BLUE (BLEU) CHEESE DRESSING FOR DUMMIES
Finally! I found out how to make a wonderful bleu cheese dressing at home. I've tried so many, with all kinds of ingredients, but none of them came out wonderful until this one! And it's so simple, anyone can make it and feel like a real gor-may type chef! I usually use light (not the non-fat)mayo and sour cream and it's incredibly rich.

Steps:
- Combine the mayonnaise, sour cream, lemon juice, pepper, salt and half of the bleu cheese in food processor or blender.
- Process until well combined.
- Remove to storage container, and stir in remaining bleu cheese.
- If too thick, stir in milk or water until of desired consistency.
- On the off chance you've got any left over, store tightly covered in the refrigerator for no more than 5 days.
- Not that it will be likely to stay around that long.

ROQUEFORT/BLEU CHEESE DRESSING
Many people are unable to find true Roquefort* dressing. This recipe is as close to it as possible. Mix well if you like a smoother dressing. Some may want more bleu than I have suggested.

Steps:
- With an electric mixer on low speed, beat together first 6 ingredients for 2 minutes.
- Add mayonnaise and beat an additional 30 seconds.
- Increase speed to medium and beat for 2 minutes.
- Fold in bleu cheese.
- Refrigerate for at least 24 hours before serving.
- Note: Sometimes I will add 1/2 the bleu cheese, when adding the mayo. This gives the dressing a smoother consistency when serving to younger taste buds. Cooking time is 24hr. refrigeration.
PEAR & WALNUT SALAD W/CREAMY BLEU (BLUE) CHEESE DRESSING
This salad is a little different from most pear and walnut salads as it has a creamy bleu cheese dressing, not a vinaigrette. The creaminess of the dressing, the sweetness of the pears, the crunch from the glazed walnuts and a little zip from the dried cranberries make this a very unique and tasty salad. I started making it this way a few years ago, and everyone loved it, so it is a staple in our house now. The combination of the flavors is awesome. I hope you enjoy it as much as we do!
