BLT WITH SPICY MAYO & AVOCADO
I've stepped up this classic recipe of a bacon, lettuce and tomato sandwich with the addition of spicy mayo, spread on the toasted bread, and slices of creamy avocado.

Steps:
- Preheat oven to 400ºF (200ºC).
- In a small bowl stir together the mayonnaise and sriracha until combined then cover and refrigerate until ready to use.
- Arrange slices of tomato on a plate and drizzle with the olive oil and season with salt. Let sit for at least 10 minutes.
- Arrange bacon in a single layer on an aluminum foil lined baking sheet and bake until crispy and golden brown, about 16 minutes. Remove to a paper towel-lined plate to drain and set aside.
- Spread a spoonful of the sriracha mayonnaise on 2 slices of the bread top each with slices of tomato followed by strips of bacon, leaves of lettuce and avocado. Top each sandwich with the remaining slices of bread. Use a serrated bread knife to cut the sandwiches in half and serve.

- Mash avocado with a fork; stir in mayonnaise and lemon juice. Gently stir in cheese., Spread over toasts. Top 2 of the slices with spinach, tomato, bacon and remaining slices of toast.

Oh, the spread on this sandwich is bursting with flavors! The cilantro and serrano chili are a great combination with a kick. Avocado adds a nice creaminess to the BLT. A great summertime sandwich!

- 1. While bacon is frying, slice vegetables for sandwich and set aside. Move bacon to paper towels to drain when crispy.
- 2. Place bread in toaster & mix mayonnaise with seasonings, stir well.

- Combine spread ingredients in a bowl. Mash until smooth and set aside. Prepare bacon as directed on package; drain thoroughly on paper towels. Toast bread. Place 4 slices on 4 plates. Spread an equal amount of avocado spread on each slice. Top each with 1/4 of the bacon, lettuce, tomato, and onion. Cover each with another slice of toast. Cut sandwiches in half and serve immediately.
