a ball around spoon. Cook until it starts to stick lightly on the bottom and sides of pan. Remove from heat and cool slightly. Beat in eggs, one at a time, until completely incorporated. Stir in both cheeses, scallions, and reserved bacon. Use tsp. measure to drop dough 2" apart onto parchment-lined baking sheets. Bake 20-25 minutes or until browned and crisp. Serve warm or at room temp.
FIG, PROSCIUTTO AND BLUE CHEESE PHYLLO PUFFS

- Pre-heat oven to 375 degrees F. Unroll phyllo sheets and cut the stack of sheets into 3 equal strips about 3x12 inches. Brush 2 of the cut strips lightly with butter then stack together. Place a couple of pieces of prosciutto at one end of the strip. Place a small amount of fig jam on top and a few crumbles of blue cheese. Fold phyllo dough corner over the filling to cover it. Fold the triangle shape directly up to make a triangle-shaped pocket. Continue to fold over onto itself until you reach the top. Seal the last fold with a little more butter. Place on a baking sheet lined with parchment paper. Repeat process with the remaining filling and dough. Bake puffs in the oven for 20 minutes until golden brown.
