Our blintz is a great airy and lemony alternative to the usual brunch bake. Try this fluffy, not-too-sweet blintz made with Neufchatel and ricotta cheese.

Steps:
- Heat oven to 325°F.
- Beat Neufchatel, ricotta, 2 eggs, 1/4 cup sugar, lemon zest and juice in large bowl with mixer until blended.
- Whisk remaining eggs, sugar, flour, butter, milk and baking powder in separate bowl until blended. Spread 1/3 of the batter onto bottom of 13x9-inch baking dish sprayed with cooking spray; cover with Neufchatel mixture, then remaining batter.
- Bake 45 min. or until center is set.

Steps:
- Preheat oven to 325 degrees.
- Beat cream cheese, ricotta cheese, 2 of the eggs, lemon juice and zest with electric mixer on med speed until well blended.
- Set aside.
- Place flour, butter, remaining 3 eggs, remaining 1/2 cup sugar, milk and baking powder in separate bowl; beat with wire wisk until well blended.
- Spread 1/3 of the dough onto bottom of greased 13x9 inch baking dish; cover with cream cheese mixture.
- Top with spoonfuls of the remaining dough.
- Bake 45 minutes or until center is set.Cut into 16 pieces to serve.Sprinkle with powdered sugar if desired.
