8 ounces pasta, dried
4 ounces blue cheese, crumbled
2 cups walnuts, toasted and chopped
1 cup celery, chopped
4 tablespoons mayonnaise
1/8 teaspoon white pepper
1/8 teaspoon pepper
3 tablespoons parsley, minced

Steps:

  • Cook pasta according to directions. Immediately rinse with cold water and drain well.
  • Add cheese, walnuts, celery, mayonnaise, salt and pepper. Gently toss with 2 forks until the ingredients are well mixed. Refrigerate until serving.
  • You may need to add a little more mayonnaise if the salad seems dry.
  • Sprinkle with the parsley and serve slightly chilled.
  • Note; This pasta salad is best when made the day before it is to be served or at least several hours in advance, so that they flavor of the blue cheese has a chance to develop.
  • Keep in the refrigerator.

6 cups uncooked bow tie pasta
2 cups julienned fully cooked ham
1/3 cup crumbled blue or feta cheese
1/3 cup minced fresh parsley
1 garlic clove, minced
1-1/2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
1/4 teaspoon pepper
1/3 cup olive oil
1 cup coarsely chopped pecans, toasted
Grated Parmesan cheese

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Transfer to a large bowl., Stir in the ham, blue cheese, parsley, garlic, rosemary and pepper. Add oil and pecans; mix well. Sprinkle with Parmesan cheese. Serve immediately.

1 lb 16 oz spiral pasta
3-4 stalk(s) celery stalks-sliced or diced
1 pt grape tomatoes cut or sliced
4 oz smoked crumbled blue cheese
3/4 c sliced olives
EASY ITALIAN DRESSING
1/4 c water
1 Tbsp red wine vinegar
1 Tbsp lemon juice
2 tsp dijon mustard
2 Tbsp olive oil, extra virgin
3 pinches of sugar
1 clove garlic, minced
1/8 tsp dried basil
1/8 tsp dried oregano
salt and pepper

Steps:

  • 1. Cook Pasta until al Dente'. Drain and Rinse pasta with cool water..as cool as it can be for people in the south. Ha Ha
  • 2. Add Pasta, Tomatoes, Olives, Celery, Crumbled Blue cheese. Toss .
  • 3. In a small glass pitcher, whisk dressing ingredients until it's incorporated good. Pour dressing over pasta. Toss to coat. Refrigerate 3 hours or overnight. Serve and Enjoy!

2 cups cherry tomatoes or 2 cups grape tomatoes, halved
1 cup small fresh basil leaves, lightly packed or 4 tablespoons dried basil
1 1/2 cups finely crumbled blue cheese
4 tablespoons olive oil
3 tablespoons white wine vinegar
salt and pepper

Steps:

  • In a bowl, toss tomatoes, basil, cheese, oil and vinegar.
  • Season to taste with salt and pepper.

1 Cucumber, peeled, seeded and diced

2 Tbsp balsamic vinegar

  • Place walnuts in a small, heavy-bottomed skillet. Toast nuts over medium-high heat until lightly browned, shaking skillet frequently, about 1 to 2 minutes; remove from skillet and set aside. Bring 3 quarts of water and 1/2 teaspoon of salt to a boil in a large pot. Stir in pasta and cook until tender, about 11 to 13 minutes; remove 1 tablespoon of pasta cooking water and save for step 3.
