Made this out of boredom with leftovers! I used leftover turkey pieces from a roast turkey, but you can substitute cold cut turkey breast too. THe substitutions are endless- you can use regular bacon instead of turkey bacon, etc. The garlic pepper I used is already mixed- it should be in the spice section of the supermarket ( I swear by it). I didn't actually measure the pepper when I put it on, I just estimated 1/2 tsp because I had to put a quantity in the ingredients. Same with the sour cream. I had a COMBINED 1/2 cup shredded lettuce and onions, I had to quantify them separately because of this formatting. Enjoy!

1 josephs oat and wheat pitas, cut in half (or any pita)
1 cup sliced turkey breast (or as much desired)
1/2 cup sliced tomatoes
1 leaf romaine lettuce
2 tablespoons fat free sour cream
2 slices turkey bacon
1/2 cup shredded lettuce
1/2 cup chopped onion
1/2 teaspoon garlic pepper seasoning
1/2 cup sliced mushrooms (uncooked)

Steps:

  • Heat skillet with cooking spray on medium heat.
  • Add mushrooms, turkey, and garlic pepper to skillet, let sit until mushrooms shrink and turkey begins to brown.
  • Slice pita in half and toast both halves.
  • Spread sour cream inside pita, and line with tomatoes and half of the lettuce leaf.
  • Cook 2 slices of turkey bacon for about 1:30 in the microwave.
  • Add turkey bacon, turkey, and mushrooms to the pita.
  • Top with remaining sour cream, tomatoes, and lettuce/onion mixture.
  • Enjoy!

BLT with a Twist image

My husband and I both wanted different things for lunch so I decided to combine the two requests and this is what we came up with. It was so good and so much better than a plain BLT. Enjoy!

1 medium green tomatoe
1 medium onion, sliced thin
olive oil to drizzle in bottom of fry pan for onions
1/4 c cornmeal
1/4 c freshly grated parmesan cheese (not in a can)
1 1/2 to 2 Tbsp all prupose flour
1 tsp hungarian paprika
1 tsp freshly ground pepper
1 egg, beaten
3 slices provalone cheese
3 strips of bacon cooked crisp and cut in half
6 slices of bread i used italian cut 1 inch thick
TOPPINGS
mayonnaise
dijon mustard
sliced hungarian hot peppers (optional)
romaine lettuce leaves or your favorite

Steps:

  • 1. Cut green tomatoe in 1/4 inc slices and place on a paper towel, sprinkle with kosher salt and allow to sit until moisture comes up, blot moisture with papertowel.
  • 2. In the meantime slice your onion in thin slices, drizzle olive oil on the bottom of a fry pan and cook onions on medium heat turning occasionally, once they wilt turn heat down a little and continue to cook until carmalized.
  • 3. Fry your bacon in a separate pan until crisp, drain on papertowel, cut in half. Set aside. Save drippings.
  • 4. Place cornmeal and cheese in a separate shallow dish add pepper and hungarian paprika, mix. In another shallow dish beat your egg.
  • 5. Dip your tomatoe slices in the egg mixture and then the cornmeal mixture, set aside on a papertowel or dish. Continue process until all your slices are breaded.
  • 6. Fry each breaded tomatoe slice in your bacon grease for 2 to 3 minutes and drain.
  • 7. Place a sheet of foil on a cookie sheet, place your bread slices on the cookie sheet and layer 3 slices with 2 slices of fried tomatoe, top with one bacon strip cut in half, top with 1 slice of cheese.
  • 8. Broil 3 inches from broiler until cheese is melted, remove and top with your carmalized onions, lettuce, peppers, and on the other slice spread your mayo and mustard. Enjoy
