- In a cocktail shaker, combine vodka, juice, and simple syrup with ice; shake well. Strain into 2 martini glasses, and garnish with orange segments.

- For the simple syrup: Combine the sugar, vanilla bean and 2 cups water in a saucepan over medium heat. Cook, stirring, until the sugar melts. Remove from the heat and let cool. Cover and refrigerate for up to 2 weeks.
- For the martini: In a cocktail shaker with ice, add the blood orange juice, vodka and 2 ounces of the simple syrup. Shake, then strain into a martini glass. Garnish with the orange zest.

- 1. Pour the vodka into a pint glass, add the one-half sliced blood orange and muddle it but not too much, about 6 times with a spoon. Add the Cointreau, and chill in the freezer about 15 minutes, then remove from freezer and discard orange slices. 2. Fill a cocktail shaker halfway with ice. Add the lime, lemon and orange juices and the drop of bitters. Shake hard for 8 seconds or until cloudy. 3. Strain into the pint glass with the chilled vodka mixture. Stir well (don't shake). Pour (don't strain) into a Martini glass. Float the remaining blood orange slice on top. Each serving: 329 calories; 0 protein; 22 grams carbohydrates; 0 fiber; 0 fat; 0 saturated fat; 0 cholesterol; 4 mg. sodium.
