PECAN PIMENTO BLUE CHEESE BALL
This is my favorite cheese ball recipe. A close family friend made it every year at the holidays and she always made me one on my birthday. She passed away a few years ago and I took over the tradition. I am unsure of where the recipe came from - but I would guess that it once appeared on the lable of the pimento cheese used in the recipe. It is so easy to make and is really yummy!

Steps:
- Mix cream cheese, pimento cheese spread and blue cheese togehter until they are combined well.
- Refrigerate for 2-3 hours or overnight.
- Form mixture into a ball and roll in the pecans.
- Serve with crackers.

Steps:
- In a bowl, combine all ingredients except for the pecans. Mix until all ingredients are incorporated. Spoon the mixture onto a large piece of plastic wrap. Cover in the wrap and shape into a ball. Place in the fridge to chill for at least 30 minutes. Roll in the pecans just before serving. Serves about 10 to 12 people

- Grind nuts in food processor until fine. Cut in cream cheese in 8 pieces and add blue cheese. Process until smooth. Garnish with whole pecans.
