This citrus curd is a component of the pastry chef Claudia Fleming's meringue-topped blood-orange curd cake, but you could make it on its own for a festive spread for layer or pound cakes or scones. The curd will keep, refrigerated, for a few days.

3 large eggs
3 egg yolks (reserve whites for meringue; see recipe)
1/3 cup plus 1 tablespoon sugar
1/4 cup blood-orange juice
1/4 cup fresh lemon juice
1 tablespoon finely grated blood-orange zest
1 stick unsalted butter, softened and cut in bits

Steps:

  • Bring a pot of water to a simmer. In a large stainless-steel mixing bowl, whisk together eggs, yolks and sugar. Whisk in orange and lemon juice and orange zest. Place bowl over simmering water, and cook curd, stirring, until it has the consistency of homemade mayonnaise. Remove from heat.
  • Whisk in butter. Strain curd through a fine mesh sieve. Chill at least 2 hours before using. Curd can be made up to 3 days in advance.

1 pound blood oranges
1 cup sugar
3 eggs, whisked
1 dash salt
½ cup butter

Steps:

  • Zest 2 blood oranges and set aside. Juice enough blood oranges to make 3/4 cup juice after straining out pulp and seeds.
  • Whisk blood orange juice, sugar, eggs, and salt together in a medium-sized pot. Warm slowly over low heat. Add butter and reserved zest. Cook, stirring constantly, until curd has thickened, 15 to 20 minutes.
  • Pour curd into a bowl and cool on the counter for 15 minutes. Place a sheet of plastic wrap directly on top of curd and refrigerate until ready to use.

This cake isn't as creepy as it looks: The drips are blood orange curd. The killer idea comes from California-based baker Karl Fong, who won last season's Halloween Baking Championship with a bleeding zombie cake. Just make the recipe below and spoon it over a simple vanilla-frosted layer cake.

Steps:

  • Rub together the grated zest of 1/2 orange and 1/4 cup sugar with your fingertips; set aside.
  • Bring 1 3/4 cups blood orange juice and 1/4 cup lemon juice to a boil in a saucepan. In a large bowl, whisk 3/4 cup sugar, 2 tablespoons plus 2 teaspoons cornstarch and a pinch of salt; whisk in 6 egg yolks and the zest mixture. Slowly whisk in the hot juice, then return to the pan. Cook over medium heat, whisking, until thick, 5 to 7 minutes. Remove from the heat; gradually whisk in 6 tablespoons cut-up butter.
  • Strain the curd through a fine-mesh sieve and tint with red food coloring. Before using, chill until set, at least 4 hours.

⅓ cup white sugar
1 tablespoon white sugar
¼ cup fresh blood orange juice
2 tablespoons finely grated blood orange zest
1 tablespoon coconut juice
1 stick unsalted butter, softened and cubed
1 teaspoon vanilla extract
1 drop red food coloring, or as desired

Steps:

  • Whisk eggs, egg yolks, and 1/3 cup plus 1 tablespoon sugar together in a large metal mixing bowl. Whisk in blood orange juice, blood orange zest, and coconut juice.
  • Bring a pot of water to a simmer. Place the metal mixing bowl with the curd on top of the simmering water. Cook, stirring constantly with a whisk, until curd begins to thicken, 6 to 10 minutes. Remove from heat. Whisk in butter until melted and well combined. Add vanilla extract and stir thoroughly. Add food coloring and stir to combine.
  • Pour curd through a fine mesh sieve into individual ramekins or a single small bowl. Cover with plastic wrap and chill in the refrigerator at least 2 hours before serving.

MERINGUE-TOPPED BLOOD-ORANGE CURD CAKE

This is a layer cake in the loosest sense of the term. The cake looks like a giant toasted marshmallow, and beneath its swirled meringue are layers of orange spongecake and blood-orange curd. If your kitchen lacks a blowtorch for toasting, broil the finished cake until the meringue turns golden brown.

Butter and flour for preparing pans
6 large eggs
3/4 cup sugar
Finely grated zest of 1 orange
3/4 cup cake flour
1/3 cup plus 1 tablespoon cornstarch
Pinch of salt
3 tablespoons unsalted butter, melted and cooled to room temperature
Blood-orange curd (see recipe)
Meringue (see recipe)

Steps:

  • Preheat oven to 350 degrees. Bring a pot of water to a simmer. Line two 8-inch cake pans with wax or parchment paper. Grease paper and dust with flour.
  • In a stainless-steel bowl, whisk together eggs, sugar and zest. Set bowl over simmering water, and whisk constantly until mixture is warm to the touch.
  • Remove from heat, and beat with an electric mixer until light colored and triple in volume, about 5 minutes.
  • Sift together flour, cornstarch and salt. Resift over the egg mixture in three additions, folding after each addition. Fold in melted butter.
  • Pour mixture into cake pans. Bake about 20 minutes, or until cake springs back to the touch. Remove pans to a wire rack, and let cool slightly. Run a knife around edges of pans, and invert layers onto racks to cool completely.
  • Spread blood-orange curd between layers. Frost cake with meringue. Using a blowtorch, toast meringue until golden brown. (Or preheat broiler or oven to its highest setting, and broil or bake cake until meringue is golden brown. Watch carefully, it happens fast.)

CHOCOLATE AND BLOOD ORANGE CURD TARTS

1 --- sheet of all-butter puff pastry, (like, Fillo Factory), 9"x 9", defrosted
6 oz. bittersweet chocolate, roughly chopped
4 oz. cold butter (1 stick)
3 TBSP. sugar
1 lrg. egg
2 lrg. egg yolks
¾ cup blood orange curd (see separate recipe)
1 TBSP. finely grated orange zest (use unwaxed oranges if possible)
1 cup freshly squeezed blood orange juice
2 large eggs, (as fresh as possible)
2 egg yolks
¾ cup sugar
6 TBSP. (3oz) unsalted butter, cold, cut into small cubes

Steps:

  • Open the puff pastry package, take out one piece, and return the second piece to the refrigerator. Place the puff pastry on a lightly floured surface, unroll it, and sprinkle it with some more flour. Lightly roll it out into a 12" square. From this, cut out four circles; each about 6" in diameter. Lift each circle and carefully line four, 4½" mini tart pans. Prick the bottom of the puff pastry all over with a fork. Place the tart pans on a sheet pan and refrigerate for at least 30 minutes.
  • Preheat the oven to 400º F.
  • While the crust is cooling, melt the chocolate and the butter over a double boiler. Cool slightly. In a separate bowl, beat together the egg, the egg yolks, and the sugar, then whisk them into the chocolate mixture until velvety smooth.
  • Remove the tart pans from the refrigerator. Line the tart shells with square pieces of parchment paper, add some ceramic weights, and blind bake them for about 10 minutes. If you don't have ceramic pie weights, use some dry beans. Remove from the oven and fill the crusts two-thirds of the way up with the chocolate mixture (you will have some chocolate mixture left over, which can be frozen for another day). Bake them for another 4-5 minutes. Remove from the oven and cool on a rack. Once completely cooled, spread the orange curd over the chocolate in as thick a layer as desired and serve!
  • Simmer the orange juice in a small saucepan until it is reduced to ½ cup (this will intensify the flavor). Remove from the heat, stir in the orange zest and set aside to cool slightly.
  • In the bottom pot of a double boiler, put about an inch of water over medium-low heat and bring to a simmer.
  • In the top pot--and off the heat--whisk together the eggs, the egg yolks, and the sugar until the mixture is smooth. Then whisk in the reduced orange juice with the zest. Now place the top pot with the mixture over the bottom pot with the simmering water. The top should fit snugly and should not touch the water. Whisking constantly, cook the egg and orange mixture until the curd has thickened and it has reached a temperature of about 174°F. The curd should have the consistency of mayonnaise. This step will take about 12 minutes, although it might take longer depending on the size of the pot and the intensity of the heat.
  • Remove the bowl from heat and stir in the butter, a few cubes at a time, until it is melted (the butter will stop the cooking and will make the curd smooth and velvety).
  • If you prefer to leave the orange zest out of the final product, you can strain the orange curd through a fine sieve into a jar for storage. Chill the curd for at least 2 hours before using.

BLOOD ORANGE-CURD SUNDAES WITH OLIVE OIL AND SEA SALT RECIPE

Something magical happens when you spoon orange curd over vanilla ice cream. And by magical, we mean it tastes just like a Creamsicle.

3 large eggs, room temperature
1/2 cup sugar
1 teaspoon vanilla extract
1 tablespoon finely grated blood orange zest
1/2 cup fresh blood orange juice
1/2 cup fresh lemon juice
1/4 teaspoon kosher salt
1/2 cup (1 stick) chilled unsalted butter, cut into pieces
Vanilla ice cream, softly whipped cream, olive oil, and flaky sea salt (for serving)

Steps:

  • Whisk eggs, sugar, and vanilla in a medium bowl until pale and thick, about 4 minutes. Bring blood orange zest and juice, lemon juice, and salt to a simmer in a small saucepan over medium heat. Whisking constantly, gradually add half of juice mixture to egg mixture, then whisk egg mixture into remaining juice mixture in saucepan. Reduce heat to medium-low and cook, stirring with a wooden spoon, until bubbles subside and mixture is thick enough to coat spoon, about 3 minutes.
  • Off heat, whisk in butter a few pieces at a time, incorporating completely before adding more. Transfer curd to a medium bowl and press plastic wrap directly onto surface. Chill until cold, at least 3 hours.
  • To serve, spoon ice cream into bowls and top with curd and whipped cream. Drizzle with oil and sprinkle with salt.
  • Do ahead: Curd can be made 5 days ahead. Keep chilled.

  • In a small heavy saucepan over medium heat, whisk the eggs, sugar, orange juice and peel until blended. Add butter; cook, whisking constantly, until mixture is thickened and coats the back of a metal spoon., Transfer to a small bowl and tint with food coloring if desired. Cool for 10 minutes. Cover and refrigerate until chilled. Serve with cookies.
