Filet Mignon with an excellent Merlot wine sauce.

1 (750 milliliter) bottle Merlot wine
2 (14.5 ounce) cans low-sodium chicken broth
1 (14.5 ounce) can beef broth
2 tablespoons unsalted butter, softened
1 tablespoon all-purpose flour
1 tablespoon olive oil
6 (6 ounce) fillets beef tenderloin
freshly ground black pepper to taste
¼ cup chopped shallots
1 tablespoon chopped garlic
1 teaspoon fresh thyme

Steps:

  • In a heavy sauce pan over high heat, combine wine, chicken broth and beef broth. Bring to a boil, and cook until mixture is reduced to 2 cups, about an hour. (This can be prepared a day ahead - cover and refrigerate).
  • In a small bowl, mix butter and flour. Heat 1 tablespoon olive oil in a large skillet over medium heat. Sprinkle steaks with salt and pepper, and saute until medium-rare, about 4 minutes per side. Transfer steaks to a plate.
  • Stir shallots, garlic and thyme into skillet. Add 2 cups reduced wine mixture to skillet. Bring mixture to a boil, scraping up any browned bits. Whisk in butter mixture until smooth. Boil sauce until thick enough to coat a spoon, about 2 to 3 minutes.

When blackberries are in season, celebrate them with this quick and delicious dessert topping. You may need more sugar, depending on the sweetness of the berries. Serve over homemade ice cream, cake, or other desserts. Garnish with fresh berries.

2 cups fresh blackberries
2 tablespoons white sugar
1 fluid ounce blackberry schnapps
¼ lemon, juiced, or to taste

Steps:

  • Place blackberries in a small saucepan; mash gently with a fork. Stir sugar, schnapps, and lemon juice into mashed blackberries; cook, stirring constantly, over medium heat until blackberries break down and mixture begins to boil, 5 to 10 minutes. Cool slightly before serving.

1 (2 pound) pork tenderloin
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon dried rubbed sage
1 tablespoon crushed dried rosemary, or to taste
1 (16 ounce) jar seedless blackberry jam
¼ cup honey
2 tablespoons dry red wine (such as Cabernet Sauvignon, Merlot, or a blend)
½ cup dry red wine (such as Cabernet Sauvignon, Merlot, or a blend)
2 tablespoons honey
1 cup fresh blackberries

Steps:

  • Season the pork tenderloin on all sides with salt, pepper, sage, and rosemary. Place the tenderloin into a slow cooker, and spoon the blackberry jam, 1/4 cup honey, and 2 tablespoons of red wine over the pork. Set the cooker to Low, and cook until very tender, 4 to 5 hours.
  • About 15 minutes before serving time, pour 1/2 cup red wine, 2 tablespoons of honey, and the fresh blackberries into a saucepan. Bring to a boil over medium-low heat, and simmer until the sauce thickens slightly and some of the berries burst, about 15 minutes.
  • To serve, slice the tenderloin and spoon blackberry-wine sauce over slices.

BLACKBERRY MERLOT SAUCE FOR BEEF



Blackberry Merlot Sauce for Beef image

So good over prime rib, roast beef or pork, grilled venison steaks. It's just good!

2 c merlot wine
1 1/2 pt fresh blackberries
1 c beef broth
1/4 tsp black pepper
1/2 tsp dried thyme
2 Tbsp brown sugar
2 Tbsp butter

Steps:

  • 1. In a medium stainless saucepan add the merlot, 1 pint blackberries, beef stock, salt, pepper, thyme and brown sugar.
  • 2. Bring to a boil over medium-high heat, stirring often.
  • 3. Reduce heat to low and simmer for 30 minutes, stirring often.
  • 4. Use a potato masher or a slotted spoon to gently mash all of the blackberries, continue to simmer for another 15 minutes.
  • 5. Strain the sauce through a fine mesh strainer, pressing down with a rubber spatula to remove all the liquid.
  • 6. Discard pulp and seeds.
  • 7. Rinse saucepan and return liquid to pan.
  • 8. Over low heat continue to simmer, stirring often, until you have about 2/3 cup of liquid-around 15 minutes.
  • 9. Remove from heat, whisk in butter until it melts.
  • 10. Stir in reserved berries, set aside.
  • 11. Gently reheat when ready to serve.
