BLT With Spicy Mayo & Avocado image

I've stepped up this classic recipe of a bacon, lettuce and tomato sandwich with the addition of spicy mayo, spread on the toasted bread, and slices of creamy avocado.

¼ cup mayonnaise
2 tablespoons sriracha
1 large beefsteak tomato, (sliced)
1 tablespoon extra-virgin olive oil
Flaky sea salt, (as needed)
1 pound thick cut applewood smoked bacon
4 ½-inch slices crusty country bread, toasted
1 head little gem lettuce, (leaves separated)
1 medium has avocado, (pitted, peeled and sliced)

Steps:

  • Preheat oven to 400ºF (200ºC).
  • In a small bowl stir together the mayonnaise and sriracha until combined then cover and refrigerate until ready to use.
  • Arrange slices of tomato on a plate and drizzle with the olive oil and season with salt. Let sit for at least 10 minutes.
  • Arrange bacon in a single layer on an aluminum foil lined baking sheet and bake until crispy and golden brown, about 16 minutes. Remove to a paper towel-lined plate to drain and set aside.
  • Spread a spoonful of the sriracha mayonnaise on 2 slices of the bread top each with slices of tomato followed by strips of bacon, leaves of lettuce and avocado. Top each sandwich with the remaining slices of bread. Use a serrated bread knife to cut the sandwiches in half and serve.

1/2 small ripe avocado, peeled
2 tablespoons mayonnaise
1/2 teaspoon lemon juice
2 tablespoons crumbled Gorgonzola cheese
4 slices Italian bread, toasted
1-1/2 cups fresh baby spinach
4 tomato slices
4 thick-sliced applewood smoked bacon strips, cooked

Steps:

  • Mash avocado with a fork; stir in mayonnaise and lemon juice. Gently stir in cheese., Spread over toasts. Top 2 of the slices with spinach, tomato, bacon and remaining slices of toast.

Oh, the spread on this sandwich is bursting with flavors! The cilantro and serrano chili are a great combination with a kick. Avocado adds a nice creaminess to the BLT. A great summertime sandwich!

4 slice whole grain bread, toasted
2 slice cheddar cheese
6-8 slice avocado
8 slice bacon
4 slice large tomato
4 lettuce leaves, torn in pieces
FOR SPICY MAYONNAISE
2 Tbsp lite mayonnaise
2 tsp finely chopped cilantro
2 tsp finely chopped serrano chile
1/2 tsp garlic salt
1/2 tsp onion salt
1/4 tsp black pepper
1 tsp lemon juice

Steps:

  • 1. While bacon is frying, slice vegetables for sandwich and set aside. Move bacon to paper towels to drain when crispy.
  • 2. Place bread in toaster & mix mayonnaise with seasonings, stir well.
  • 3. Dress & build sandwich, enjoy!

Spread
1 extra ripe avocado
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
Sandwich
8 slices turkey bacon
8 slices whole-wheat bread
8 leaves romaine lettuce
2 medium tomatoes, cut into 12 slices
1 small red onion, thinly sliced

Steps:

  • Combine spread ingredients in a bowl. Mash until smooth and set aside. Prepare bacon as directed on package; drain thoroughly on paper towels. Toast bread. Place 4 slices on 4 plates. Spread an equal amount of avocado spread on each slice. Top each with 1/4 of the bacon, lettuce, tomato, and onion. Cover each with another slice of toast. Cut sandwiches in half and serve immediately.
